HOPS MAKE YEAST HAPPY!

ABSTRACT
In 1893 Morris and Brown reported, "We are now to ascertain how far the sugars of the hop are accountable for the after-fermentation induced of dry-hopping." This phenomenon is familiar to craft brewers and in 1941 Walker proposed that a maltase enzyme in hops is responsible for this. This U.S. research team was able to confirm with dry-hopping an increase in VDK production and a decrease in gravity. Testing at different temperatures, they were able to show that the secondary fermentation that takes place at 70 degrees F is reduced when the temperature is lowered to 60 degrees F before dry-hopping.

Brewery news USA, NC: Vicious Fishes Brewery to open second location in Apex
Vicious Fishes Brewery just opened in August but already has plans to expand. The brewery announced it will open a second location in Apex, the News & Observer reported on October 20.

Vicious Fishes Brewery opened in Angier in Harnett County in the former White Rabbit Brewing Co. The second taphouse will be in southern Apex, near where U.S. 1 and N.C. 540 intersect.

“We just closed on a location just a few miles from downtown in a very rapidly growing area of west Apex,” the brewery wrote on its Facebook page Thursday afternoon.

The announcement didn’t say when the new brewery will open, except that it’s “coming soon.”

In its first few months in existence – on an appropriately named road called Fish Drive – Vicious Fishes has embraced creative ways of grabbing people’s interest.

When it first opened, they brewed an IPA called PiranhaCopter, and the bartenders delivered pints of it to people at the brewery by way of a quadcopter drone.

It will be the third craft brewery in Apex, along with Brueprint Brewing Co. and Southern Peak Brewery.

Brewery news USA, PA: Yards Brewing Company to open its Yards Brewery and Taproom in Philadelphia this November
This November, Yards Brewing Company will open Yards Brewery and Taproom at 500 Spring Garden Street in Philadelphia’s beer-savvy Northern Liberties neighbourhood, The Full Pint reported on October 19.

The highly-anticipated expansion and move from their cozy tasting room on Delaware Avenue further establishes Yards as “Philadelphia’s Brewery” and provides them with a new 70,000-sqare-foot facility to produce their approachable ales and lagers, with a canning line slated to arrive in early 2018. Located less than six blocks from the famed Liberty Bell in downtown Philadelphia, Yards is the most recognized brewery in the city, and one of only a handful of urban, regional breweries in the entire United States.

“Yards is continuing Philadelphia’s brewing history, carrying on the proud and rich traditions of Philly’s breweries that came before us,” says Founder and Brewmaster Tom Kehoe, a man WHERE magazine called The Mayor of Beertown. “Those early breweries were very much stitched to the fabric of the city, serving as integral parts of the community and helping lead downtown revival efforts. Brewery news Canada, ON: Clifford Brewing in final stages of preparing for its opening
A long-anticipated brewery opening has been confirmed to be on the horizon in Hamilton, Ontario, Canadian Beer News reported on October 16.

Clifford Brewing was launched in late 2014 by Brad Clifford following his two years of operating a nanobrewery out of Toronto beer bar Get Well. The label has been used on two contract-brewed brands – Pinball Wizard APA and the multi-award-winning Clifford Porter – while Brad and his father, Barc Clifford, scouted for a location to establish bricks-and-mortar facility.

According to a press release issued on October 16, the pair acquired a 10,000-square-foot space on Nash Road North in East Hamilton earlier this year, and are in the final stages of preparing it for opening.

Brewing on the custom-built 35 HL brewhouse and accompanying cellar of 70 HL fermenters will be up and running by the end of October, with the opening of the 2,000-square-foot taproom and retail store planned to follow in late November. Production of both core brands will be moving over to the new facility, and Clifford is also planning “a regular rotation of experimental one-off beers for the taproom brewed on [a] 2 HL pilot system and a barrel aging program.”


Brewery news USA, CO: DeSteeg Brewing’s new owners plan to ramp up production
Craig Rothgery, who founded tiny DeSteeg Brewing in 2013 in an alley off of North Tennyson Street in Denver, has sold the operation to a pair of Denverites who had always wanted to open a brewery, Westword reported on October 20.

Longtime friends Ken Klispie and Tom Martinez bought DeSteeg on October 1. They plan to ramp up production of DeSteeg’s experimental beers and to add a second brand, called Blind Faith Brewing, which they hope to distribute to bars and restaurants around town, along with DeSteeg's beers. Blind Faith will focus on the Belgian monastic, or Trappist, brewing tradition of making dubbels, tripels and quads.

