West Seattle Brewing is still finishing its craft brew pub but as co-owner Drew Locke acknowledged, "It's time to get it open."

They plan to open to the public on Thursday, December 19. The opening will be limited to just a few days a week as they ramp up their production. Two big brewing tanks are ready to go and should begin brewing sometime in the next 30 days, Westseattleherald.com reported December 14.

West Seattle Brewing will open with nine beers to begin with and expand to 18 as they ramp up production.

Kevin Fawcett, co-owner said that opening the business has meant a learning curve. Getting everything to work properly matters more in a business than it does to a home brewer. "People are waiting and you've got to be able to pour them a beer."

The duo have done something unique in the way the beer taps are mounted. They have them mounted directly on the glass of the beer storage area with very short lines to the taps. This means the beer poured is far fresher than beer that might sit in a long tap line. It comes out very cold and with a snap and flavor different from that of the other pubs.
