Hops-raspberries...where is the difference?


ABSTRACT
To solve the mystery of hop aroma it is helpful to look into the research of other fermented beverages. Korean researchers investigated the aroma profile of raspberry wines fermented with different yeast strains. They were able to identify aroma components as sensorily important, as we know well from the hops, e.g. linalool, citronellol, terpineol and different esters. Not surprisingly they found that the choice of yeast strain has a big flavor impact on the resulting wine. So in case you run out of hops, take some raspberries for compensation!

Brewery news Canada, ON: Brick Brewing Reports sets a EBITDA record of C$5.4 mln for the fiscal year of 2015
Brick Brewing Co. Limited, the largest Canadian-owned and Canadian-based publicly held brewery in Ontario, on April 13 released financial results for the fourth quarter and year ended January 31, 2015. Brick posted record annual EBITDA of C$5.4 million on net revenue of C$36.3 million. In the fourth quarter, Brick achieved EBITDA of C$1.8 million, compared to EBITDA of C$1.3 million in the fourth quarter of the prior year, Stockhouse reported on April 13th.

Brick's president and chief executive officer George Croft said, "Overall, F2015 was a good year for Brick. We grew EBITDA, continued to expand our gross margins, made good progress in building a stronger brand portfolio and increasing our share in craft premium. We also continued to improve our sales execution, revenue management capabilities and increased the efficiency of our operation. As a result, we delivered record EBITDA of C$5.4 million."

Brick's premium craft beer brand, Waterloo, posted full year volume growth of 21%. In addition to the successful launch of Waterloo Grapefruit Radler, the company also achieved strong growth in the Waterloo core offerings – Dark, Pilsner, IPA and Amber. Brewery news USA, WA: Elysian’s head brewer quits after sale to Anheuser-Busch InBev
A Seattle craft brewing pioneer quit on April 13th, citing his successful company’s recent sale to Anheuser-Busch InBev as the catalyst for his departure, Seattlepi reported on the same day.

Dick Cantwell, head brewer and co-founder of the Elysian Brewing Company, wrote to the Washington Beer Blog on April 13th to announce his resignation.

Cantwell made his feelings about Elysian’s January sale to Anheuser-Busch InBev clear. According to the Washington Beer Blog’s reporting of Cantwell’s email, he said:

“Just wanted to let you that about half an hour ago I resigned from Anheuser-Busch. The tenor of the deal, mainly from the point of view of my former partners and me, was such that I can’t possibly work with them into a future of any duration. My concerns were never even considered as a factor. … From the start it was me against everyone else, with no regrets expressed. Enough about that.”

Brewery news USA, OR: Widmer Brothers Brewing to invest $10 million into expanding in Portland
Widmer Brothers Brewing has announced a $10 million investment to expand its brewery on North Russell Street in Portland. The expansion will increase annual production capacity of Oregon’s largest brewery by 200,000 barrels (BBL) to 750,000 BBL. The entire expansion project, which includes significant brew house enhancements and a new innovation brewery, is expected to be completed by early 2017, Yahoo Finance reported on April 14th.

This is the sixth major brewery expansion for Widmer Brothers Brewing in Portland, the brewery’s hometown, since it was founded in 1984. The original 10-barrel Widmer Brothers brewery, located in the Pearl District in northwest Portland, had a 12,000 BBL annual production capacity. The Widmer Brothers brewery moved to its current location in North Portland in 1990, and has since invested in four additional major expansion efforts to grow the brewery to its current 550,000 BBL capacity.

This sixth expansion is not only significant for Widmer Brothers but also for the beer industry in Portland, a city that has become the epicenter of American craft beer over the last 31 years with the help of brewery co-founders Kurt and Rob Widmer. Brewery news USA, FL: First Cape Coral brewery projected to open in Cape Coral
Cape Coral’s first brewery - Cape Coral Brewing Co. - is projected to open in June downtown, parallel to Cape Coral Parkway, News-Press reports on April 14th.

