Fresh on the heels of a planned expansion at its Glassboro facility, Bonesaw Brewing Company is now shifting gears to growing its footprint, the Courier Post reported on March 2.

Bonesaw co-owners Rich DiVerniero and Dave Doe confirmed they will open a second location — Bonesaw Pilot House — in the shuttered Sears store at Deptford Mall.

The goal, according to DiVerniero, is to have taps flowing at the new brewery by the end of the year.

Plans call for Bonesaw Pilot House to be an 8,000-square-foot operation with a 15-barrel brewhouse, cellar, indoor and outdoor seating, and a private event space, DiVerniero said.

DiVerniero added the new venture will focus on one-off and "pilot" batches, while still offering some of Bonesaw's core products.

Mall management on Tuesday confirmed construction on the new brewery has started.

“We are very excited to bring a best-in-class brewery, Bonesaw Brewing Co., to Deptford Mall," General Manager Frank Lucia said. "Bonesaw Brewery is a highly recognized New Jersey brand that supports our vision for the diversification of our real estate while simultaneously delivering a highly sought-after use to the Deptford community."

According to Doe, expanding to Deptford Mall had been in the works since before the pandemic.

"We started initial conversations with Deptford Mall pre-COVID and had to shift gears to a Glassboro expansion during the pandemic as wholesale production grew," Doe said. "As our expansion is nearing completion, the timing couldn’t be better."

Bonesaw opened in Glassboro in 2018 and recently added 7,000 square feet of new production space, additional cold storage, two loading docks, a dedicated wild/spontaneous beer space and an enclosed climate-controlled barrel cellar.

The Glassboro expansion also included a 53,000-pound capacity grain silo, additional parking and plans for "The Lager Loft," which DiVerniero said will function as overflow taproom space or private event area.

At the Deptford location, patrons will be able to buy packaged goods and merchandise, according to mall management.

Doe said customers would not be able to access the brewery from inside the mall but rather find an entrance on the Sears building's facade "that will not be mistaken."

Bonesaw will join Round1, a family entertainment center, as a tenant in the old Sears building. Round1 opened in 2020, occupying more than 50,000 square feet in the former department store.

"We are thrilled to bring the Bonesaw experience to the Deptford Mall," Doe said. "Bonesaw Pilot House enables us to continue doing what we love: embrace and serve our local community, while broadening craft beer offerings in a new and exciting way."
