Flavoromics in hops

ABSTRACT
The genetic basis of hop organoleptic chemistry is relatively poorly understood. This Autralian Research team is looking into a mapping cross containing 166 genotypes in two different fields. Data about survival, plant structur, flowering, sexual phenotype, yield and hop acid chemistry on male and female plants are being collected to analyse genetic variation and genotypes by site interactions. The ulitamte aim for this study is to obtain an extended chemical phenotype, including headspace solid phase micro extraction (SPME) of hop flavor volatiles, polyphenols, glycosides, laboratory scale beer volatile SPME profiles to be intergrated with organoleptic data. So that one day QTLs (Quantitative Trait Loci) in hop associated with organoleptic traits can be identified.

Brewery news USA: Constellation Brands purchases US craft brewer Ballast Point Brewing & Spirits
Constellation Brands made a splash in the beer sector in 2013 when it purchased Grupo Modelo’s USA beer business from Anheuser-Busch InBev for $4.75 billion, giving it access to the Corona, Modelo and Pacifico brands from Mexico and Tsingtao from China.

The company now is looking forward to adding Ballast Point Brewing & Spirits as a craft beer to their portfolio, TV Newsroom reported on November 17.

Craft-beer sales are growing fast, of course, and ounce-for-liquid-ounce may be more profitable than mainstream suds.

“Along with imports, craft beer is a key driver of growth and premiumization within the beer industry, with craft doubling its share of the USA beer market in the last five years”, Constellation CEO Rob Sands said in a statement. Due to the resurgence of IPA beers the company is expecting to have net sales of almost $115 million by the end of 2015. This purchase will be the company’s first incursion into the world of craft beer. It has grown to three locations in San Diego and produces a few 40 beers as well as other beverages.

Brewery news USA, WA: Everett’s Crucible Brewing launched by two childhood friends
Dick Mergens and Shawn Dowling knew they wanted to open a brewery before they ever brewed a batch of beer, HeraldNet reports.

In October, that dream became a reality.

Located in a strip mall along Everett Mall Way, Mergens and Dowling, who grew up together in Pacific County near Raymond, opened Crucible Brewing on Oct. 2. It was the culmination of a long road, which started when the two would talk about opening their own brewery over beers.

“We were like ‘Wouldn't this be cool if we could do this full time,' ” Dowling said of brewing.

The two began brewing in 2010. Dowling, who worked as a system administrator for a software company in Portland, Oregon, would travel up to Mergens' home in Lynnwood once a month and the two childhood buddies would brew.

Mergens, who is the head brewer for Crucible, decided to take it a step further. He quit his day job at Lowe's and took a job at Redmond brewery Mac & Jack's Brewery. He worked his way up to the brewhouse at Mac & Jack's, before moving to another Redmond brewery, Hi-Fi Brewing. He later would take a job at Red Hook.

Brewery news USA, KY: Kentucky craft brewers asking to raise cap on annual beer production
Kentucky craft brewers are asking the state to raise the cap on how much beer they are authorized to produce in a year, 89.3 WFPL reported on November 13.

The request comes after craft brewers scored a big win in the state legislature earlier this year, when they successfully lobbied to close a loophole that allowed out-of-state brewers to own their own distributors.

Brewers that produce fewer than 25,000 barrels of beer a year are considered “microbreweries” under state law, meaning they’re allowed to operate taprooms on site at their breweries.

Many of the state’s craft beer-makers are starting to approach the 25,000 barrel ceiling, which would force them to either stop growth or close down their taprooms, said Adam Watson, president of the Kentucky Guild of Brewers.

“The taprooms are not only vital revenue centers for our businesses but also centers of employment, community gathering and innovation, as well as drivers of economic activity,” Watson said.

The brewers’ guild wants the state to double the cap to 50,000 barrels.

Watson, who is also a co-founder of Louisville’s Against the Grain Brewery, said raising the production cap would allow Kentucky brewers to more effectively compete with neighboring states.

A new Bavarian-themed brewery opened its doors on November 13 in Cedar Springs, Fox17 reported.

The Cedar Springs Brewing Company is at 95 N. Main Street.

The brewery will make German-styled craft beer, their own soda and wine. They also have a distillery license, but won't start making spirits for a month or two.


Brewery news USA, VA: Hardywood Park Craft Brewery planning expansion
More than 100 people trudged down a leaf-covered dirt trail to gather in a wooded area of Goochland County on November 13 for a ceremonial groundbreaking at the site of Hardywood Park Craft Brewery’s future expansion, the Richmond Times-Dispatch reports.

In a clearing overlooking Tuckahoe Creek, the guests were served small snifters of Hardywood’s popular Gingerbread Stout beer. Then they toasted the company’s ambitious growth plans.