“We’re almost all the way there,” said Peter Kessack, a partner and director of “hoperations” at Cape Coral Brewing Co. “We started talking about opening a brewery at the end of 2013 and went into the serious process of drawing up a business plan, getting consultants to help and then starting the application process.”

The facility is 6500 square feet.

Partners Kessack, Chris Hart and his wife Heidi Moore-Hart plan to work with local restaurants.

Hart, a brew master with 10 years of home brewing under his belt, plans to open offering six to eight brew styles with names that reflect Cape Coral.

“Beer is just not beer,” Kessack said. “It has a ton of flavor profiles and people are looking for different flavors. So we’re always manufacturing and doing tastings on items to see if it really accelerates. If we get a great response from it, then we’ll go ahead and put it into larger production.”

Brewery news USA, OH: Ferndock Brewing Co. to open a business in Sandusky
Ferndock Brewing co-owners Kyle Roth, his brother Zac and cousins Jared and Drew Opfer are working on opening an actual business somewhere in Sandusky, Sandusky Register reported on April 10th.

"The brick and mortar is going slower than expected, so we decided to change gears to get beer brewed in time for summer," Roth said. "We are currently brewing Ferndock Sandusky Pale Ale under Platform Beer Co. in Cleveland and will have some available at local establishments soon."


Brewery news USA, VT & OH: Long Trail Brewing Co. of Vermont to expand into Cleveland, Ohio
Long Trail Brewing Co., the 30th largest craft brewery in the United States, has entered the Ohio market, Cleveland.com reported on April 10th.

Long Trail is based in Bridgewater Corners, Vermont.

To give an idea of the brewery's size, Great Lakes Brewing Co. is 23rd on the top 50 craft-breweries list, which is compiled by the Brewers Association. Roughly 75 percent of the breweries in the top 50 distribute in Ohio.

"Clearly Ohio is saturated, but you're not alone in that," said Jed Nelson, marketing director at Long Trail. "Pretty much everywhere you look is market saturation. We've taken a hard look at where we want to expand." The brewery's last expansion, he said, was 2012 into Virginia.

“Long Trail, which was founded in 1989, is distributed in 13 states. Its flagship, Long Trail Ale, is Vermont's top-selling craft beer,” Nelson said. The brewery offers about 12 to 15 beers at any one time, with four year-round brews, half a dozen seasonals and "a bunch of rotating" beers.

Brewery news USA, MI: Glasshouse Brewing to open in Ann Arbor
Steve Payeur, along with his sons Brent and Brad, is a co-owner of a brewery that hopes to begin construction on its facility in the next week or so, Mlive reports on April 13th.

"As soon as we get the permit, we're starting the next day," Steve said. "My contractors are all lined up. They've been champing at the bit for the last seven months."

The 1,800-square-foot brew house will be located in the back portion of the family-owned Diamond Glass & Feiner's warehouse located at 2350 W. Liberty St. in Ann Arbor. Construction on the facility should only take a couple of months.

"We're all really excited to get started and our contractor said it shouldn't take too long for construction," Brad said.

The total investment for construction and to open the brewery is about $400,000, Steve said.

A dedicated craft-beer fan, Brent has been brewing at home for years and it spurred an idea that the three men are now investing in.

"We started off small at first and it kind of grew and grew," Brad said, adding the original idea was to brew and sell to local bars and restaurants.

Mystic Brewery’s founder, Bryan Greenhagen formally announced on April 14 that the brewery will be upgrading their facility in Chelsea, MA to enable vastly expanded production of saison and traditional wild ale with an unprecedented level of control over production and fermentation. The brewery will have a customized brewhouse and bottling line specifically for bottle conditioned beer up and running by May and will follow with one thousand barrels of wood fermentation and aging capacity as well as a traditional copper coolship, bringing the brewery closer to its goal of being one of the country’s largest dedicated producers of Belgian-style sours and wild ales.

