Hop aroma needs to breathe

ABSTRACT
US researchers are exploring the idea that oxidized hops may be more beneficial than once believed. The exposure to prooxidative conditions led to an increase in the oxygenated fraction of hop aroma compounds and a generalized decrease in the hydrocarbon fraction. The researchers also produced dry hopped beers (using 600g/hl) with oxidized and non-oxidized hops. Panelists were able to detect the flavor difference and the beer produced with the oxidized hops was described as more fruity, floral, and herbal! This may break a German brewer's heart, but maybe oxygen is not always the bad guy... May this also have an impact on flavor stability?

Brewery news USA, TX: Saint Arnold Brewing completes its expansion
Saint Arnold Brewing Co., the oldest craft brewery in Texas, has completed the expansion of its brewhouse with the installation of a fourth vessel – the latest project to add capacity as the company works to keep up with demand, the company announced on September, 3.

The additional brewhouse vessel, a dedicated brew kettle, allows the brewery to increase production to six brews from three brews every 24 hours.

The installation of the brew kettle follows Saint Arnold’s installation of a new malt mill that can crush up to 8,000 pounds per hour – approximately four times what the brewery’s previous mill could handle. Considering that Saint Arnold’s average grain bill for a 120 barrel batch is 6,000 to 7,000 pounds – and some special beers, such as Pumpkinator, require more than 18,000 pounds – the new mill plays an important role in increasing Saint Arnold’s brewing capacity.

“This project is a key part of our future growth,” said Saint Arnold Founder/Brewer Brock Wagner. “We needed to add the kettle before we filled up the building with fermenters, at which point the brewhouse would not be accessible for expansion. When we moved here in 2010 we thought it would take 15 to ...More info on site

Brewery news USA, NM: Santa Fe Brewing Co. to expand its production
The Santa Fe Brewing Company announced on September, 4 it will increase its production capacity from 18,000 barrels of beer per year to more than 200,000 barrels by the year 2020, and that the expansion will add up to 85 new jobs to the company.

New Mexico's Economic Development Department also announced it will invest $250,000 through the Local Economic Development Act to help the brewery expand.

The brewery is poised to add 55,000 square feet to its operation, and will look to increase its national and international distribution. The company currently pays the state about $120,000 in tax money per year, but after the expansion, taxes paid will amount to about $263,000 annually.

The first phase of the expansion includes a new lab, packaging hall, loading dock and a new beer garden with a larger tasting room. The second phase will include adding a new brew house and more warehouse space.

Santa Fe Brewing Company is the state's oldest microbrewery, founded in 1988.

Brewery news USA, WA: Kulshan Brewing to build second location
Kulshan Brewing Company is undergoing a major expansion with a second Bellingham brewery, The Bellingham Herald reported on September, 3.

Construction recently started at a 12,000-square-foot building to convert a former auto supply warehouse into a production brewery that includes a taproom with a capacity of 120 customers.

The brewing equipment is scheduled to arrive this fall. If there are no construction hiccups, Vitt expects to have the brewery ready by early next year.

The Kentucky Street brewery will handle the high volume production of Kulshan beer, including its IPA, while the current James Street brewery will concentrate on producing the seasonal brews. All Kulshan beer will continue to be available at either brewery, so customers at James Street won’t see any changes to the menu or how it operates.

The key change for the brewery is in capacity. Production at the James Street brewery has been at capacity for a while, making about 3,000 barrels a year. Initially the Kentucky Street brewery will produce around 6,000 barrels a year. At capacity, Vitt estimates the Kentucky Street brewery will produce 15,000 barrels a year, a production level similar to that of Boundary Bay Brewery.

Along with being able to provide more kegs of beer ...More info on site

Brewery news USA, NC: Open Brewing to launch in Asheville
Thirsty Monk owner Barry Bialik announced on September, 4 the introduction of Open Brewing, a brand new brewery and brewing concept in Asheville’s beer scene, launching in late September.

