Scientific Digest
Possible character impact compounds in the hop varieties Citra®, Centennial and Nelson Sauvin
ABSTRACT
To find this was the goal of this US research team. Using AEDA and GC-Olfactometry they found myrcene and alpha-pinene to have the highest FD (Flavour Dilution) Factor in the nonpolar fraction, hence to be of importance. In the polar fraction they found geraniol and linalool but also isovaleric acid and vanillin plus a sulfur component to have the highest FD factors. The sulfur component was identified as S-methyl methanethiosulfonate. The latter compound still needs to be confirmed. Even with this identification, the uniqueness of these three hop varieties cannot be explained.

Canada: Labatt Breweries buying Toronto-based craft brewer Mill Street
|
Canadian beer giant Labatt Breweries is buying Toronto-based Mill Street Brewery for an undisclosed amount as it looks to gain a bigger stake in the burgeoning craft beer market, The Canadian Press reported on October 9.
The acquisition of the privately held Mill Street brand will help Labatt expand the craft label into new markets, including Quebec, executives told The Canadian Press on October 9 ahead of an official announcement.
“We think that this partnership will really help expand awareness of craft across the country,” said Charlie Angelakos, vice president of corporate affairs at Labatt.
“The folks of Mill Street have built a great business and we want to continue to help them foster that growth.”
Labatt will also invest $10 million into the company’s brewery operations.
“Many craft brewers in Ontario are experiencing this huge surge just to keep up with demand,” said Mill Street co-founder Steve Abrams.
“This immediate infusion of capital will assist us in getting tanks and more equipment.”
The popularity of craft breweries has been on the rise across Canada in recent years.
According to recent findings from data research company NPD Group, the consumption of beer declined by six per cent in 2014, but craft beer servings were up seven per cent.

USA, CA & MI: Ballast Point Brewing and Spirits reveals plans for Michigan distribution
|
Ballast Point Brewing and Spirits, the acclaimed San Diego, California brewery, recently revealed plans to add Michigan to its distribution map. Expect to see the Ballast Point Brewing's bottles on store shelves before the end of the year, MLive.com reported on October 8.
The nautical-themed brewery is known for its Sculpin IPA and Victory at Sea porter. Longfin lager, Commodore stout and Even Keel session IPA are also among Ballast Point Brewing's flagship beers.
The announcement came not long after Grand Rapids, Michigan's Founders Brewing Co. revealed plans to distribute to California.
Founders Brewing Co. provides a good point of comparison to Ballast Point Brewing. According to a Brewers Association ranking, the Grand Rapids’ brewery ranked 23rd among all U.S. brewing companies in terms of beer sales volume in 2014, and Ballast Point Brewing came in at No. 37.
Ballast Point Brewing announced its new distribution plan on October 1 via social media. No specific details were available "due to the permitting process," according to a Ballast Point Brewing’s spokesperson.

USA, WI: City Lights Brewing to begin production in Menomonee Valley in March
|
City Lights Brewing Co. plans to use the former Milwaukee Gas Light Co.'s red brick water tower as a brew house and tasting facility. A neighbouring building will house additional production equipment, canning and kegging lines, a lab, office and storage and shipping areas, Milwaukee Journal Sentinel reported on October 8.
“The Menomonee Valley project, first disclosed in August, is moving forward,” City Lights Brewing’s owner Robin Gohsman said, “with the lease signed and financing package close to completion.”
City Lights Brewing plans to begin production in March, with projected sales of 15,000 barrels in its first year. That would place it among Wisconsin's larger craft brewers, with the goal of eventually brewing 50,000 barrels annually.
"We are pretty confident we will be able to sell every ounce of beer we produce," Gohsman said.
The brewery's distributor is St. Paul, Minnesota-based Johnson Brothers Liquor Co., a firm that has mainly been a wholesaler of wine and spirits. “Johnson Brothers Liquor has a relatively new craft beer division, and City Lights Brewing will be its first Wisconsin brand,” said David Kenyon, the wholesaler's beer and cider brand manager.
Johnson Brothers Liquor has around 500 Wisconsin taverns, liquor stores and other retail accounts where it plans to

USA, ME: Foulmouthed Brewing plans to open a brewpub in South Portland
|
A Portland couple unveiled plans for the first brewery in Knightville, South Portland, and only the second in the city, Bangor Daily News reported on October 8.
Pending approval from the Planning Board, which is scheduled to hold its first hearing on the proposal on October 13, Foulmouthed Brewing‘s owners Craig and Julia Dilger will open in a building that was once an auto garage.
The property is still in the early stages of renovation, and the Dilgers said they expect the business to be up and running sometime next spring.
“Foulmouthed Brewing will be a brewpub, rather than a brewery with just a tasting room,” Craig Dilger said.
The Dilgers said they have been talking about starting a brewery since they got together about eight years ago. They said the business name, Foulmouthed, is a play on the region’s history, when all of greater Portland was known collectively as Falmouth.
The name is also a reference to “the city’s seafaring history and the many salty conversations between sailors on the waterfront,” according to the Dilgers.
Dilger, who has been a home brewer for more than a decade, said a brewpub will allow them to offer more beer options without worrying about bottling and distribution.
He will

Canada, NS: Nine Locks Brewery to open in Dartmouth in late November
|
The Coast reports that the owner of Rockbottom Brewpub and neighbouring restaurant Your Father’s Moustache in Halifax will soon be opening a new brewery across the harbour in Dartmouth.
Shaun O’Hearn is partnering with distant cousin Danny O’Hearn to open Nine Locks Brewery, which is named after the nine locks of the nearby Shubenacadie Canal.
Brewers Jake Saunders and Chris Downey will be lunching the brewery with six brands – “an IPA, extra special bitter, white, American pale ale, porter and an India session ale” – with distribution in growlers and kegs at the brewery, and in cans at the brewery, NSLC and private stores.
Nine Locks Brewery is planned to open at 219 Waverley Road in late November.

