ABSTRACT
Listening to the best recognized research team in flavour chemistry, that would be the correct conclusion. Summarising the results of 25 years of research on all kind of different foods, this German research team says that their meta-analysis demonstrates characteristic ratios of only about 3 to 40 genuine key odorants for each food (of more than 220 investigated), from a toolbox of ~230 out of ~10,000 food volatiles. They conclude that the foodborn stimulus space has co-evolved with, and roughly matched our ~400 olfactory receptors as best natural agonists. The key odorants can be classified into two groups of volatiles: 1) high-threshold volatiles reaching their odor impact by their high levels in foods, e.g. the high odor thresholds of 16 and 13 Mg/L for acetaldehyde and (R)-limonene respectively, are compensated by the high concentrations of 6150 and 2308 Mg/L found for these odorants in hand-squeezed grapefruit juice, and 2) trace level volatiles exceeded their low threshold concentrations at low concentrations, e.g. the grapefruit-like smelling 1-p-menthene-8-thiol (0.01 Mg/L) and the cooked apple-like (E)-B-damascenone (0.9 Mg/L) in grapefruit juice and red wine respectively, which easily exceed their extraordinarily low odor threshold of by a factor of 50 and 90. This is a comprehensive review and with having dry hopped beers in mind, it sounds that if you combine all key odorants of juices, wines and normal beers - there is your dry hopped IPA!

Vietnam: Brewing industry to spend a lot on stamps requested for brewery products by the government
|
Vietnam’s Ministry of Industry and Trade (MOIT) has requested brewery enterprises to stamp their products, a solution the ministry believes is important to avoid trade fraud, VietnamNet Bridge reported on May 19.
Breweries say they would have to spend VND700 more on every product made. They do not believe the stamp will help prevent trade fraud and increase state management capability.
According to the Vietnam Association of Beverage & Alcohol, there are over 100 alcohol and brewery manufacturers in Vietnam which run 200 beer production lines.
If they have to stamp their products before putting them for sale in the market, they would have to spend about VND3 trillion to buy stamping machines (VND15 billion for each). The will also have to pay for regular expenses to run the machines.
Enterprises will also have to spend money to buy stamps, VND200 for each, which means enterprises will have to spend VND2 trillion on stamps alone.
Regarding the management cost, the association estimates the figure could be up to VND1 trillion.
As such, if the stamping is required, enterprises will have to spend VND700 more for every product.

Keroche Breweries has welcomed Kenya government's reduction of taxes on beer made from sorghum, millet and cassava but added that it will give unfair advantage to EABL's products, AllAfrica reported on May 18.
In a statement issued on May 15, the company said the signing of the Alcoholic Drinks Control (Amendment) Act 2015 which removes excise duty levied at 90 per cent for beer made from sorghum, millet and cassava was a good move towards reducing cost of beer targeting the low-end market but added that its vodka products for this segment were left out.
"Keroche Breweries congratulates President Uhuru Kenyatta on signing of the Alcoholic Drinks Control (Amendment) Act 2015 as it reduces reduction of tax on beer made from sorghum, millet and cassava," said Keroche.
"The Act, as it stands now, presents a difficult challenge for Keroche Breweries as it removes a level playing field for alcoholic products targeting the lower market but are not made from sorghum, millet and cassava."
Keroche which manufactures Viena Ice, a ready-to-drink vodka that targets the lower market, said it is yet to get a response to a proposal it made last year to Parliament's finance committee and wondered whether the Act was approved by the

India: All India Brewers Association wants beer to be sold like FMCG products through retail shops

Describing beer as 'fun, social drink', the All India Brewers Association (AIBA) wants state governments to allow the beverage to be sold like FMCG (Fast Moving Consumer Goods) products through retail shops, The Economic Times reported on May 19.
AIBA, an industry body of breweries operating in India, is also demanding a separate classification of beer from hard-drinks or spirits citing smaller alcohol content.
"We have already made representations to various state governments to increase the availability of beer. Beer is a fun, social drink and we would like beer to be sold through modern retail shops, like any other FMCG product," Shalabh Seth, Chairman of AIBA and Managing Director at SABMiller India said.
He further said: "While some states like Kerala and Maharashtra have relaxed norms for beer shops, we will soon begin round two of representations with more states."
AIBA Director General Shobhan Roy added that beer should not be treated "at par with spirits, which have much higher alcohol content (around 42 per cent), compared with beer, which has just 5-8 per cent alcohol."
India has around 10 leading beer manufacturers including Carlsberg, Budweiser, United Breweries, SABMiller, Bar Malt India, Alfa Laval, Praj Industries and Briggs of Burton, among others.

Denmark: Carlsberg planning cost cuts at headquarters in Denmark

Carlsberg, the maker of Tuborg beer, plans cost cuts at its headquarters in Denmark as a drop in demand in Eastern Europe weighs on earnings.
The Danish brewer is starting an initiative including job cuts that targets “large” savings, Danish paper Jyllands-Posten reported on May 18, without saying how it obtained the information.
Spokesman Jim Daniell confirmed the company is reducing costs at its main office and informing staff this week about organizational changes.
“This is just the headquarters and there are some announcements being made to people today,” he said by phone, declining to give further detail.
Carlsberg has been struggling with political instability and economic turmoil in Russia, where it is the biggest brewer. The brewer last week reported that the operating loss from its eastern European business widened in the first quarter, though total profit for the quarter beat estimates due to a better-than-anticipated performance in Western Europe. The company said in January it would close two of 10 breweries in Russia.
“We are starting to roll out major internal initiatives that will make the group even more efficient, agile and responsive and contribute to improved profits and returns,” Chief Executive Officer Joergen Buhl Rasmussen said in the results statement May