Open Brewing will serve as the first commercial brewpub in the country dedicated to “open-source brewing,” an incubator for homebrewers to develop and refine their recipes on a larger scale, share their final products and gain valuable feedback. Plus, Open Brewing will be South Asheville’s hot spot for beer lovers to gather and sample unique brews they may never have the opportunity to drink twice.

Open Brewing will accept applications from homebrewers to come and brew their beer, which will then be offered on tap in the tasting room. The homebrewer will be paid a royalty for each pint sold to the public. “As the craft beer industry has taken off, so has homebrewing, and we have had a great relationship with the local homebrewing community [through Thirsty Monk] over the years,” said Bialik. ”Our intent is to create an avenue where homebrewers can reach new audiences, experience the brewing process on a larger scale and gain opportunity in the beer world that might not otherwise be available.”

Beginning in September, homebrewers will ...More info on site

Brewery news USA, PA: Victory Brewing Company to open brewpub in Virginia
Philadelphia area based Victory Brewing Company announced on September, 3 its plans to open an additional brewpub, Victory at Courthouse Square, in Leesburg, VA.

Slated to open in the second quarter of 2016, the restaurant will expand the service footprint of Victory while directly supporting the positive image of the burgeoning company and its products through direct hospitality services.

Victory at Courthouse Square, the fourth Victory brewpub, will be equipped with a full-service brew house to keep the brewery’s world-class ales and lagers—including new, site specific recipes—flowing, and allow for a more interactive customer experience by creating customized brews for special events.

“The announcement is a culmination of over a year and a half of planning and effort, and we couldn’t be more excited than we are today, to announce our expansion into Virginia,” said Matt Krueger, Vice President, Retail Operations. “We could not have found a better partner than the White family, who shared - and are now helping us realize - our vision to bring Victory to Virginia.”

“Over our 18 years of successful operations, every glass of our beer and taste of our food has been created to deliver great traditional impressions, while embracing innovation and creative opportunities,” said Victory’s ...More info on site

Brewery news USA, MA: Dorchester Brewing Company to open as first contract manufacturing brewery in Massachusetts
Over the next year, a 10,000-square foot abandoned warehouse in Bowdoin Geneva will be transformed into the first contract manufacturing brewery in the state – a $1.7 mln project set to make waves, dotnews.com reported on September, 4.

“There’s no other facility in Massachusetts, that we know of, that bottles, cans, and kegs to smaller craft brew company contractors,” said Dorchester Brewing Company (DBC) co-founder Travis Lee. “We’re looking to create an intimate, artistic craft setting for multiple craft brewing companies.”

Over the next month, Lee and co-founder Filipe Oliveira will iron out the building’s lease terms with the current owner, the Boston Community Development Corporation. The parcel is worth $137,000, according to the city assessor database. Once the building is in ship-shape, DBC will install roughly $1 mln worth of machinery to make the brewery a reality. “If we’re really lucky, we’ll open in June,” said Lee.

The community’s support for the DBC initiative has been highly encouraging thus far,” said Lee. “I’ve worked in real estate for a number of years, and to have near unanimous support for a project is pretty rare.”

“For the last 30 years that I’ve been here, this building has always been empty,” said Oliveira, a founder ...More info on site

Brewery news USA, GA: Southern Brewing Company opens in Athens with help from Economic Development & Planning
With help from the Athens-Clarke County Economic Development and Planning Departments, the Southern Brewing Company was able to break ground on August 1 in the Athena Industrial Park, the Athens-Clarke County Unified Government announced on September, 3.

The brewery is expected to be operational in May 2015.

Southern Brewing Company is owned by Brian Roth and Rick Goddard, who have extensive backgrounds in brewing, legislation, and management. According to Roth, he has visited over 450 breweries all over the world since the 1990s when he started his pilot brewery Gratis Brewery after an internship with local beer distributor Leon Farmer & Company.

"After a meeting with the Athens-Clarke County Economic Development Department, we were convinced that Athens was the right place to be," says Roth. "The coordination with the Planning Department demonstrated to us that the local community was supportive of our plans to grow. Athens is a very beer-friendly town and that has helped a lot. This is a town that hopes to attract more breweries."

