Bald Man Brewing Co. is planning an 11,357-square-foot craft brewery and taproom at 2020 Silver Bell Road in Eagan, Minneapolis / St. Paul Business Journal reported on October 28.

The beer startup is the work of software developer Tristan Kusnierek and Daniel Jacobs, CEO of Minneapolis-based sunglasses company VedaloHD Performance Eyewear.

Jacobs will handle the business side, while Kusnierek will be head brewer.

Bald Man Brewing will have a 170-seat taproom with a stage for live music, a 60-seat patio and a 60-seat VIP and special events room. Jacobs said that customers who purchase a VIP membership will get a key card allowing them access through a special entrance to the brewery.

The specialty brews will include porters and stouts and standard American craft styles like India Pale Ales and blond beers. Jacobs said Bald Man Brewing will have nine to 10 taps.

The company is in the process of signing an architect to the project. Bald Man Brewing has not yet selected a builder.

If all goes according to plan, the brewery will open next summer.

Bald Man Brewing is not the only high-ticket brewing operation to locate in the south metro area.

A $1 million brewpub called Nutmeg is in the works for Burnsville.