“Today marks the beginning of a new chapter for Hardywood,” said Eric McKay, who co-founded Hardywood four years ago with business partner Patrick Murtaugh as a small brewing operation in Richmond.

As the region’s craft beverage industry has boomed, Hardywood, a maker of numerous varieties of beer, is expanding, too. It plans to start construction soon on a 60,000-square-foot brewery and packaging and distribution center in the West Creek office park.

Hardywood’s founders expect the new brewery to be open by the spring of 2017.

The company first announced plans for the expansion during the summer. McKay and Murtaugh hope the 24-acre site will become a destination for beer lovers. It will have a taproom, beer garden, bocce courts and a natural amphitheater for music and other events.

Brewery news USA, MA: Flying Dreams Brewing Co. set to open in Worcester this week
Flying Dreams Brewing Co., Worcester, MA's newest craft brewery, is set to open next week with two beer offerings, MassLive reported on November 13.

The brewery will be opening in the spot formerly occupied by Wormtown Brewery inside Peppercorns, the Italian restaurant on Park Avenue.

"When I began brewing beer it was a hobby, but once I peeled away the layers of the process – the craft – it became my passion," said Dave Richardson, Flying Dreams Brewery Co.'s Founder and Brewmaster. "I decided that if I'm going to do this, I'm going to do it right."

Richardson has a master's degree in brewing science and engineering from UC Davis. He was also the co-owner of the Gardner Ale House.

Flying Dreams will be open on Friday from 3 to 10 p.m. and Saturday from noon to 10 p.m.

The two-day event will feature two of its locally crafted ales – Dreaming of Summer and Nightcrawler.

Brewery news USA, VA: Sehkraft Brewing almost ready to open its doors in Clarendon
It’s been an arduous journey from conception to completion, but Devin Hicks is finally getting ready to open his homegrown Arlington brewpub and entertainment venue in Clarendon, ARL now reported on November 13.

With a flurry of last-minute construction, Hicks is hoping to open Sehkraft Brewing (925 N. Garfield Street) on Monday, Nov. 23, in time for the Thanksgiving holiday. But he warns that that the opening date is still in flux and admits that he hasn’t had great luck with setting opening dates.

The brewpub was originally slated to open in March. After various delays, in August Hicks promised that Sehkraft would definitely be open by mid-September — as he put it, “in time to watch the Nationals kill it in the playoffs and hopefully watch the Redskins be competitive.” We all know how that turned out.

“We’re at the finish line, finally,” Hicks said.

“It’s been an ordeal,” he said of Arlington County’s permitting process, with which he has had plenty of trying times at his other business, Westover Market. “We’ve been through the wringer.”

Brewery news USA, MI: Cedar Rustic Inn transforms into Big Cat Brewing Company
Cedar Rustic Inn owners Aaron and Nikki Ackley are giving their restaurant in Cedar, Michigan a makeover, complete with craft beer and a new name, Traverse City Record Eagle reported on November 17.

Co-owner and head chef Aaron Ackley hopes to brew all his own beer at the restaurant, which now is called Big Cat Brewing Company.

"We always knew that we wanted to keep serving full food menus and just add on the beer," said co-owner Nikki Ackley. "We are still a full service restaurant, we always have been and we always will be. We just wanted to add something new on that can boost our business and make our spot here a destination."

The Ackleys hope adding craft beer will give customers a different dining experience, Nikki said — that of a fun hangout spot.

The transition from restaurant to brew pub started three years ago. Aaron had been cooking for almost 26 years and was having a mid-career crisis.

Brewery news USA, WA: Chuckanut Brewery and Kitchen to open a second brewery in the Skagit River Valley
Chuckanut Brewery and Kitchen is opening a second brewery, seattlepi.com reported on November 12.

One of Washington’s most highly decorated breweries, Chuckanut Brewery is building a second brewery in the Skagit River Valley, near the Skagit Regional Airport. They’ll continue to brew beer and serve food at the Bellingham location, but the new brewery will allow them to brew larger quantities and increase their overall production numbers drastically.

The current brewery in Bellingham has been operating at capacity (over 2,500 barrels per year) for some time. Chuckanut spent two years searching for a site large enough to build its new production facility, but with the help of the Port of Skagit decided on the location near the airport. They hope to have the new facility open in the spring of 2016.


Brewery news USA, OR: Bend Brewing Co. being sold
A 20-year mainstay of Bend's brewing community, Bend Brewing Co., is being sold to a father-son team, its owner confirmed to NewsChannel 21 late on November 12, assuring that it will stay in place and the workers will stay aboard.

