125th Anniversary Review: Developments in brewing and distilling yeast strains


ABSTRACT
Progress during the past 25 years regarding our knowledge of brewer's yeast strains is considered. This is not a comprehensive review but rather focuses on some specific areas. These areas include a brief description of genomics, proteomics and metabolomics as applied to brewer's yeast strains. This review subsequently considers differences between ale and lager yeast strains, the uptake and metabolism of wort sugars and amino acids, yeast flocculation, yeast management between fermentations and yeast strain genetic stability. The question of process intensification, with particular attention to high-gravity brewing, is also addressed. Fermentation systems and processes are considered with an emphasis on novel procedures for stirred fermentations.

Brewery news USA, SC: South Carolina allows breweries to serve food and their beer in the same establishment
South Carolina Gov. Nikki Haley has signed a bill that allows local breweries to serve both food and the alcohol they produce in the same establishment, a change supporters say will help them expand their business and hire more employees, Savannahnow.com reported on August 15.

“South Carolina is leaps and bounds ahead of where we were just a few short years ago when it comes to freedom for beer brewers,” said Joseph Ackerman, president of Conquest Brewing Co., in a news release.

“I am happy to see how quickly we have progressed since 2007, and the latest brewery law is another great step in decreasing regulation so that we can continue our passion and industry, brewing beer for people to enjoy.”

The bill, H. 3512, was initially dubbed the Stone Bill, because of its intention to attract California-based Stone Brewing Co. to South Carolina. The business eventually decided not to come to the state. But brewing advocates still welcomed the changes in state law.

“The craft beer industry is booming in neighboring states, and there’s no reason we can’t have that same economic growth right here,” said Rep. Derham Cole, a key player in the legislation.

Brewery news Canada, ON: Brick Brewing agrees to sell its Waterloo property
Brick Brewing has agreed to sell its Waterloo property at 181 King Street for C$4 million to HIP developments, CBC News reported on August 13.

George Croft, president and CEO of Brick Brewing Co., said the deal is expected to close at the end of the fiscal third quarter, after which the company plans to lease the property back for a maximum of two years. Croft said that the lease will not be renewed, nor will the property be re-purchased.

Instead, Brick Brewing plans to expand its Bingemans Centre Drive location by adding a full brewery and retail site, and moving all brewers to the new location in Kitchener. Currently, the Kitchener facility is only used for packaging and distribution. Croft said the company doesn't anticipate any job losses.

"We presently have three operating facilities. We have the facility in Waterloo, we have a fully functional brewery in Fermosa and we have the packaging-distribution warehousing facility in Kitchener. Certainly, a brewer our size, we don't need three operating facilities," said Croft. "Waterloo quickly got eliminated simply because we obviously don't have a significant amount of property. The building we're in presently could not accommodate packaging, and warehousing and shipping."

Brewery news USA, TN: Smith & Lentz Brewing Co. preparing for a late 2014 opening in Nashville
A new craft brewery is opening in SoBro in Nashville, Nashville Business Journal reported on August 13.

Smith & Lentz Brewing Co. is preparing for a late 2014 opening at 537 5th Ave.

The small-batch brewery is opening next door to Czann’s Brewing Co., another local craft brewery that opened shop in June. The opening will put five craft breweries within walking distance of each other downtown (with the others being Tennessee Brew Works, Yazoo Brewing Co., and Jackalope Brewing Co.).

That brewery district feel is, in part, what attracted the duo behind Smith & Lentz to the neighborhood.

“We liked the proximity to downtown, and we liked that we were a little bit removed from the Gulch, but we still see people hopping on bikes from one brewery to the next,” said Kurt Smith, one of the brewery’s co-founders.

His partner, Adler Lentz, has been brewing professionally for around seven years. Most recently, he was at Hops & Grain in Austin, which specializes in sustainably brewed beers. He also works for a brewery equipment manufacturer and has helped install brewing systems across the U.S.

Brewery news USA, MA: New brewery may open in Abington soon
A local brewery could be on tap for Abington, MA, The Enterprise reported on August 13.

Patrick Eddy will appear before the the Abington Zoning Board of Appeals at 7 p.m. on Friday, Aug. 15 as the next step of bringing a brewery to the town.

