PICK YOUR HOPS BEFORE THE ONION TAKES OVER!

ABSTRACT
Sulfur components in hops have many different faces. Though we love them for bringing us flavors such as rhubarb, passion fruit, grapefruit and black currant flavours, they also surprise us with nasty flavours such as onion-like, garlic-like or just cheesy. By name, these are known as S-methyl-thioisobutyrate, S-methyl-thio-2-methylbutyrate, S-methyl-thioisovalerate, S-methylthio-4-methylpentanoate, and S-methyl-thiohexanoate. One parameter that significantly influences the formation of these compounds is the harvest time of the hops. This article shows how the concentration of the onion/garlic compounds increases during harvest time for varieties as Cascade, Mandarina Bavaria, Polaris, Hallertau Blanc and Hüll Melon. Although many studies have shown that a later harvest brings a more overall flavourful aroma profile for some varieties, e.g. Hallertau Mittelfrueh (and I put here my hypothesis that this includes many varieties that express intense fruitiness such as Citra, Mosaic, Cascade, etc.), the harvest date should be chosen carefully.

Brewery news USA, AZ: Nine Arizona breweries with plans to open or expand in 2018
The movers-and-shakers of Arizona’s craft beer industry have some big plans for 2018 with new locations and expansions, ABC15 Arizona reported on January 8.

Here is a look at the already announced projects:

State 48 Brewery and State 48 Barrel & Lager House

Owner Mario Rana has two big projects this year. He's opening a second brewery in downtown Phoenix and a third brewery, State 48 Barrel & Lager House, in Scottsdale.

The downtown Phoenix brewery, which will also be called State 48 Brewery, will be housed within the historic Welnic Building near Fourth Avenue and Van Buren streets, across from The Van Buren music venue. Rana said permit delays have caused him to push back the opening.

"More than likely May or June," he said of a potential opening.

State 48 Barrel & Lager House will focus on "European style lagers and have a huge barrel aging program," according to an announcement posted to the brewery's Facebook page in December.

It will be part of a new building under construction near Frank Lloyd Wright Boulevard and Hayden Road where the Harley Davidson dealership used to be. It is slated to open late 2018, according to the Facebook post.

Brewery news USA, OH: Hop Tree Brewing up and running in Hudson
Hop Tree Brewing is up and running in Hudson.

The production brewery and brewpub quietly opened its doors a few weeks ago after a lengthy construction and permitting process, the Akron Beacon Journal reported on January 9.

“It has been sort of weight-lifting to get some voices in here and hear some laughter in here and get things moving,” co-founder Greg McClymont said.

As you might expect from a place called Hop Tree, a tree plays a big role in the gray and black decor.

McClymont and co-founder Cory Ross, who both live in Stow, used a mighty oak from nearby S&S Sawmill to create a rough edge bar top. They filled in some of the openings in the wood with hops and barley before the top was sealed.

The tables and window sills also are rough edge wood — not to mention the wooden tap handles being carved from the tree.

Beer flights are served on hand-crafted tree branches.

Hop Tree has 10 beers on draft now. Three are staples and will always be around:

• Golden Genesis, a golden ale.

• Cuyahoga Brown, a brown ale with cherry wood smoked malt.

Brewery news Canada, NB: Niche Brewing launched in Hanwell, New Brunswick
The Atlantic Canada Beer Blog reports that a new brewery has opened in Hanwell, a small community near Fredericton in west-central New Brunswick.

Niche Brewing has been founded by veteran homebrewers Rob Coombs and Shawn Meek, who have launched with 2 barrel brewhouse and a focus on keg sales to local licensees, with no on-site retail store at this time.

The brewery released its first brand, Single Origin (5%), in late December. It’s described as follows:

“Single Origin is a Coffee Sweet Stout, a dark beer brewed with lactose powder to give it a lingering sweetness to balance the roast and chocolate character. After primary fermentation, we added freshly-roasted coffee from Jonnie Java Roasters in downtown Fredericton, to really boost the coffee aroma and flavour in the beer. Those of you who are a little wary around Stouts, don’t be! This isn’t a strong beer, and is something we hope everyone will enjoy.”

Mines of Wallonia (3.6% abv) followed last week, with the following brief notes:

“A Grisette, hopped and dry hopped generously with Hallertau Blanc and Nelson Sauvin. Fermented with French Saison yeast to make it spicy and dry.”

