The good, the bad and the ugly
ABSTRACT
It has long been thought since Tressl proposed it in
1978 that the cleavage of the acyl side chains of hop
alpha or beta acids results in a loss of bitterness and
may result in the formation of flavour active short
chain acids often resulting in rancid and cheesy off
flavours. The German researchers in this study found
that it might not be as bad as once claimed. They
confirmed that with warm aerobic storage, bitter acid
concentration decreases along with increases in the
concentrations of 2-methylpropanoic acid, and 2- &
3-methylbutanoic acids. However, with short term
cold aerobic storage (4 weeks at 0 C), the aroma
properties of hops may actually be positively
influenced.

USA: New research reveals interesting trends in America’s drinking habits
|
A new research report by the National Institute on Alcohol Abuse and Alcoholism (NIAAA) reveals quite a few interesting trends in America's drinking habits—not just in recent years, but all the back to the 1850's
Overall per capita consumption of alcohol has been climbing steadily since the early 1990's. In the most recent year for which there is data (2012), consumption climbed 2.2% over the previous year to reach 2.33 gallons per capita. The NIAAA cites 2.1 gallons as a goal for a healthy society, but the last time Americans were that stingy with their pour was in 1961. Still, the nation’s current levels are far below its booziest period of 1980/81 (2.76 gallons per person).
Precisely why Americans were averaging nearly three gallons of ethanol in the early 80s is unclear, but it remains the highest figure in the 150 years the NIAAA has been collecting data. (Though it's worth noting that no data was collected during Prohibition.)
The next heaviest period of drinking was between 1906 and 1910, when per capita consumption averaged 2.60 gallons. The end of World War II ushered in a brief uptick in consumption, which leveled off until the 1970s, when drinking began to skyrocket. There was

India: SABMiller mulling launch of new strong beer this year
|
India’s second-largest brewer, SABMiller India Ltd, plans to launch a new strong beer called Miller Ace this year, as it looks to tap rising demand for higher-priced strong beer, a product category in which the company has lagged rivals such as Carlsberg Group and Anheuser-Busch InBev, Livemint reported on June 6 citing three people familiar with the matter.
Strong beer, which refers to brews with alcohol content of 5-8%, accounts for 85% of all beer sales in India.
Miller Ace would be an extension of the company’s mild beer Miller High Life, and it will compete directly with Carlsberg Elephant beer and Budweiser Magnum, the people said, on condition of anonymity.
Miller Ace, expected to be launched before the end of this financial year, would be SABMiller’s priciest strong beer. A 650ml bottle of Budweiser Magnum costs Rs140 in Karnataka.
SABMiller India, which also owns brands such as Foster’s, Haywards and Royal Challenge beer, declined to comment on Miller Ace.

Japan: Sapporo Holdings to relaunch its Goku Zero beer-like drink in new category
|
Beermaker Sapporo Holdings Ltd said on June 4 it will tweak the production process for its Goku Zero beer-like drink and relaunch it following a tax snag that may cost the group an extra 11.6 billion yen ($113 million) in liquor taxes.
Japan's fourth-largest brewer said tax authorities had requested data on the production methods for Goku Zero, which is classified as "third beer", a drink made from malt alternatives or a mix of low-malt beer and other alcohol, and taxed at barely one-third the rate of regular beers.
These low-priced alcoholic drinks known as "third-beer" products are a major growth market for Japan's breweries. But Sapporo will now recast Goku Zero as a "low-malt" beer, which will carry a tax rate two-thirds higher than "third beer."
Taxes on beer in Japan vary depending on the volume of malt they contain as a percentage of fermentable ingredients. The regime is highly complex with eight separate categories.
The beer industry has long urged changes to this tax system by the government, which, under Prime Minister Shinzo Abe, is focused on regulatory reform.