The name is partially a nod to Martinez, who worked in inventory management for Coors Distribution Company for twelve years before suffering health problems in late 2016 that resulted in him losing his sight; because he is now blind, the brewery will be retrofitted so that he can work in both the taproom and the brewhouse. The name also honors their religious faith, which forms the basis for their friendship, Klispie says.

Brewery news USA, AZ: Good Bad Ugly Brewing Co. to join the West Valley beer scene on October 26
The West Valley beer scene is about to get bigger with Good Bad Ugly (GBU) Brewing Co. hosting a grand opening party at Westgate Entertainment District on Thursday, Oct. 26, AZ Big Media reported on October 19.

Located within the newly opened Tavern + Bowl, GBU is among the first microbreweries to open in Glendale and will pour a number of its own signature brews including the Prairie Dog Stampede, a light, straw-colored American Lager with clean crisp notes of hops; the Lemon-Blue Specialty Wheat, a pastel-colored, unfiltered wheat beer tempered with blueberry and a touch of lemon; the Dirt Nap, an American Stout brewed with roasted barley, black malt and chocolate malt producing a rich, full-bodied dark beer featuring toffee and coffee flavors; and the Lizard Lips IPA, an aggressively hopped copper-colored India Pale Ale brewed hard with Green Hornet, Simcoe and Mosaic hops.


Brewery news USA, NY: Fort Orange Brewing Co. to open its doors in Albany on October 25
Albany's warehouse district just north of downtown welcomes a new brewery and taproom this month with the opening of the Fort Orange Brewing Co., NewYorkUpstate.com reported on October 20.

Fort Orange is located in a light industrial area with a garage door opening onto 450 N. Pearl St. It joins a growing number of craft alcohol businesses in the area, including C.H. Evans/Albany Pump Station (brewery); Albany Distilling Co.; Nine Pin Cider; and Druthers Brewing Co.

Fort Orange will be a production facility with a tasting room for on- and off-premises sales. It'll offer games for patrons, but it is not set up as a brewpub (brewery/restaurant).

"We're going to be primarily a tap room," partner Jim Eaton told alloveralbany.com in August. "And a little bit different from what Albany has right now because the Pump Station and Druthers are both restaurants. And we're going to be more a traditional brewery."

Eaton is running Fort Orange with Craig Johnson and John Westcott. All are from Castleton and all have day jobs. They invested more than $200,000 in the project, according to the Albany Business Review.

Brewery news Canada, AB: Freehold Brewing releases its first two brands
A new brewery that is aiming to be a “celebration of Alberta” has released its first two brands, with more to follow, Canadian Beer News reported on October 19.

Freehold Brewing has been founded by Matt James and Tavis Agnew, who have been working on establishing the brewery for more than two years.

Freehold made its official debut last weekend at the Rocky Mountain Wine & Food Festival, pouring samples of Big Chutes Lager (5.6% abv, 23 IBU) and Lacy Saisy Farmhouse Saison (5.75% abv, 28 IBU). The Lager is also now on tap at Beer Revolution in Edmonton, and cans will be on the shelf at Sherbrooke Liquor this weekend.

Cans and kegs of both beers are planned to be distributed to other bars and stores in Alberta in coming weeks, and they will also be joined by two other brands – Air Mail IPA (5.9% abv, 66 IBU) and Blackstrap Stout (6.9% abv, 52 IBU).

The next phase for Freehold will be the opening of a restaurant and taproom in the historic C. C. Snowdon building in the Calgary’s Ramsay neighbourhood. Exact timelines haven’t been announced, but the venue is expected to open in early 2018.


Brewery news USA, OH: Thirsty Dog Brewing Co.'s Flats brewery expected to be up and running in about two weeks
Thirsty Dog Brewing Co.'s Flats brewery, taproom and brewpub should be up and running in two weeks, owner John Najeway was quoted as saying by Cleveland.com on October 19.

The space covers 9,400 square feet - 6,900 inside and 2,500 outside. Najeway could call it a 20th anniversary present to himself, since he founded Thirsty Dog in 1997.

The Flats space is in the old Crop Rocks location, at 1075 Old River Road, Cleveland. It's next to Alley Cat and around the corner from Margaritaville.