Brewery news USA, ME: Fogtown Brewing Co launched by two college classmates in Ellsworth
Ian Hayse and Jon Stein had a simple goal when they first started brewing: they “wanted to be able to drink nice beer.”

College classmates at Colorado College in Colorado Springs, the friends learned how to home brew in small batches and kept at it in the years after college. That work and accumulated experience has now culminated in the opening of Fogtown Brewing Co. The microbrewery is located below Atlantic Art Glass at 25 Pine St., Ellsworth, the Ellsworth American reported on January 9.

The business partners worked throughout 2017 on transforming the basement space into a combination brewery (located in the back of the space) and a tasting room. They opened their doors to customers in December. Their winter hours are from 4 to 10:30 p.m. Thursday through Saturday.

Six different beers have been on tap at Fogtown in its first few weeks: Farmhouse Saison, Red Rye Ale, Vienna Pilsner, Munich Lager, Session Maine Coast India Pale Ale and American Stout. Brewery news USA, OK: Muskogee Brewing Company to open in Muskogee in a couple of months
In a couple months, Muskogee will have its very first brewery inside Station 1, a fire department with decades of history, KTUL reported on January 8.

It wasn’t Bill Parris’ original idea until he and his business partner found themselves at Station 1.

“The city was about to demolish it,” he said. “So we got involved and saved the building and made it our home for the brewery.”

Muskogee Brewing Company is now two years in the making. The building needed a lot of work.

“It was in pretty rough shape,” Parris said.

They came across some neat finds along the way.

“This building was built in 1904 so this is the first brick firehouse,” Parris said. “Underneath the concrete floor we found the original brick floor. So all of the brick is all Muskogee brick. If we could keep it in the building then we left it in the building.”

That original vibe is exactly what Dustin Russell, owner of Bent Nail Woodshop is trying to maintain while building the woodwork inside.

Brewery news USA, ID: Slanted Rock Brewing Company to close due to lease expiry on January 27
Slanted Rock Brewing Company will close Jan. 27 after five years in Meridian, the Meridian Press reported on January 8.

Managing partner Bob Lonseth said the lease is up on the brewery and they're looking at options but aren't sure what to do next. He added they would like to stay in Meridian if the right opportunity comes along.

“We're looking for the right place, right time and right price,” Lonseth said.

The brewery is at 2374 E. Cinema Drive, Suite 100 near Majestic Cinemas. Slanted Rock was founded by Bob and Alesa Lonseth. The brewery opened on New Year's Eve of 2012.

Slanted Rock beer is sold in-house and at local restaurants.

The brewery will have $2 beers through the rest of the month, Bob Lonseth said. Slanted Rock is open 4-9 p.m. Thursday and Friday and 12-9 p.m. Saturday.

Barley news Russia: Russia shipping barley at record pace this season
Russia is exporting barley at a record pace in the current 2017/18 season, UkrAgroConsult reported on January 11.

In November 2017, the nation shipped 489.4 thousand tonnes of barley, or 87% more than in November 2016.

Russia supplied over 3 mln tonnes of barley to foreign markets during the first five months of the season, or 78% more than at the same time last marketing year (1.69 mln tonnes). So, Russian barley exports hit a record high for this period.

According to UkrAgroConsult’s estimates, Russian barley exports may exceed 5 mln tonnes in the 2017/18 season.


Brewery news India: United Breweries shares up 6% following beer price hike
United Breweries shares rallied nearly 6 percent intraday to hit a fresh record high of Rs 1,199 on Thursday, January 11 following beer price hike, Moneycontrol.com reported.

CNBC-TV18 reports quoting Cogencis that the company has hiked its Kingfisher beer price by 7-8 percent in Mumbai.

Meanwhile, company's gross revenues in July-September quarter grew by 24 percent and revenue net of duties increased 23 percent, driven by price increases, positive state and brand mix, as well as beer exports.

The company had commenced direct export of beer from April 2017.

During the quarter, United Breweries's volume growth at 11 percent was ahead of industry growth of 5 percent while operating growth was at 72 percent YoY.

At 15:16 hours IST on January 11, the stock price was quoting at Rs 1,188.00, up Rs 56.40, or 4.98 percent on the BSE.