"We are excited to see Southern Brewing Company creating jobs and investing in Athens-Clarke County," says Economic Development Department Director Ryan Moore. "It further evidences the success of our burgeoning brewing industry and sets us ...More info on site

Brewery news UK: Growing interest in locally brewed products helps revive UK’s ale industry
Discerning beer drinkers are increasingly turning to locally brewed products, helping to revive an ale industry hit by rising duty, pub closures and the growth of supermarket sales, The Financial Times reported on September 4.

At the beginning of the century, the UK was home to about 500 breweries, but by last year that figure had risen to 1,442, after increasing by a further 190 in 2012, according to figures released by the British Beer and Pub Association.

The growth in demand for cask ale and the sprouting of craft beer makers has been a notable feature of the beer industry in recent years.

“It has stimulated an enormous amount of interest in beer,” said Brigid Simmonds, chief executive of the BBPA.

Creating your own brewing business is helped by a tax break that gives a 50 per cent discount on duty to those who brew less than 5,000 hectolitres – almost 900,000 pints – a year.

Ms Simmonds is wary of the view that craft ale could be the saviour of the industry. It still comprises only a small proportion of the sector and the tax system is putting pressure on medium-sized breweries, she said.

Still, growth in the business of brewing is at least ...More info on site

Brewery news India: Vijay Mallya to ensure United Spirits operations not to be affected by United Bank of India's move to name him a wilful defaulter
Vijay Mallya, the embattled chairman of United Spirits in which global spirits major Diageo has majority stake, has told the company's board he will ensure operations are not affected after the United Bank of India's move to name him a wilful defaulter, Business Standard reported on September 5.

At a meeting that went on till late on September 3 in Mumbai, the newly constituted board of United Spirits took notice of United Bank of India's move to label Mallya a wilful defaulter.

"The RBI's master circular on wilful defaulters along with certain covenants in the loan agreements sanctioned by the company's bankers raise an uncertainty on the impact of this development on the availability of credit facilities to the company. The said director has assured the board that he will take appropriate steps to ensure that the operations of the company are not impacted. Having received such assurance from the said director and appropriate comfort from the controlling shareholders (Diageo) of the company, the financial statements have been prepared on a going concern basis," United Spirits said in a statement.

Mallya on September 4 denied allegations made by the grievance redressal committee of the United Bank of India and said he would take ...More info on site

Brewery news Denmark: Carlsberg’s shares up on news of Ukraine and Russia ceasefire agreement
Shares in Danish brewer Carlsberg jumped over 4 percent on September 3 after reports that Ukraine and Russia had reached a ceasefire agreement in the eastern Ukraine.

"That is definitely why the Carlsberg shares are going up," chief share trader at Danske Bank Mads Zink told Reuters. Reuters share price data also showed the jump after the news was announced by Ukrainian President Petro Poroshenko's office.

The Danish brewer has a large exposure to Russia through its market leading Baltika brand and its shares has been under pressure this year due to the crisis there.

Brewery news China: Having survived colonialism, civil war and Communist revolution, Tsingtao Beer now relies on Japanese investment
China's most famous beer and probably its biggest global brand, Tsingtao has survived colonialism, civil war and Communist revolution. Now, it is relying on Japanese investment to help negotiate slowing growth and intensifying foreign competition, AFP reported on September 3.

Set up by German brewmasters in 1903, Tsingtao Brewery is today state-controlled but partly Japanese-owned, despite strained political ties between the two countries that were on display anew on September 3 as China marked the 69th anniversary of Japan's surrender in World War II.

"Tsingtao Beer has become a big international brand," said Xiao Shengxiong, who travelled with his family and colleagues from Hunan, three provinces away, to Qingdao -- the eastern Chinese city it is named after in an old transliteration.

"We all like to drink Tsingtao beer," Xiao said after touring the Tsingtao museum and brewery, across the road from restaurants serving fresh lager piped directly from the facility.

Nonetheless the company's high profile has not translated into dominance of China's beer market, the world's largest by volume but one that is highly fragmented.

Tsingtao is only the second-largest beer company in China behind Snow, analysts say, and claims a market share of only 17.2 percent.