“These kind of beers require patience and fortitude and it’s a long process to get genuinely traditional production flowing. We started over three years ago and have cast out hundreds of barrels of beer in the process of developing cultures for true wild ale brewing where, much like in the bread world, a great sour yeast culture is developed slowly, over time,” said Bryan Greenhagen.

Barley news World: Still the largest grain, oilseed exporter, USDA nevertheless lost market share to other countries
The USA, still the largest grain and oilseed exporter of the world, lost large market shares of wheat to the EU and Russia, of corn to South America and Ukraine, H. M. Gauger GmbH reported on March 31.

The US suppliers’ lack of competitiveness was boosted by the strength of the U.S. dollar.

American analysts are pessimistic for grain prices of the current and next crop year, they are afraid that the actual as of the end of March CBoT prices of USD 5.00 per bushel for wheat, USD 3.90 for corn and 9.75 for soybeans may drop another 50 cents between now and summer.

Only very strong droughts could change this situation, analysts believe.

Brewery news Indonesia: Ban on sales of drinks in convenience and other small stores to hit global brewers Heineken and Diageo
Heineken and Diageo are braced for sales of beer in Indonesia to go flat when a government clampdown comes into force on April 16 that could affect half the country’s beer sales, The Financial Times reported on April 13.

Diageo, the world’s biggest spirits company, has called on the government of the world’s fourth-most populous country to postpone the controversial ban on sales of drinks with less than 5 per cent alcohol volume — mainly beer — in convenience and other small stores.

The decision, announced in January, is another setback in the markets on which global drinks companies are increasingly pinning their growth hopes.

Several emerging markets have shifted from promising to problematic lately, notably China, where sales of expensive cognac and whisky have fallen sharply following president Xi Jinping’s anti-corruption drive.

This has hit profits at drinks groups, including France’s Pernod Ricard and Rémy Cointreau. China’s clampdown on extravagant spending has also led to a drop in beer sales because fewer people are eating out.

Barley news UK: Farmers with stocks of malting barley from harvest 2014 could struggle to find a buyer - expert
British farmers sitting with malting barley still in store from harvest 2014 could struggle to find a home for their grain, a leading grain trader was quoted as saying by Press & Journal on April 12.

According to GrainCo’s commercial director for Scotland, Charlie Birnie, the market for grain still in store is virtually non-existent as the stocks are so high.

“The domestic maltster has sufficient stock to see it past harvest 2015 and the currency is making exports difficult,” he said.

“The last time we were in this scenario a number of farmers didn’t put in crop and by harvest the price had risen by £50-60 a tonne. That could happen again but for most farmers their fixed costs are relatively high so to do nothing is more costly than sowing the crop.”

Malting barley contracted tonnage for this year’s harvest was around 15% lower than last year, he said.

“The whisky industry is still buoyant but the output is not rising as quickly as distillers had budgeted for and that has raised a few question marks. The maltsters are all sitting on lots of stock and they see this as a year to use up that stock and take in less grain,” added ...More info on site

Brewery news Japan: Kirin Brewery says restoration of tsunami-hit brewery took about one year
Four years after the devastating Japan earthquake and tsunami that killed more than 18,000 people, caused billions of dollars in damage and displaced 230,000 people, many of the companies in the path of the 25-foot waves are back in business, USA Today reported on April 11.

At Kirin Brewery, a leading Japanese brand and one of the country's oldest makers, 400 staff scrambled out of the factory in Sendai to escape as 70 million beer cans floated away in a series of massive waves that followed the magnitude-9 quake on March 11, 2011. But the brewery and several other businesses in the area had a plan in place to deal with such a disaster.

"It took us about one year to complete the restoration of the brewery," Noriya Yokota, a Kirin executive, told delegates at the recent World Conference on Disaster Risk Reduction. Yokota said the total cost to resume operations was $50 million.

As bad as things were, Kirin had taken steps to prepare for large temblor. Emergency kits and meals were available, and the brewery had been outfitted to lessen injuries and damage.
