While Milton was heartbroken over the news of Brew Angels Brew Pub closing last year, a new brewery and restaurant called The Prost Office Brewery is gearing up to welcome visitors in its place in the new few weeks, the Pensacola News Journal reported on March 14.

Brothers and U.S. Air Force veterans Sam Howell and Brandon Howell came up with The Prost Office as a fun way to pay tribute to the building’s history as the old Milton Post Office at 6821 Caroline St. Brew Angels was Milton’s first brewery and was founded by brewer Sean McCool and his father, Greg McCool, which they sold to Blackwater Entertainment in 2022.

While its new owners are playing into the old-school feel of the building, with a jukebox, arcade games and pool tables, they are bringing a modern and renovated look to it.

The "Prost Office," a pun off the historic building's former identity as a post office, is based around the German expression "Prost" commonly used as a toast, like the English expression "Cheers." In Germany and other German-speaking countries, saying "Prost" is a traditional way to raise a glass and wish good health or well-being before taking a drink, The Prost Office website explains. The Howells plan to create that same sense of comradery in their brewery.

"At The Prost Office Brewery, we believe in crafting more than just beer; we create experiences that bring people together. Nestled in the heart of Milton, Florida, our brewery is a place where people can gather for great beers, delicious food, and a good time," The Prost Office website states.

The handcrafted Prost Office beer will also be new to Milton. The brothers are working on brewing their own signature batches of beers and ciders, including a stout, IPA, porter and lager, that will be available in about a month, Sam Howell said.

In the meantime, they will be filling their 24 beer taps with guest brews, including regional brews from Louisiana’s Abita Brewing Company and Georgia’s SweetWater Brewing Company, and international beers like Ireland’s Guinness.

To pair with the beverages, The Prost Office will open with a limited menu of simple pub fare, including a pulled pork sandwich with house made slaw, poutine, jumbo pretzels with beer cheese, cheese curds and chicken wings. To tie in with the post office theme, they will also offer a “First Class” burger made with certified Angus beef coming in at almost a half-pound and with customizable toppings.

While these pub foods will serve as the menu staples, they are looking to the Milton community to guide them on what other food items they would like to see.

“Our goal is to get the customers and the community involved in building our menu,” Sam Howell told the News Journal Wednesday.

Opening the brewery was a seemingly perfect fit for the brothers, who dreamed of opening a cidery together after both retiring from the military. When Sam Howell saw that Brew Angels was up for sale, the timing felt right to continue to build the brewery’s legacy in downtown Milton.

In addition to the indoor taproom, they will have outdoor seating in the front and back yards of the building.
