NO OXYGEN WITH HIGH TEMPERATURES PLEASE!
ABSTRACT
We have to breathe and to sweat to live but beer
doesn't and shouldn't. Intensive research has been
carried out to identify the staling mechanisms in lager
beers. However, the impact of dissolved oxygen on
dry-hopped beers is poorly investigated. US
researchers evaluated the impact of dissolved oxygen on the sensory and hop volatile profiles of dry-hopped
beer during storage. Commercially-brewed dry-hopped
beer was dosed with oxygen in a controlled fashion
to create beers with a range of dissolved oxygen
concentrations from approximately 40 to 250 mg/L and
then stored under chilled or accelerated storage conditions.
Sensory results identified storage temperature as having the
greatest effect on aroma during storage. Dissolved oxygen
concentration was observed to have a lesser, but significant,
impact at both high and low storage temperatures after
only two weeks of aging. Higher temperature and dissolved
oxygen concentrations resulted in decreased tropical, citrus,
and hoppy characteristics and the expression of malty, dried
fruit, and cardboard aromas. However, by chemical analysis
it was observed that hop-derived monoterpenes were not
significantly affected by treatment temperature or dissolved
oxygen, suggesting that the stale character expression
comes from alternate sources such as lipid oxidation or
Strecker aldehyde formation.

USA, OH: Bad Tom Smith Brewing opens its doors in Madisonville
|
A new brewery has opened its doors in Ohio. The newcomer to Madisonville, called Bad Tom Smith Brewing, is located at 5900 Madison Road, Hoodline reported on December 4.
This is the second location for the brewery, with the first in Cleveland. Bad Tom Smith Brewing serves a variety of craft beers on tap, including an American Outlaw IPA, a Bad Luck coffee porter and a strawberry pale ale. Hungry? Try the pulled pork sandwich topped with coleslaw, the sweet cornbread or the homemade macaroni and cheese.
The fresh arrival has garnered an enthusiastic response thus far, with a five-star rating out of five reviews on Yelp.
Yelper Karen D. wrote, “They have 18 beers on tap; they have a booklet you can review to see all of the details of each beer to help make your decision. Very friendly service at the bar.”
And Jessica L. wrote, "Loving the new location and the new customers coming in. Same excellent selection of styles. More options for food."

USA, AL: Huntsville’s Straight to Ale to acquire Druid City Brewing Company in Tuscaloosa

Two of Alabama’s most popular breweries are set to merge. Huntsville’s Straight to Ale brewing will acquire Druid City Brewing Company in Tuscaloosa, al.com reported on December 9.
The breweries announced the deal Monday morning in a press release, saying the collaboration will lead to the growth of both brands, providing for more room for creativity.
Druid City co-owner Bo Hicks, and Straight to Ale owner Dan Perry said in a joint statement they are excited about the decision. The pair met through craft brewing industry events over the years and grew to become friends. After talking shop over the years, the two decided that a partnership would allow them to create a more dynamic brewery experience.
“We saw an opportunity where we could both succeed and be a bigger part of the culture and the community here in Alabama,” Hicks said in the press release. Hicks says the partnership will allow Druid City to have packaged beer.
In the release, Perry said he and the team at Straight to Ale were looking forward to expanding the brand that Elliott Roberts and Bo Hicks created at Druid City.

USA, MA: Lamplighter Brewing to expand to Cambridge Crossing in East Cambridge next year
|
A Cambridge brewery is making major moves next year — but there’s more in the works than just beer, Boston.com reported on December 9.
In 2020, Lamplighter Brewing will expand to Cambridge Crossing, a mixed-use development operated by DivcoWest that’s scheduled to open next year in East Cambridge. The brewery, which co-founders AC Jones and Cayla Marvil first debuted in Cambridge in the fall of 2016, won’t be focusing solely on beer: Luminati Spirits x Lamplighter will serve as a joint micro distillery, brewery, and taproom.
“We’re thrilled to not only continue our development of great beer, but also to pursue our passion for craft spirits all at our home here in Cambridge,” Jones said in a press release. “We’re also incredibly excited that Cambridge Crossing provides us with expanded space for events, entertainment, and community engagement, while continuing to emphasize a fun, creative, and neighborhood-based taproom setting.”

USA, WA: Orcutt Brewery coming to Spokane’s West Central neigborhood
|
A new brewery with an outdoor patio and taproom is coming to Spokane’s West Central neighborhood, according to plans making their way through City Hall, The Spokesman-Review reported on December 7.
Orcutt Brewery will be built on a vacant lot across the street from the car wash facility constructed in 2016 on a full city block at Gardner Avenue and Ash Street.
The 3,500-square-foot brewery and taproom at 1623 W. Gardner Ave. will be built on the southeast corner of Ash and Gardner. The project is estimated to cost $750,000.
Mickey and Linda Orcutt purchased two parcels for $190,000 in November 2017. Mickey Orcutt is the president and founder of Tamarack Software, which provides testing and assessment tools to educators.
Plans for the brewery are still in predevelopment conference with the city and have not yet been finalized.
Armando Hurtado, with Spokane’s HDG Architecture, designed the project.