Germany: Popularity of zero-alcohol increases
|
Zero-alcohol beers popularity in Germany is growing rapidly, according to new figures posted by German Brewers Federation, while the overall beer consumption is declining.
The Federation’s members brewed 4.8 mln hl of zero-alcohol beer last year, up 12% on 2012, and expect to top 5 mln hl this year. Zero-alcohol beer represents 5% of the nation’s total beer output. The nation’s total beer consumption, however, has been in decline for the last seven years – last year the decrease was 2%, the Federation said.
Zero-alcohol brands meet the demand of consumers who have to drive or do sport and don’t want to stop enjoying beer, Holger Eichele, President of German Brewers Federation, said.

India: Indians starting to embrace craft beer culture
|
If you have ever had a bottle of beer in India - or even in an Indian restaurant somewhere else in the world - the chances are it was one particular brand.
Kingfisher is synonymous with the drink in India, where it has more than 50% of the beer market, BBC reported on June 6.
But just a few kilometres from the company's headquarters in Bangalore, in the bustling Biere Club bar, dozens of customers sip beer without a drop of Kingfisher in sight.
Instead the crowd are drinking glasses of American rice lager, malt stout or a Belgian-style wheat beer. And it is all brewed just a few metres from where they are sitting.
Opened three years ago, this was Bangalore's first so-called brewpub - a bar with a small brewery on the premises - but now there are about 15 similar businesses in this one city alone. Best-known as India's IT hub, it has also become the capital of the country's craft brewing culture.
"It's become very competitive - but we have some loyal customers," says Biere Club founder Arvind Raju. "And we have to make sure we have a variety of beers and keep the quality high so that they come back."

Nigeria: Heineken CEO sees Nigeria as one of most appealing destinations for investors globally
|
In spite of the seeming challenges inhibiting foreign investments in Nigeria, Jean-Francois Van Boxmeer, CEO, Heineken International, parent company of Nigerian Breweries plc, has revealed that the high rate of return on investment has made Nigeria one of the most appealing destinations for investors globally, P. M. News Nigeria reported on June 6.
Van Boxmeer, who was the Co-Chair at the World Economic Forum Africa, held recently in Abuja, said Nigeria is in a strong position to outwit competition in the struggle for investments because of its huge population and growing middle class.
“Nigeria’s young population has huge potentials complemented with the high spirit of the people. Even though Nigeria being a very diverse country, like India, but somehow you have a fighting spirit which unifies you and this I think is a great asset for a people to do business with,” he said.
Van Boxmeer also stressed that the efforts of successive governments give investors enormous confidence about the Nigerian economy. According to him, the country in the past decades has improved a lot, making significant efforts to diversify from oil.

Gabon: Sobraga invests 15 bln CFA francs in modernization
|
Société des Brasseries du Gabon (Sobraga) has invested 15 bln CFA francs into the modernization of the three of its breweries by installing new equipment of the latest generation, Generation Nouvelle reported on June 4.
The company’s Franceville brewery now has a new brewing hall, doubling the facility’s production capacity.
Sobraga also installed a new bottling line at its Port-Gentil brewery and a new production line doubling the output capacity at its Mouila facility.

UK: Spring barley variety Odyssey fully approved for brewing and distilling
|
Spring barley variety Odyssey has been fully approved for both the brewing and distilling markets to give UK’s growers greater flexibility in marketing, Farmers Weekly reported on June 5.
The Limagrain variety joins Concerto, also from the same stable, as the only two spring barley varieties that are approved for both markets.
Barley varieties often make the HGCA Recommended List with provisional approval by the Institute of Brewing and Distilling (IBD), but require further testing to prove their credentials for either or both end uses.
The full approval for Odyssey will be welcome news for spring barley growers, who can choose another variety that will allow them to take advantage of both markets.
Senior barley breeder at Limagrain, Mark Glew, says that it offers a 6% yield increase over Concerto and has good agronomic and quality characteristics – particularly its score of nine for mildew resistance and a specific weight of 67.7kg/hl.
“Growers have already demonstrated their commitment to the variety, and its attributes make it appealing across both markets,” said Mr Glew.
Both Odyssey and Concerto contain a gene that means they don’t produce glycosidic nitrile (non-GN) making them suitable for distilling.
