The elegant way of dry hopping


ABSTRACT
Dry hopping is fun but also, you have to admit, a bit messy. These German researchers were looking for a way to dry hop without actually dry hopping. They established a process that works with sequenced desorption and absorption to transfer hop volatiles into beer. Hop volatile desorption from a hop-water mixture is forced by a stripping gas followed with a transfer in the gas stream to an absorption medium. The system, operating in a closed loop, was tested with both water and beer. This novel method features an easy to implement and cost-effective method for transferring hop aroma compounds into beer without directly bringing the beer in contact with hop solids that, for example, may introduce filtration and clarification problems. With a transfer rate for linalool of 65% within 24 hours, why not give it a try ?

Brewery news USA: Strong dollar does not reduce global thirst for US craft beer
A strong dollar may be harming the competitiveness of US exports but it has failed to damp the world’s thirst for US-brewed craft beer, The Financial Times reported on April 5.

Led by increased consumption in Europe and emerging markets, total exports of US craft beer surged 36 per cent in 2014, topping $100 mln for the first time ever.

“The growth is being driven by the beer drinker,” said Bob Pease, president of the Brewers Association, which represents small, independently owned brewers in the US. “The American craft beer revolution is not restricted to the US. It’s a global phenomenon.”

Though trade in the product hardly existed just a decade ago as US brewers struggled to satisfy domestic demand, exports have posted double-digit growth in recent years as brewers have expanded their production capacity.

Backed by a US Department of Agriculture grant and, in some cases, the Export-Import Bank, more than 80 US craft brewers exported in 2014, increasing their sales to Brazil by 64 per cent over the previous year and to the Asia-Pacific region by 38 per cent. Sales to Western Europe and Canada were also up 37 per cent and 32 per cent, respectively.

Brewery news USA, OH: The popularity of Barley’s Brewing Co. products prompts expansion
The last time Barley’s Brewing Co. expanded its beer-making capacity, the owners had to rip up the floorboards and drop stainless steel fermenters into the basement, Columbus Dispatch reported on April 4.

Down in depths of the Columbus-based brewpub, it isn’t hard to see why Barley’s needs a little more room to craft its English-style suds. “We’re finally addressing the problem,” said Angelo Signorino, Barley’s longtime brewmaster. "We can’t make enough beer.

Barley’s is leasing the empty Keyes Plumbing building a block away on Vine Street. Signorino can brew about 1,000 gallons a week in the bowels of the basement at the restaurant on High Street, but by the end of the year, he’ll be cranking out 3,000 gallons a week.

The basement brewery will continue to wet the taps at Barley’s restaurant while the production brewery serves off-site accounts.

Barley’s has a handful of outside accounts, but has never had the capacity to seek out new business or enter retail markets.

The new space on Vine Street is big enough to accommodate future expansion and possibly a bottling or canning operation. It’s time to take Barley’s to the masses, said Jason Fabian, general manager.

Brewery news USA, MI: Ascension Brewing Co. to enter Novi’s beer market
A locally owned microbrewery, Ascension Brewing Co., is coming to Novi and expects to bring something different to the area's bar and restaurant scene, Hometownlife reported on April 3.

The first step was taken on March 30 when the Novi City Council approved its request for special land use for service of alcoholic beverages and for a micro-brewer license.

Novi resident Adam Czap is proposing to establish the microbrewery called Ascension Brewing Co., which he said is a name that pays homage to his faith and rising above life's circumstances.

Czap has lived with his family in Novi for four years and the Novi/Northville area for the past eight years. He is currently owner and manager of Czap Studios, a boutique photography studio in Novi, which has been in business for more than seven years.

Ascension Brewing will be located at 42000 Grand River Avenue, between Meadowbrook and Novi roads, in the building between Weinstein Jewelers and Novi Reconstructive Dentistry.

The brewery's motto: "We are a community-focused brewery specializing in locally sourced food and ales crafted with sustainable brewing and cooking methods."

The brewery should be opening in the coming month.