USA, TX: BackPew Brewing to open in north Houston in November
|
BackPew Brewing plans to open the doors on its church-turned-brewery in November, the latest of several microbreweries to open in the Houston area.
Officially Saints and Sinners Brewing Co. LLC, BackPew Brewing is located in Porter, Houston. The brewery is housed in a converted church and initially plans to employ three people, founder Bobby Harl told the Houston Business Journal.
“The brewery is going to use the religious theme for its beer. Initially only on tap at Houston-area bars, BackPew Brewing will have two lines of beer: Saints and Sinners. The Saints line, which will be white, will be for beginners or those who want something easier to drink. The Sinners line, which will be black, will be drinks with higher alcohol content and experimental flavours,” Harl said.
To begin with, BackPew Brewing wants to produce 3,000 barrels of beer in the first year, with the goal of doubling in the second year, but that production could be increased depending on demand.
“The brewery aims to be a craft destination for the Humble area, as it will feature a tasting room and a backyard where people can hang out and drink,” Harl said.

USA, MA: Massachusetts monks at St. Joseph’s Abbey brewing to finance the monastery
|
St. Joseph’s Abbey’s monks in Spencer, Massachusetts, decided to begin brewing a few years ago to finance the monastery, when costs rose beyond income, Fusion reported on October 8.
“When we put it to a vote, we had the biggest majority of any vote we have ever had - 87% were in favor,” said Father Isaac Keeley, Director of Spencer Brewery, who forgoes the vow of silence to act as a spokesman for the organization. “The brew house lends itself to quiet, to a certain amount of mindfulness and prayerful atmosphere. There is a point when liquid has to come to a rest … so there is even a contemplative moment in the process.”
Luckily, the day-to-day life of a monk in the middle of Massachusetts is not all that expensive. Food is pretty basic and robes, which can be worn for years, run $125 apiece. But like other ordained Catholics, these monks are also getting older. As such, their health-care costs are pretty high.
Shelter can also be expensive. The 55 monks at St. Joseph’s Abbey live in an aging monastery, which sits on 2,000 acres of land. It was built, originally as a farm, in the early 1900s, so maintenance is

Jamaica: Red Stripe boss expects no immediate shifts in Diageo brands production after Diageo-Heineken deal
|
Red Stripe Jamaica boss, Cedric Blair, says he expects no shifts in production for the Diageo brands produced locally under the deal in which Heineken NV has bought the assets and brand of the favoured Jamaican beer for US$421 million, but cannot speak to what will happen in other markets, The Jamaica Gleaner reported on October 8.
Heineken has bought Diageo's shares in Desnoes & Geddes Limited, the corporate vehicle for Red Stripe, and has also bought other Diageo's brewing stakes in other markets, in an overall US$781 million deal.
Diageo has sold its 57.9 per cent stake in D&G to the Dutch company. Heineken previously owned a 15.5 per cent stake in the Jamaican company, so it now controls 73.3 per cent.
Pressed on the intended positioning of the lines held by Diageo, Blair said he doesn't know just yet what will transpire.
"Heineken is the No. 3 beer company in the world so we expect a lot of continuity. I wouldn't see any impact to production whatsoever in terms of the brands that we produce and sell in Jamaica. I would expect that to continue," Blair said.
But regarding production in the international markets, "I wouldn't be able to answer to that. I

South Sudan: SABMiller forced to cut production, fire more than half the workforce at South Sudan unit
|
SABMiller Plc has cut production and fired more than half the workforce at its South Sudan unit as a lack of foreign currency and the soaring cost of beer holds back investment and stifles demand.
The world’s second-biggest beer maker has failed to make a profit in South Sudan since opening the East African country’s first brewery in 2009, according to Carlos Gomes, managing director of the unit, South Sudan Beverages Ltd. The company has cut 250 jobs in the past two months and reduced output of local beers such as White Bull to 15 percent of June volumes, he said.
SABMiller, a takeover target for larger competitor Anheuser-Busch InBev NV, has “invested $94 million in various packages and is not willing any more to put in money when there are no dividends,” Gomes said in an interview in Juba, the capital, on Oct. 2. The London-based brewer hasn’t “got a single cent in return since we started operations,” he was quoted as saying in a report by Bloomberg on October 9.
South Sudan’s economy, which relies on oil for almost all exports, will probably contract by 7.5 percent this year as crude production falls after almost two years of civil war that

Israel: Craft brewing trend conquers Israeli market
|
With 53 microbreweries established in the past decade, the fast-growing trend of boutique breweries creating small batches of craft beers is currently exploding on the Israeli scene. Israeli craft beer enthusiasts have entered into a “golden age” in which experimentation, innovation and quality have come together to create some of the region’s most sought-after brews.
Doug Greener, author of the comprehensive beer blog Israel Brews and Views, shared a bit about his knowledge of Israeli microbreweries with Breaking Israel News. He explained that the sudden eruption of craft breweries in Israel is due to many factors, but above all, it results from the desire to experiment and create beers that can rival the award-winning wines for which the country has become famous in the last thirty years.
“People got tired of drinking beer that was undistinguished. In a country where classy wine and classy restaurants have become the norm, and are winning awards, it was very difficult for people to ignore beer. So craft beer started up and started becoming classy,” explained Greener.
Evyatar Cohen, Owner of Kos Shel Bracha, a high-quality wine and beer store in Jerusalem, shared his thoughts with Breaking Israel News about the budding industry.
“People are trying new things
