Ketchum’s Sawtooth Brewery soon will expand to a two-town operation that includes a full-service restaurant, canned-beer production and increased distribution, Idaho Statesman reported on November 12.

In December 2015 or January 2016, Sawtooth Brewery Public House plans to open at 291 6th St. N. in Ketchum. The brewpub will feature 21 taps including Sawtooth beers, cider, kombucha and cask options. Growler fills, crowlers, bottled and canned beer are part of the plan. Sawtooth’s taproom — across the street at 600 N. Main St. — will close when the public house opens.

Then in spring 2016, Sawtooth will move its beer production to Hailey. A 15-barrel, 8,100-square-foot brewery and taproom will fire up at 110 N. River St.

CEO and head brewer Paul Holle says the new Sawtooth Brewery and Tap Room will have the capacity to quadruple output, although the initial ambition is to double or triple production.

“The building would allow for about 10,000 barrels annually,” he says. “We won’t have that to start, but it’s nice to have room in your building.”

As part of the evolution, Sawtooth will can its beers for the first time — starting with Sunnyside Session Wheat and Freeheeler Rye IPA.

Sawtooth also will enlarge its distribution footprint, reaching into North Idaho. The brewery is exploring other territories, Holle adds.
