STAYING IN THE BITTER FIELD
ABSTRACT
We already know about hop flavonoids and their bitter
taste, but there are other bitter compounds in hops
we know and don't know. These researchers call these
others "auxiliary bitter compounds", comprising the
bitter compounds that do not include the iso-alpha
acids. In a sensory context those components can
influence the bitter quality. To assess the bittering
effect of these compounds one can work with the ratio
between the Bitter Units and the HPLC measured
concentration of iso-alpha acids. This ratio of course
increases with hop varieties with low alpha content e.g.
land-race varieties. In addition to the above mentioned
flavonoids, additional compounds present in hops are
formed from alpha-acids (humulinones, deoxyhumulones),
as well as those formed from beta-acids during wort
boiling (hulupones, hulupinic acid and hydroxyltricyclolupulones).
Various studies have shown that
the sensory evaluated bitterness quality correlates
positively with higher IBU/iso-alpha acids ratios. So it is
about time to leave behind the old categorization into
bitter and aroma varieties, since yes, aroma varieties
also give great (or even greater?) bitterness!

USA: Constellation Brands report nearly 12% rise in Q4 beer sales
|
Constellation Brands Inc reported fourth-quarter sales and profit on March 29 above Wall Street estimates, driven by strong demand for high margin Corona and Modelo beers and expensive wines such as Meiomi.
The boost in demand for Mexican beers is a result of a growing Hispanic population, a demography the company has been focusing on to widen its consumer base. The strategy helped the company’s sales beat estimates for the third straight year.
The Hispanic population is the second-fastest growing ethnic group in the United States and accounted for 18 percent of the total population in 2016, according to Pew Research Centre.
Beer sales, which accounted for about 77 percent of the net sales in the quarter, rose nearly 12 percent to $997.2 million.
Net sales rose 8.5 percent to $1.77 billion in the quarter, beating the analysts’ estimate of $1.75 billion that the maker of Robert Mondavi wines and SVEDKA vodka was expected to generate.
To cater to the rising demand, Constellation, which imports most of its beers from Mexico, said it would spend $900 million in 2019 to expand capacity of its breweries in Ciudad Oberon that lies south of the border.

Georgia: Natakhtari Brewery gets license to produce Staropramen beer in Georgia
|
Natakhtari Brewery now has the license to produce Czech Staropramen beer in Georgia, Georgia Today reported.
“Staropramen was established 150 years ago and since then it has been refining its product and I have no doubts that beer produced by Natakhtari will be exactly the same as it is in the Czech Republic,” Nino Beneta Director of Molson & Coors for Eastern Europe, Exports and Licensed Brand, said after a brewing tour organized by the brewery for a group of visitors on March 28.
“Staropramen Beer is a global brand of Czech origin,” said Nikoloz Khundzakishvili, Corporate Director of Natakhtari. “It was extremely important for us to obtain license for its production. Natakhtari was recognized as a company which produces the highest quality beer. The licensing process took one year. We made investments both in infrastructure and quality control improvement and, as a result, we became one of the best producers in the world.”
“Staropramen Beer is popular among Georgian beer fans who understand the value of the brand. Natakhtari is proud to have started production of such a brand locally. In my opinion, it’s a great opportunity for beer fans to have locally produced Staropramen,” said the Business Ombudsman of Natakhtari’s success.

UK: Feed barley market remains tight and rising
|
Farmer-to-farmer trade is dominating movement in a tight and rising feed barley market in the United Kingdom, the FarmersWeekly reported on March 29.
Feed barley prices gained more than £2/t in the week to Wednesday (28 March), averaging £138.80/t ex-farm.
This further narrowed the gap between wheat and barley, with feed wheat moving up just 70p/t to average £144/t ex-farm.
Barley has gained about £14/t over the past eight weeks, compared with an £8.50/t rise in wheat values. Continental European barley values have also risen.
Prices fell last week on a stronger pound, along with rain in parts of a very dry US. The pound’s strength came from the EU-UK transition agreement reached on 19 March.
The UK market continues to see a very wide range of prices, with spot barley anywhere between £130/t and £145/t, with the strongest prices in the south-west and north-west regions.
Feed wheat midweek ranged from £134/t to £153/t ex-farm, with the strongest prices as usual in the North-East.