USA, IA: Front Street Brewery reopens in Davenport
|
The popular Davenport Front Street Brewery already was in big trouble before the breach in the downtown levee on April 30, the San Francisco Chronicle reported on December 7.
Floodwater had been creeping up through floor drains, sewers — any opening it could find.
When a section in the row of flood-fighting HESCO barriers on River Drive suddenly shifted, then collapsed, the cold, muddy force it had been holding back was unleashed to flow through lower downtown. Front Street Pub was among many unworthy opponents in its path.
Water gushed from building to building, winding though alleys and over parked cars as if racing for higher ground.
More than six months after the HESCO collapse that damaged some neighboring businesses beyond repair, Front Street is declaring victory.
A $400,000 rebuild has it back in business, and an official grand opening, including free beer tasting, was held Dec. 4.
Tim Baldwin and his two business partners have owned Front Street for just a few years, and they were counting on the city's flood-protection system to spare most of their property. The HESCO-barrier system had worked well for Davenport, Baldwin said, and they had no reason to think the Flood of 2019 would be any different.

USA, IL: Andersonville Brewing to shutter at the end of December

Andersonville Brewing will close its doors after 10 years — to make way for the neighborhood’s newest brew pub, the Block Club Chicago reported on December 10.
Andersonville Brewing announced it will shutter at the end of December, capping a decade-long run at 5402 N. Clark St. The brewery-and-bar was opened in 2009 by Brandon and Ashley Wright as a sister business to the brothers’ restaurant Hamburger Mary’s, which sits next door to the brewery.
It will be replaced by Urban Renewal Brewery, which has operated a brewing facility in Ravenswood but did not previously have a taproom.
Andersonville Brewing, which operated as Mary’s Rec Room until 2014, was one of the few sports bar options in that area of Andersonville. It was the first nano brewery operating in Chicago, co-owner Ashley Wright said. A nano brewery is the smallest type of brew operation, thought definitions of a nano brewery vary.
Much has changed since 2009, not only in Chicago’s brewery scene but also in the retail makeup of Andersonville and Clark Street in particular, Wright said.

Japan: All four leading brewers see sales drop in November
|
Four major Japanese brewers saw their domestic sales of beer and beer-like products fall by between 3 pct and 7 pct in volume in November from a year before, their data showed on December 11.
There was a lingering impact from the Oct. 1 consumption tax increase, but the size of the sales declines was smaller than in October.
Kirin Brewery Co. posted a sales drop of 7 pct. Sales by Asahi Breweries Ltd. decreased 6 pct. Sapporo Breweries Ltd.'s sales fell 5 pct. Suntory Beer Ltd. had a 3 pct sales decline.
Sales of mainstay brands remained particularly weak apparently because consumers stocked them up before the tax was raised from 8 pct to 10 pct.
But the breweries see the impact of the tax increase milder than that seen when the tax was previously raised in April 2014, from 5 pct to 8 pct. "Sales have not been bad in December," a company official said.

Kenya: Danish Brewing Company to set up operations at Naivasha Industrial Park
|
Danish Brewing Company E.A Limited, a subsidiary of Bounty Global Management DWC LLC is set to be the first anchor tenant at the Naivasha Industrial Park, The Star, Kenya reported on December 11.
The beer maker has set aside $45 million (Sh4.59 billion) to set up its operations in the country.
More than 100 local and international investors have so far expressed interest in setting up shop at the planned industrial park.
The brewer of Tuborg, Carlsberg, Holsten, and Kronenbourg beers, as well as Somersby Cider, plans to set up a plant with a production capacity of 12-15 million cases of beer annually.
The firm will also employ 350 Kenyans and produce beverages using sorghum sourced locally from their recently launched Farmers Outreach Programme, expecting to contract 17,000 farmers.
Trade CS Peter Munya on December 10 said support given by government has created an enabling environment in turn attracting a number of local and international private investors.
"As our Government believes in public-private partnership we are working hand-in-hand to realise the goals of the Manufacturing pillar of the Big 4 Agenda," he said.

Kenya: East African Breweries expects 10% rise in local barley supply this year

East African Breweries Ltd (EABL) is expecting to receive 47,000 metric tonnes of barley this year following improved production, the Business Daily reported on December 11.
The brewer said production had increased 10 percent in Narok North sub-county.
Speaking at the launch of the 8th edition of the Barley Growing Handbook during the annual field day in Mau Narok on December 11, East Africa Maltings Ltd (EAML) general manager Lawrence Maina said improved barley varieties launched recently had resulted in the higher output.
However, Kenya Barley Growers Association Chairman David ole Kilesi expressed fear that heavy rain might affect harvesting.
“We are late for harvesting for the last two weeks due to the rains, and the ripe crop is not turning black due to waterlogging in the fields. We are not sure we will reach the EABL threshold,” said Mr Kilesi.
However, Mr Maina said a variety launched three years ago in partnership with the University of Eldoret at the Sansora farm in Mau Narok, Nakuru and KWS Aliciana would offer quality malting and brewing. It also produces many stems from one seed, increasing the yield for farmers, he said.

India: United Breweries to drop its oldest global distributor

United Breweries, the maker of Heineken beer, will drop its oldest global distributor, Ultimate Branding Worldwide. The move comes in the wake of investigations by the Enforcement Directorate (ED) into a possible nexus with the former liquor baron Vijay Mallya following a whistle-blower complaint, the Economic Times reported on December 12.
The company will start exporting directly with the aid of its parent Heineken’s global distribution network, officials close to the development said.
According to sources, ED is investigating at least five companies in India and overseas for their alleged association with embattled liquor baron Vijay Mallya. The probe hasn’t so far found evidence to prove money was laundered to fund Mallya’s case. The ED is investigating if these were ‘dummy companies’ that were allegedly controlled by Mallya and profits accrued were used to fund his legal expenses.
“The ED officials have not got back to us on any further developments. We offered them as much information as they sought to investigate into the matter. But going ahead, we will build our own direct distribution into overseas markets with the support of Heineken,” a spokesperson for united Breweries, said.