Brewery news USA, CA: The River City Brewing Co. to shut operations in Jacksonville’s Downtown Plaza
The countdown is on to the moment when a Downtown Sacramento icon will no longer be downtown. The River City Brewing Company has been in Jacksonville’s Downtown Plaza for 22 years, but now owners say they’ll shut down operations around June 14.

After waiting for the area to bounce back following the recession and holding on to promises of a real boost from the Kings arena now under construction, hope has run out for River City, Fox40 reported on April 2. Co-owner Beth Ayers-Biro says she just kept getting the run-around until she was told no lease would be available past June.

“I don’t know. I don’t know,” said Ayers-Biro, who’d hoped some of the money she’d paid into the Downtown Partnership for area redevelopment could be used to help her business relocate. “For almost two years I guess now. It was frustrating. And then the city not really jumping in and saying ‘Hey, we’ll help. We know how much you’ve put into the city’.”

“It’s a little hard to stay in business, and not knowing when they’re saying they don’t know. But I think that’s their way of covering their [expletive],” she said.

Brewery news USA, MT: The Missoula Brewing Company to return to the brewing business
A well-known piece of Missoula brewing history is returning to the Garden City. The Missoula Brewing Company (MBC) plans to open a new brewery behind Karl Tyler Chevrolet on International Drive this summer, Kpax.com reported on April 6.

MBC says they'll be reviving Montana's Highlander brand which was originally introduced in 1910. The original brewery was located at the base of Waterworks Hill and shut down in 1964 to make way for Interstate 90. MBC re-launched Highlander in 2007.

“Missoula is on the leading edge of the craft brewery culture in the northwest,” said Bob Lukes, founder of the revived Missoula Brewing Company. “We are so excited to combine new world flavors with the rich history of Highlander for the state's craft beer enthusiasts.”

Owned by Bob and Shannon Lukes of Missoula, Marc Pierce of Bozeman, and a small group of investors, the brewery will feature a new facility allowing for large-scale production.

The head brewer will be Gary Gagliardi, formerly a lead brewer at Stoud's Brewery, the oldest craft brewery in Pennsylvania.

“The opportunity to bring back such a storied Montana brand is exhilarating,” added Marc Pierce. “We all love the rich history of Highlander and we love great beer!”


Brewery news USA, WI: MobCraft Inc to expand to Milwaukee
MobCraft Inc., a Madison-based brewing company that polls customers to guide its craft selections, will expand to Milwaukee and join the spirited Walker’s Point neighbourhood, Milwaukee Business Journal reported on April 7.

The small brewer plans to start mashing, fermenting and packaging at 505 S. Fifth St. by the end of the year, if it receives a zoning variance for the warehouse space it is leasing. The Board of Zoning Appeals will hear the petition on April 16.

If successful, MobCraft would join Milwaukee Brewing Co., Great Lakes Distillery and Central Standard Craft Distillery in producing adult beverages in the Walker’s Point area.

MobCraft CEO Henry Schwartz said on April 6 that the brewer will invest $2.06 million in the operation to provide an initial brewing capacity of 3,600 barrels per year. The future capacity could grow to 25,000 barrels, he said.

MobCraft launched in 2013 with a unique formula, even for the craft beer industry. It accepts suggestions for new brews each month and conducts an online poll of the flavor offerings. Then it produces the top vote-getter for distribution.

Brewery news USA, PA: Bluestone Brewing Company - the first craft brewery in South Waverly
Bluestone Brewing Company broke ground on April 6th at 19 Pitney St. in South Waverley, PA and owner Brady Liechty said over two years of planning are paying off, TheDailyReview.com reported on April 7.

Liechty, who teaches business at Athens High School, began homebrewing when his wife Amanda bought him a homebrew kit for Christmas in 2011 and his interest grew to the point of starting the brewery.

He said the demand for locally made craft beer encouraged him to provide the Valley area with beer, hard cider, and birch beer made by locals who care about their final product.

After swimming through paperwork, Brady Liechty said the brewery is projected to be finished around Memorial Day with an August opening and is expected to begin serving its signature drinks by Labor Day.