Eddy is seeking to open Tenth District Brewing, “a small scale production brewery,” at 491 Washington St. The location is the former site of the Extreme Fantasy Body Art & Piercing Studio. The brewery would be “open to the public for bottle ‘growler’ fills,” according to its application. Growlers are typically jugs that can be purchased by customers and filled from a tap in a brewery, and then they are brought back when the customer needs a refill. The application also states that the brewery would produce “beer to be distributed to resale accounts.”

When reached by phone, Eddy said he did not wish to comment on the project at this time out of respect for the ongoing application process.

If approved, Tenth District Brewing would be the second brewery to come to the region in recent months.

In late June, four Whitman natives opened Old Colony Brewing on Route 27 in their hometown.

Brewery news USA, NC: Lost Province Brewing Company launched in Boone, NC
Lost Province Brewing Company has found a niche in downtown Boone, MountainTimes.com reported on August 13.

The craft brewery and wood-fired pizzeria opened Aug. 8 to an audience hungry — and thirsty — for fresh, local fare, and, according to CEO and co-owner Lynne Mason, Lost Province was happy to oblige.

“We’re thrilled about it, and we’re equally thrilled to be part of the downtown community,” she said. Lost Province is truly a family affair. The brewpub is owned by the husband-and-wife team of Lynne and Andrew Mason, the latter of whom serves as chief operating officer and director of brewing operations.

Andrew Mason, however, is not one for titles.

“When I’m in that room,” he said, referring to Lost Province’s brewhouse, “I’m just a brewer.”

His twin brother, David Mason, is executive chef, and Andrew and Lynne’s son, J.P., is pizzaiolo (pizza chef).

Together, the Masons bring a family dynamic to the table that happily combines business with pleasure.

Brewery news USA, OH: Crafted Pints Brewing Company’s plans for Lebanon location fall through
A craft brewery planning to open in the Dayton region is once again looking for a location after an arrangement fell through in Lebanon, Dayton Business Journal reported on August 13.

Crafted Pints Brewing Company announced on August 13 via its Facebook page it will not be able to open its brewery and tap room at the Hidden Valley Fruit Farms in Lebanon, as it had previously planned.

The owners cited zoning restrictions for changing their plans.

“Crafted Pints had fully committed to being on Hidden Valley Fruit Farms and we were partially through our licensing process when we hit a major roadblock,” the owners wrote.

A downtown Dayton location is now back in the running, which has the potential to be downtown Dayton’s fourth brewery. Breweries draw a strong crowd and add vibrancy to urban areas.

The location change will delay the brewery’s opening until at least first quarter 2015, but the group still plans to use locally grown ingredients in its craft beers and ciders.


Brewery news USA, IL: Scorched Earth Brewing Co. opens in Algonquin
Scorched Earth Brewing Co. opened its tap room for business in Algonquin last week, Northwest Herald reported on August 13.

The microbrewery’s tap room, 203 Berg St., Algonquin, will be open from 4 to 10 p.m. Thursdays and Fridays and from noon to 10 p.m. Saturdays, according to a news release.

Scorched Earth has four beers on tap: Public Servant Rye Pale Ale, Rugged Coalminer Robust Porter, French Merchant Saison and Guildmeister German Kolsch. Limited supplies of a fifth beer, Berliner Weiss, will be introduced this weekend.

The brewery will offer beer in pints, flights, growlers and howlers. Patrons can bring in food.

Mike and Jennifer Dallas created the business and hired Dan Payson as head brewer.


Brewery news USA, CO: Zwei Brüder Brewing ready to start brewing in South Fort Collins
South Fort Collins' newest brewery will open on August 20 with a mostly Bavarian starting lineup of Helles, Dunkel, Weiss and Pilsner, Coloradoan reported on August 14.

"That's our passion, German styles," said co-owner and brewer Kirk Lombardi. Together with his brother, Eric, he is ready to open a "new-age, European-style brewery" in Fort Collins.

The aptly named Zwei Brüder Brewing, (German for "two brothers") at 4612 S. Mason St. Unit 120, is the family pet project after 25 and 17 years respectively with C.B. & Potts brewery. Kirk Lombardi was the chain's regional brewmaster for Colorado and Wyoming, while Eric Lombardi was the Fort Collins brewer.