Food will be "upscale pub fare," said Najeway, who is hopeful the many restaurants and bars will "feed off of each other" for traffic in the area.

Dishes also will incorporate Thirsty Dog beers, like raspberry-ale barbecue sauce.

"Almost everything we make will have Thirsty Dog beers in it," Milovanovic said.


Brewery news USA: AB InBev to launch limited-edition Budweiser 1933 Repeal Reserve beer
Anheuser-Busch dug deep in the archives of its St. Louis brewery for its new beer slated to hit store shelves nationally this week, Budweiser 1933 Repeal Reserve, STLtoday.com reported on October 23.

Adolphus Busch created the amber lager in pre-Prohibition days for his friends and it was originally only sold in St. Louis where the brewery was founded. The recipe hasn't been brewed by A-B since Prohibition ended.

The recipe was tweaked a bit to have a higher alcohol content — 6.1 percent — than the original. By comparison, A-B's flagship Budweiser brand has 5 percent alcohol content.

The beer in 12-ounce, vintage stubby glass bottles will be available at retailers and some bars and restaurants nationally only for a limited time.

"While Budweiser Repeal Reserve is a great tasting amber lager, it also tells the story of an important part of our history and gives reason for celebration," A-B's vice president of Budweiser Ricardo Marques said in an email. St. Louis is the U.S. headquarters for AB InBev.

Brewery news Canada, NB: Holy Whale Brewing’s own beers now available at its bar for the first time
After several months of operating as a bar serving beer from other local craft breweries, Holy Whale Brewing has announced that its own beers are now available on tap for the first time, Canadian Beer News reported on October 20.

Founded by brothers Jeff and Peter Grandy, Holy Whale is located in a former church in Alma, a village on the edge of Fundy National Park in southeastern New Brunswick.

Sharing the building with Buddha Bear Coffee, a cafe and roastery also owned by the Grandys, Holy Whale is currently pouring an American Pale Ale, a Session IPA, and an Irish Red Ale.

The brewery will be holding a grand opening in December, and will continue to offer test batches of various beers until the official launch.


Brewery news USA, NY: North Fork Brewing Company seeking permit to establish a brewery in Riverhead
North Fork Brewing Company is seeking a special permit to establish a microbrewery at the former firehouse on Second Street in Riverhead, the Riverhead News Review reported on October 19.

Co-owners and cousins Peter Barraud 31, and Ian Van Bourgondien, 27, said they’re most excited about opening a family business.

“We started talking and knowing that a family business can work,” Mr. Barraud said. “That’s why we’re doing it.”

It’s a topic of discussion at any family function they’re at, Mr. Barraud added.

The company’s proposal includes a tasting room and retail space, where the two envision friends and family visiting. Both come from agricultural backgrounds and their business currently grows hops at a farm in Peconic. Mr. Van Bourgondien said he’ll use his background in chemistry to test the quality of their products.

Growing up and working on the North Fork, both said they’ve noted what types of businesses can last.

The co-owners are looking to open by February pending permit approvals. The hope is that they’d be open by the spring for a test run before the busy summer season, Mr. Barraud said.

Brewery news USA, VA: Vibrant Shore Brewing Co. preparing to open new craft brewery in Virginia Beach’s ViBe Creative District next year
Vibrant Shore Brewing Co. will open a craft brewery and tasting room in Virginia Beach’s ViBe Creative District, the Virginia Business Magazine reported on October 19.

The brewery, which will be the 12th in the city, will be located at 505 18th St.

Vibrant Shore is purchasing the property for a 10-barrel brewing system. The 2,584-square-foot building will house a tasting room, seating area and manufacturing space. A matching addition will be built in the rear that will include a walk-in cooler, malt-storage room and a low-pressure boiler room.

An elevated 609-square-foot outdoor seating area will be added to the roof of addition.

The Virginia Beach Development Authority has awarded an Economic Development Investment Program grant of $20,000 based on the company’s capital investment. The brewery is expected to have 10 employees. Heineken is betting on Formula One to help it reclaim the title of leading global lager from Budweiser, a strategy that depends on broadening the sport’s appeal in Asia and persuading fans to pay more for their beer, Reuters reported on October 24.

Heineken has grown strongly in Asia over the past five years, but the sales boost was driven by its cheaper Singapore-based Tiger beer brand rather than its higher-margin namesake lager, which it promotes at the Grand Prix.

