Flying Dreams Brewing Co., Worcester, MA's newest craft brewery, is set to open next week with two beer offerings, MassLive reported on November 13.

The brewery will be opening in the spot formerly occupied by Wormtown Brewery inside Peppercorns, the Italian restaurant on Park Avenue.

"When I began brewing beer it was a hobby, but once I peeled away the layers of the process – the craft – it became my passion," said Dave Richardson, Flying Dreams Brewery Co.'s Founder and Brewmaster. "I decided that if I'm going to do this, I'm going to do it right."

Richardson has a master's degree in brewing science and engineering from UC Davis. He was also the co-owner of the Gardner Ale House.

Flying Dreams will be open on Friday from 3 to 10 p.m. and Saturday from noon to 10 p.m.

The two-day event will feature two of its locally crafted ales – Dreaming of Summer and Nightcrawler.

Dreaming of Summer is an American-style Saison, known to many in the brewing community as a Farm House Ale, has historical Belgian origins and is typically brewed in the cooler months of the year. Nightcrawler is an American-style Dark Ale woven from dark malts – and popping with hops, according to a press release.

"My vision was to take traditional brewing techniques and give them a twist – my twist," Richardson said.

Both of the beers are brewed on-site.
