125th Anniversary Review: Developments in brewing and distilling yeast strains

ABSTRACT
Progress during the past 25 years regarding our knowledge of brewer's yeast strains is considered. This is not a comprehensive review but rather focuses on some specific areas. These areas include a brief description of genomics, proteomics and metabolomics as applied to brewer's yeast strains. This review subsequently considers differences between ale and lager yeast strains, the uptake and metabolism of wort sugars and amino acids, yeast flocculation, yeast management between fermentations and yeast strain genetic stability. The question of process intensification, with particular attention to high-gravity brewing, is also addressed. Fermentation systems and processes are considered with an emphasis on novel procedures for stirred fermentations.

Malt news UK: Shortfall in malting capacity to be discussed at major summit in October
As Scotland’s farmers this week awaited a weather window to begin the spring barley harvest in earnest, a major summit aimed at strengthening the supply chain, increasing malting capacity in Scotland and securing the provenance of Scotch whisky was announced, The Scotsman reported on August 15.

With exports continuing to grow apace, the Scottish whisky industry has the capacity to increase production and, given the right weather, few doubt that farmers and growers can gear up to supply the malting barley required for this booming sector.

However, the shortfall in malting capacity – the processing facilities which turn the barley into the actual malt – in Scotland currently means that a considerable proportion of Scottish grain has to be taken south – or abroad – for processing.

Fears have been raised in the past that this double trip could put Scottish malting barley at a price disadvantage – and that it might encourage the importation of cheaper foreign malt.

This week NFU Scotland urged the Scottish Government to help the situation and reduce this exposure of the Scottish cereal sector to market volatility. Writing to Scotland’s Cabinet Secretary Richard Lochhead, the union said the unique strength of the Scotch whisky sector and the position ...More info on site

Brewery news Russia & Ukraine: Russia bans imports of Ukrainian beer, wine and spirits
Russia on August 13 banned all imports of Ukrainian alcohol products over alleged inaccuracies in the nutrition information on their labels, saying their calorie counts and alcohol content did not add up.

Russia's Rospotrebnadzor consumer protection agency said that several brands of Ukrainian beer, wine and spirits "failed to meet requirements identified on their labels".

Samples of Obolon beer showed an inaccurate calorie count while spirits sold by the Ukrainian Distribution Company had misrepresented their alcohol content, the federal agency said.

Data from the Federal Customs Service show that Russia imported Ukrainian alcohol products worth $90.3 million (€67.5 million) in 2013.

Rospotrebnadzor said the ban would come into force on August 15.

The move comes just days after Moscow banned most meat and produce imports from the United States and EU nations, in apparent response to tough new Western sanctions on Russia over its alleged support for pro-Kremlin rebels in east Ukraine.

Russia also cited alleged violations of consumer safety regulations in introducing earlier bans on all Ukrainian dairy and chocolate products – including several produced by firms owned by chocolate tycoon Petro Poroshenko, who is now Ukraine's president.

Moscow has previously cited safety concerns when banning food products from nations with which it is having diplomatic ...More info on site

Brewery news South Africa: Castle Lager introduces new beer to its portfolio
Castle Lager has introduced a new beer to its portfolio, the 1895 Draught which is targeted at the rapidly premiumising and urbanising South African beer consumer, DestinyMan.com reported on August 15.

The Castle 1895 Draught is a contemporary, authentic alternative in premium beer, based on the original 119-year old recipe by founder Charles Glass and perfected through modern brewing techniques. Under the positioning of ‘Progressive Craftsmanship’, it has been crafted by a new generation of brewmasters to represent ‘the best of then and now’.

With distinctive and aspirational packaging, Castle 1895 Draught is available at leading liquor stores in a 440ml can, which will be followed up in September by a new 440ml dark green bottle. The launch of Castle 1895 Draught will be backed by a discerning marketing campaign in line with its intended target audience, which will be included in-store store sampling, activations, as well as TV, digital and outdoor executions.

“We are very proud and excited about the full marketing mix around Castle 1895 Draught. Our new look Castle 1895 Draught augers well for the future in the Premium liquor category in South African,” said Castle Lager General Manager Alastair Hewitt.

“Castle 1895 Draught is inspired by the legacy of Charles ...More info on site