Asian drinkers have also turned to its cheaper rivals Budweiser and Tuborg. Heineken brand sales have grown more slowly in the region than globally for the past three years and fell 7.1 percent in the first half of 2017.

The Dutch brewer, Budweiser’s Belgian owner Anheuser-Busch InBev and Danish Carlsberg, which makes Tuborg, need regions like Asia to cut reliance on lower-margin Europe, or North America, where craft brewers are muscling in.

Heineken has ruled out an all-out scrap for market share, leaving it vulnerable to rivals selling “premium” products at a lower price. Brewery news Australia: Coopers Brewery launches biggest share buyback in more than 10 years
The family-owned Coopers Brewery has launched its biggest share buyback in more than 10 years, with a price of A$375 per share that values the largest Australian brewer at more than A$436 million, The Australian reported on October 23.

Coopers has agreed to buy back shares from its investors a number of times over the last decade but the current offer, seeking to buy 8 per cent of the brewer, is its biggest since 2006. It is supported by record low interest rates that make corporate debt very cheap and a buyback an efficient use of capital.

In a document sent to Coopers shareholders, and obtained by The Australian, the brewer has also revealed to investors its latest unaudited accounts, which show the strains of a difficult trading environment for beer companies.

The unaudited accounts provided to Coopers investors show sales of A$253.6 mln for fiscal 2017, up slightly from A$245.9 mln in 2016. Coopers was forced to further impair its US home-brewing business, Mr Beer, to the tune of A$8 mln, on top of a A$7.5 mln impairment in 2016. Brewery news India: Vijay Mallya persuaded to step down from United Breweries board - sources
Vijay Mallya has been persuaded to step down from the United Breweries Ltd (UBL) board and he will propose a successor following a Securities and Exchange Board of India (Sebi) order that’s made him ineligible to be director of any listed company, several people close to the development said. The move has also been prompted by the dwindling possibility of his voluntary return to India. He hasn’t revealed the identity of his nominee, said the persons cited above, The Economic Times reports.

The regulator’s decision came after lenders declared him a “wilful defaulter.” The Articles of Association between Heineken and Mallya, joint venture partners in United Breweries, entitles him to be UBL’s chairman for life and remain a non-retiring director, unless he nominates someone to replace him or voluntarily steps down.

Mallya did not respond to an email seeking comment. Heineken declined to comment.

The Czech Republic’s signature beer will soon be available in the Philippines, the Business Mirror reported on October 22.

Globally known as Budvar (after its home city with the German name Budweis) the beer will be marketed locally as Czechvar, it is reported.

The brand is brewed by Budejovicky Budvar, the only state-owned brewery in the Czech Republic, which produced its first batch in 1895.

According to the Czech Embassy in Manila, “The recent entry into the [Philippine] market provides an opportunity for the Filipinos not only to taste the real traditional Czech beer but also [for them] to further explore the culture that can be viewed through the lens of traditional crafts and history. It is more than safe to assume that the Czechs know their beer as the Czech Republic tops the per-capita beer-drinking table for 23 consecutive years, with over 140 litres per person.”

Also, it said that, “The aim for high-end beers available in the market is to provide [Filipinos] with new choices in the market and expand their palates. There is no better way to do this than by introducing a high-end, award-winning and traditional beer, such as Czechvar.”


Whisky news South Korea: Diageo releases low-alcohol whiskey in response to growing preference for weaker drinks
Diageo Korea released a low-alcohol whiskey for the local market on October 24 in response to growing consumer preference for weaker drinks, the Korea JoongAng Daily reported.

The Korean affiliate of the British liquor maker launched W Signature 12, a blended whiskey with an alcohol content of 35 percent. The company said the whiskey has been blended by world-renowned masters Douglas Murray, Craig Wallace and Caroline Martin using whiskeys that have matured in Scotland for at least 12 years.

“The value of whiskey made out of years of maturation is unquestionable,” Cho Kil-soo, CEO of Diageo Korea, said at a press event on October 24 at the British Embassy. “I believe W Signature 12 blended by global masters will become a safe choice for our consumers.”

On top of the deep tint coming from years of aging, W Signature 12 is topped with what Murray describes as “triple smoothness,” offering sweet flavor and mild texture.

Diageo Korea said it is targeting the “late millennial” generation in their mid-30s and 40s with its latest whiskey product.