The name "Bluestone" comes from the locally available stone that, according to Brady Liechty, architects and designers use to create "a high quality, distinctive appeal for their desired projects."

"The goal at Bluestone Brewing is to offer the same high quality and distinctive beers, ciders, and service in which people can notice the quality, while appreciating our local environment," he said.

Brewery news USA, OH: The Dayton Beer Company to open by April 23rd in Dayton
Dayton’s newest brewery and beer hall has set an opening date of April 23 and will begin brewing its first test batches on April 7, according to Dayton Beer Company founder Pete Hilgeman, Dayton Daily News reported on April 7.

The Dayton Beer Company’s 8,000-square-foot production brewery and beer hall is on Madison Street in the Weiler Welding building, just off the 300 block of East Second Street and near Fifth Third Field in downtown Dayton.

Hilgeman had wanted to open in conjunction with the Dayton Dragons hope opener on April 12, but the installation of the brewhouse pushed back the date a couple of weeks. Hilgeman is a 2005 Alter High School graduate who holds a marketing and international business degree from the University of Cincinnati.

“I’m looking forward to showing everyone all the work we’ve done,” Hilgeman said.

Plans call for expanding the brewery’s distribution to Columbus and Cincinnati.

The menu will feature the Dayton Beer Company’s own brews and other craft beers from the region and elsewhere.

The current Dayton Beer Company microbrewery and tasting room at 906 E. Dorothy Lane in Kettering, which opened in 2012, will remain open, and plans call for expanding its brewing capacity and reconfiguring its tasting room.


Brewery news USA, MO: Bad Habit Brewing Co. to open in St. Joseph
Brewer Aaron Rieland said that Bad Habit Brewing Co. plans to open in the Millstream Shops and Lofts on Minnesota Street in St. Joseph, Missouri by September, SCTimes reported on April 7.

On April 6th the St. Joseph city council approved amending city ordinance to allow brewer taprooms and for those breweries to sell their beer in growlers. The city will charge annually $550 for the taproom license and $200 annually for the off-sale license.

Rieland said the goal is to create a destination brewery that specializes in high quality small batch ales with ever changing taps. He said they will rotate taps every month.

The brewery was initially meant to open in Bayou Alley Flats, a two-building development planned for College Avenue North. But that project is slightly delayed as the owners work to get a restaurant secured for it.

Brewery news The Czech Republic: Pivovary Staropramen increases beer sales both at home and abroad last year
In 2014, Czech brewer Pivovary Staropramen registered increase in shipments to both the domestic and foreign markets, selling almost 3.16 mln hl in total, Radio Prague reported on April 3.

As compared to 2013, sales increased by almost 15 thousand hl.

The surge in shipments is attributed to higher demand for the company’s brands abroad and for growth in sales of the Bráník brand in the Czech Republic.

Canned beer sales increased by 26% as compared to 2013, the company said.

Controlled by North American brewing giant Molson Coors, Pivovary Staropramen is the Czech Republic’s second-largest beer maker after SABMiller-owned Pilsner Urquell, which increased sales by 4.5% to 10 mln hl last year. The nation’s third-largest brewer is Heineken, which has not made public the data on its performance last year.


Brewery news UK: Bottled beer taking increased share of SIBA members’ sales
A report from the Society of Independent Brewers shows bottled beer taking an increasing share of its members’ sales, Off-Licence News reported on April 7.

The report, based on a survey of members, showed that more small brewers are producing beer in bottles and cans, with cask ale as a proportion of total SIBA production falling from 84% in 2013 to 71% last year.

The figure is forecast to drop again, to 68%, by the end of 2015.

But there is still plenty of room for take-home growth with less than 10% of SIBA members’ total production going into bottles. Only one in 10 makes bottle-conditioned beers.

The report came as SIBA launched its first strategic plan, which outlines the further development of the organisation’s Direct Delivery Scheme in the off-trade as part of aims to assist the commercial performance of members.
