Laughing Monk Brewing is on track to open in the first quarter of 2016, likely mid-January. In August, Eater reported that the new pub and production brewery in the Bayview would be open in November, but a delay on the installation of a glycol system (a temperature-control mechanism for tanks) has pushed that, SFGate reported on November 6.

Laughing Monk is a collaboration between founder Andrew Casteel and head brewer Jeff Moakler, formerly a brewer for BJ’s in Arizona. Casteel describes the beer style as “a Belgium-California crossover.”

The name Laughing Monk is a nod to the brewery’s “traditional irreverence,” Casteel says. Their styles are indebted to the longstanding monastic brewing traditions in Europe, but their interpretation of the monk is “not that serious,” says Casteel. “He can break the rules a bit.”

Expect Belgian styles with a new world twist. A tea-infused saison, a blonde ale, a double saison, a pale ale and a coffee stout will all be in the lineup.