The German recipes they've brought with them to Zwei are versions of their previous Great American Beer Festival medal winners, Kirk Lombardi said.

Staying true to style, the Lombardis use German malt, yeast and hops in their brews and, for the most part, follow German beer purity law: reinheitsgebot.

But for the new-age portion of their program, they will also brew IPAs, such as ZweIPA (almost a double), as well as American reds and even Belgians. For Oktoberfest, which will mark the brewery's grand opening, they will release a traditional Märzen.

Brewery news USA, UT & TX: Epic Brewing starts distribution in Texas
Epic Brewing kicks off distribution in Texas this week with a series of events in Austin, Brewbound reported on August 14.

Distribution in the Austin metropolitan area will be handled by Keg 1 LLC. Epic Brewing will also be distributed in the Dallas and Fort Worth areas by Andrews Distributing.

To introduce Epic Brewing a series of tap take-overs and tasting events have been scheduled with craft-centric retailers.

Epic Brewing Company, LLC was opened in May of 2010. Epic Brewing Company was founded in Salt Lake City and is known for its passion for brewing award-winning, boutique, full strength, real Ales and Lagers. Brewery news Canada, ON: Ottawa welcomes Dominion City Brewing Co.
After years of planning and a massively successful Kickstarter campaign, Dominion City Brewing Co. finally opened its doors to the masses on August 9, and then watched as thirsty customers bought up everything that they had to offer, Ottawa Citizen reported.

“People kept commenting, ‘We’ve been waiting a long time for a brewery to open in the east end,” said Josh McJannett, one of the firm’s three co-founders. “It was an awesome first day. Everybody got a high five on the way in.”

The brewery is capable of producing 700-litre batches of beer. It sold more than 620 litres on August 9 in growlers, large glass jugs capable of transporting just shy of two litres of beer. It also prepared several kegs for four Ottawa area bars that specialize in craft beer offerings. The kegs were dropped off on August 8, and four have already been emptied and replaced.

It’s a good problem to have, admits McJannett and another co-founder Alex Monk, who both believe that if they take pride in their offerings and continue to brew with high quality and local ingredients “that hopefully the crowds will keep coming.”

Malt news UK: Shortfall in malting capacity to be discussed at major summit in October
As Scotland’s farmers this week awaited a weather window to begin the spring barley harvest in earnest, a major summit aimed at strengthening the supply chain, increasing malting capacity in Scotland and securing the provenance of Scotch whisky was announced, The Scotsman reported on August 15.

With exports continuing to grow apace, the Scottish whisky industry has the capacity to increase production and, given the right weather, few doubt that farmers and growers can gear up to supply the malting barley required for this booming sector.

However, the shortfall in malting capacity – the processing facilities which turn the barley into the actual malt – in Scotland currently means that a considerable proportion of Scottish grain has to be taken south – or abroad – for processing.

Fears have been raised in the past that this double trip could put Scottish malting barley at a price disadvantage – and that it might encourage the importation of cheaper foreign malt.

Brewery news Russia & Ukraine: Russia bans imports of Ukrainian beer, wine and spirits
Russia on August 13 banned all imports of Ukrainian alcohol products over alleged inaccuracies in the nutrition information on their labels, saying their calorie counts and alcohol content did not add up.

Russia's Rospotrebnadzor consumer protection agency said that several brands of Ukrainian beer, wine and spirits "failed to meet requirements identified on their labels".

Samples of Obolon beer showed an inaccurate calorie count while spirits sold by the Ukrainian Distribution Company had misrepresented their alcohol content, the federal agency said.

Data from the Federal Customs Service show that Russia imported Ukrainian alcohol products worth $90.3 million (€67.5 million) in 2013.

Rospotrebnadzor said the ban would come into force on August 15.

The move comes just days after Moscow banned most meat and produce imports from the United States and EU nations, in apparent response to tough new Western sanctions on Russia over its alleged support for pro-Kremlin rebels in east Ukraine.

Russia also cited alleged violations of consumer safety regulations in introducing earlier bans on all Ukrainian dairy and chocolate products – including several produced by firms owned by chocolate tycoon Petro Poroshenko, who is now Ukraine's president.
