Months of work at Ketchum’s new Sawtooth Brewery come down to a simple plan – the company is just going to open its doors and sell beer, head brewer Paul Holle was quoted as saying by Magicvalley.com on November, 9.

Holle said he aims to get the brewery’s five regular beers all on tap this month. By the grand opening, they may be joined by a seasonal, Out Cold Winter Ale. Other previously advertised features include “beer fusion ice creams,” stout floats and a specialty coffee roast from Hailey Coffee Co.

The taproom has been a labor of love for the past couple of weeks. Two weekends ago, about 12 volunteers — paid in pizza and beer — helped paint and prep the space.

The brewery will have a tap for cask-condition beer. That’s rare in south-central Idaho.

Production is ramping up to match construction. Holle said installing two more fermenters in about a week will nudge his output to 40 gallons per week. By January, he aims to reach 60 gallons per week.

“It’s coming along,” he said.