Owner Wendi Day said the deal is in its early stages and she was not yet ready to say who the new owners will be, though she said they are new to the local brewing business. The sale is expected to be completed by January, she added.

Day is the daughter of BBC co-founder Jerry Fox, who along with business partner Dave Hill had owned Bend Wood Products, a mill where the Century Center is now.

The Brooks Street brew pub opened in February of 1995, only the second in town, after Deschutes Brewery, which opened in 1988.

Day said it was "kind of hard" for the brew pub's close-knit workers when they were told this week of the impending sale.


Brewery news USA, ID: Ketchum’s Sawtooth Brewery to expand in December
Ketchum’s Sawtooth Brewery soon will expand to a two-town operation that includes a full-service restaurant, canned-beer production and increased distribution, Idaho Statesman reported on November 12.

In December 2015 or January 2016, Sawtooth Brewery Public House plans to open at 291 6th St. N. in Ketchum. The brewpub will feature 21 taps including Sawtooth beers, cider, kombucha and cask options. Growler fills, crowlers, bottled and canned beer are part of the plan. Sawtooth’s taproom — across the street at 600 N. Main St. — will close when the public house opens.

Then in spring 2016, Sawtooth will move its beer production to Hailey. A 15-barrel, 8,100-square-foot brewery and taproom will fire up at 110 N. River St.

CEO and head brewer Paul Holle says the new Sawtooth Brewery and Tap Room will have the capacity to quadruple output, although the initial ambition is to double or triple production.

“The building would allow for about 10,000 barrels annually,” he says. “We won’t have that to start, but it’s nice to have room in your building.”

As part of the evolution, Sawtooth will can its beers for the first time — starting with Sunnyside Session Wheat and Freeheeler Rye IPA.

Two years after the end of the investigation into allegations of long-term market abuses in Greece by Athenian Brewery (owned by Heineken), Macedonian Thrace Brewery (MTB) welcomes the announcement by the Greek Competition Commission (HCC) that finally it will be issuing its decision on the case by the end of November, PR Newswire reported on November 16.

MTB, however, continues to be concerned by the extraordinary length of the HCC investigation, which began well over ten years ago.

At that time, Heineken dominated the market with an 85% share of Greek beer sales. Today two multinationals, Heineken and Carlsberg, share that position to the detriment of locally owned breweries, new entrants and ultimately the Greek consumer.

The HCC's approval earlier this year of Carlsberg's takeover of Olympic Brewery placed no restrictions on the deal. Rather than taking steps to ensure an open and competitive drinks market, encouraging new investment and job creation, the competition authority has left the Greek consumer to face high prices and ever more restricted choice.

Carlton and United Breweries (CUB) has brewed a heritage beer under the famous Tooth's banner, relaunching Tooth's Pale Ale, The Shout reported on November 13.

CUB has heavily researched the history of the Tooth's Brewery and that passion and heritage underpins everything the company has done in relaunching Tooth's.

Tim Ovadia, CUB's head of craft and Australian premium brands, said: "This is part of our commitment, we're passionate about beer and passionate about growing the beer category and so part of that commitment is to keep innovating and giving consumers things that keep them interested in beer.

"Right now you only have to look at what is going on in the craft category and see that consumers are looking for beers that have local provenance stories and they are also interested in different styles of beer again. So we thought that what we could do is tap into our rich history as a brewery; we've acquired a number of breweries over the years and one of them was Tooth's and Co.

"Tooth's and Co has a really rich history, particularly in inner-city New South Wales and we're finding that consumers in these areas what to reconnect with brands like this."

Brewery news Singapore: The Competition Commission of Singapore investigating Heineken’s acquisition of GAPL
The Competition Commission of Singapore (CCS) is inviting interested parties to provide feedback on the acquisition of GAPL by Heineken International (HIBV), Channel NewsAsia reported on November 17.

In a press release issued on November 17, CCS said that the public consultation will take place from Nov 17 to Nov 27.

The Heineken Group, which includes Asia Pacific Breweries, is involved in the production, marketing, sale, distribution and supply of various brands of beer, ale, lager and stout in Singapore, including brands of beer which are held by the Heineken Group and third party brands which have been licensed to Heineken Singapore entities for supply in Singapore.

GAPL is a registered company in Singapore, and does not directly produce or distribute the ABC Extra Stout and Guinness Draught and Guinness Foreign Extra Stout brands in Singapore, but holds these brand licenses in Singapore.

CCS said that HIBV "submits that the direct overlap in the activities of Heineken Singapore and GAPL is the licensing of brands of beer (including all ale, lager and stout) for the production, marketing, sale, distribution and supply in Singapore".