At the same time, foreign brewers are moving ...More info on site

Brewery news Japan: Three major brewers simultaneously launch new “happoshu” beer products
Three major brewers simultaneously launched new “happoshu” low-malt quasi-beer products on Tuesday, September 2 that contain no purine bodies or carbohydrates, The Japan News reported.

In the unusual move to release similar products at the same time, Kirin Brewery Co., Suntory Liquors Ltd. and Asahi Breweries Ltd. hope to catch up with Sapporo Breweries Ltd.’s “Goku Zero,” which has been popular among consumers since its July launch.

Purine bodies contained in beer can be transferred into uric acid, which causes gout, while an excessive intake of carbohydrates is said to trigger lifestyle-related diseases.

In the shrinking Japanese beer market, health products are one of the few growth areas. The brewers believe consumers have a growing interest in products free from purine bodies and carbohydrates, with over 10 million people facing the risk of developing gout.

Takayuki Fuse, president of Kirin Beer Marketing Co., distributed Kirin Brewery’s new “Tanrei Platinum Double” happoshu to shoppers free of charge at a supermarket in Tokyo.

“People’s health-consciousness grows year by year and we have had a considerable response from consumers,” Fuse said, expressing confidence in achieving the sales target of 1.2 million cases by the end of the year.

Each case contains the equivalent of 20 633-milliliter bottles.

Brewery news South Korea: Beer industry competition leads to police raid
Police raided the offices of Korea’s No. 2 beer maker Hite Jinro Co. and one of its provincial agencies on September 3 in connection with suspicions that the company spread malicious rumors against its bigger rival Oriental Brewery (OB), Yonhap News reported.

Police investigators seized computer hard drives and other documents from Hite Jinro's headquarters in southern Seoul and the local sales agency based in the central city of Daejeon.

The raid came after OB, the No. 1 player in South Korea's beer market, requested a police investigation into allegations that some market forces are spreading ill-willed rumors against Cass, OB's best-selling beer brand.

Since June, OB has been gripped by online rumors that Cass beers smell of disinfectant.

Police reportedly found that Hite Jinro employees were involved in the circulation of the rumor against the No. 1 beer maker.

Following the raid, police plan to question some of the firm's employees over the case.

Amid the rampant rumor spreading through online social networking services, food and drug authorities have said that the cause of the particular smell in Cass beers is attributable to a chemical reaction made when the fat element of malt, used in making beer, meets with dissolved oxygen.

Brewery news Hungary: Beer sales below targets this summer because on lack of continuously hot weather
Beer sales were below targets this summer, as there was no period of continuously hot weather, Hungarian Brewery Association leader Klara Kovacs said in an interview to Caboodle.hu on September 3. If the autumn weather is mild, then September and October sales could help to produce 1-2% sales growth this year, she added. Beer consumption fell 4.5% in 2013, but this year the football World Cup and music festivals helped, but were not enough to offset the cold weather.

Brewery news Ireland: Guinness announces release of two new beers
Guinness has just announced the release of two new beers, inspired by authentic recipes from Guinness brewers’ historic diaries from 1796 and 1801, IrishCentral reported on September 4.

Guinness Dublin Porter and Guinness West Indies Porter are the first releases from a new brewing project at the St. James’s Gate brewery in Dublin. ‘The Brewers Project’ gives Guinness’ enterprising brewers license to collaborate, reinterpret old recipes and explore new ones.

The new Guinness Dublin Porter is sweet and smooth with malt and dark caramel notes. Originating from the diary entry of a Guinness brewer from 1796, the recipe is inspired by the ‘golden age’ of porter – the 1800s workingman’s beer in Dublin and London, where after a long day at work, this Guinness stout porter was always the choice.

The new Guinness West Indies Porter is hoppy with notes of toffee and chocolate, described as “complex yet mellow.” The recipe originates from an 1801 diary entry about brewing specifically to maintain freshness while Guinness is transported from one country to another. To guarantee the fresh quality, brewers created a porter with more hops and a higher gravity.

The new flavors came to life right inside Dublin’s St. James’s Gate, where some of the ...More info on site
