Scientific Digest

HOW IMPORTANT IS THE HSI VALUE FOR THE SENSORY PROPERTIES OF WHIRPOOL HOPPED AND DRY HOPPED BEERS?

ABSTRACT
The HSI value is a very important parameter for brewers to evaluate the quality of hops used for brewing. However, few investigations have been done on the sensorial influence on the final beer when hops with higher HSI values are used. Our team worked with the varieties Perle and Saaz, purposely oxidizing the samples resulting in HSI values varying between 0.27 (low), 0.33 (medium) and 0.49 (high). Beers produced were hopped in the whirlpool and additionally dry hopped. With the whirlpool hopped beers, the HSI value was less important than in the dry hopped beers. The beers dry hopped with hops of high HSI values were rated slightly lower in flavor and aroma quality, however not significantly.

Zunkel, M.: Effects in beer hopped with German Perle and Czech Saaz pellet hops with three different HSI values, poster presentation 138 at the World Brewing Congress 2016.

Barley news Canada: Western Canadian barley producers invest C$2.4 million in barley breeding
Funding from the Manitoba Wheat and Barley Growers Association, Saskatchewan Barley Development Commission, Alberta Barley, and the Western Grains Research Foundation will help improve barley varieties into the future, Pembina Valley Online reported on September 21.

C$2.4 million will be directed to the University of Saskatchewan Crop Development Centre (CDC) over the next 5 years.

“Manitoba barley growers are pleased to partner with barley producers across Western Canada to provide funding for variety development work that will improve the profitability and long term sustainability of barley,” said Fred Greig, MWBGA chair.

Kofi Agblor, the managing director for the CDC says the funding provides stability to the program for maintaining long term qualified technical staff, as well as resources for market development and use in the breeding program.

The CDC has released more than 70 malt, feed and food barley varieties since 1971, including CDC Harrington, CDC Copeland and CDC Austenson.

Barley news Canada: Alberta’s unseasonable wet conditions cause quality concern for malting barley growers
Unseasonably wet conditions in Alberta this year are causing quality concerns for malt barley growers there, Manitoba Co-operator reported on September 23.

Harvest typically begins in late August for many growers, but steady downpours have forced delays across much of the province.

“We actually started Sept. 1, but we only got two days in before it started to rain. We got two days in the following week and four days last week and that’s the extent of it; it’s just been that wet,” said Jason Lenz, an Alberta Barley director who farms northwest of Red Deer.

“I think the maltsters are definitely not going to get the quality they’re hoping for. That may increase the price of malt, but anyone that has barley that’s starting to chit bad and lose its germination, they’re going to take dockage,” he said.

His concerns are echoed by fellow director Jeff Nielsen, who has an operation near Olds. “I’ve had two days of harvest weather the whole month of September.

“Conditions are questionable right now; there is the possibility of higher chit in the barley,” he said.

As a rule, malt generally does worse in high-moisture situations, as the germ will break away from the kernel too easily. Maltsters have ...More info on site

Brewery news USA, ND: The Laughing Sun Brewing Company to add a new location in Mandan
The Laughing Sun Brewing Company in Bismarck is adding another location, KFYR-TV reported on September 21.

In a press release, the company announced plans to open a second business in downtown Mandan.

The brewery has an agreement to purchase a 16,000-square-foot building at the corner of First Street and Sixth Avenue, across from the Morton Mandan Public Library.

The addition should be open before next summer.

Laughing Sun will continue to operate at the Bismarck location.

Brewery news USA, VA: Big Lick Brewing Co to move to a much bigger location
Microbrewery Big Lick Brewing Co., one of the Roanoke Valley’s smallest beer producers, is moving down the street and becoming a much bigger player in the local brewing scene, Roanoke Times reported on September 20.

The owners have planned a new brewery in downtown Roanoke that will cover more than 10,000 square feet and allow for five times more beer production than at its current location, making it one of the largest retail brewing operations in the area. The new facility also will begin to can its products, joining the ranks of local brewers such as Soaring Ridge Craft Brewers, which is just a few blocks away; Chaos Mountain Brewing in Franklin County; and Parkway Brewing in Salem.

The brewer is moving into the old Habitat for Humanity ReStore location at 403 Salem Ave. Richmond developer Bill Chapman recently purchased the building with plans to turn it into apartments, adding onto the Lofts at West Station next door. It’s one of several projects Chapman has launched on that street, including 416 MicroFarms apartments and Tuco’s Taqueria Garaje, a tequila bar, in construction across the street.

The space will be completely redone and transformed into a trendy place to drink.

Brewery news USA, CA: Mraz Brewing Co. halts plans on opening new location in Folsom
El Dorado Hills-based Mraz Brewing Co. has halted its plan to open a location in Folsom, the Sacramento Business Journal reported on September 20.

This past spring, the brewery confirmed plans to fill an anchor spot in a new brewhouse-centered project at 13407 Folsom Blvd. It would have been the second location for Mraz, which opened in El Dorado Hills in 2013.

But in a Facebook post on September 20, the brewer said the plan for the Folsom location won't go forward. "We love Folsom and its residents, but determined that a location of that size is just not where our hearts are at," the Facebook post says.

The Folsom site would have been significantly larger than the brewer's current 1,000-square-foot location on Francisco Drive in El Dorado Hills. It was expected to have a full kitchen and cover 5,000 square feet, plus a 4,000-square-foot outdoor area.

"Although an amazing opportunity for the right brewery, the large location in Folsom unfortunately does not fit our ever-evolving vision for the future of Mraz Brewing Company," the Facebook post says.

Instead of expanding to Folsom, brewer and owner Mike Mraz expects to focus on the brewery's existing operations, including releasing four-pack cans of some of its most ...More info on site

Brewery news Vietnam: Sabeco shares soar after listing plan announcement
The price of Sai Gon Beer Alcohol Beverage Joint Stock Company (Sabeco) shares has soared in recent days on the over-the-counter (OTC) market after the company announced its listing plan on the HCM Stock Exchange, Viet Nam News reported on September 23.

The number of offers to buy shares of Vietnam’s biggest beer producer has perked up rapidly since early this week with the bid volume reaching over one million shares a day.

The tender prices are currently around VND100,000-102,000 (US$4.48-4.57) per share, up 25 per cent over that of early August.

Increased investor interest was attributed to Sabeco’s listing plan this year.

Last week, Sabeco asked the Ministry of Industry and Trade to debut its shares on the HCM Stock Exchange in the future. The company said it was working with a consulting securities firm and the procedures would take at least two months to be completed.

Shares of Sabeco are being traded on the OTC market, a decentralised and off-exchange trading floor where stocks are traded through a dealer network.

In August, the Government asked Sabeco and Hŕ Noi Beer-Alcohol-Beverage JSC (Habeco), the country’s two biggest breweries, to list their shares on the local stock exchange, saying it is “mandatory” for state-owned enterprises to ...More info on site
