Work to transform the Old Stone Barracks in Plattsburgh into the Valcour Brewing Company moved from deconstruction to reconstruction this week. The owners say they got their hands on a building permit on May 29, so changes are sure to be fast over the next few months, My Champlain Valley FOX44 & ABC22 reported on June 3.

Valcour Brewing Company’s co-owner Terry Schmaltz says that not everything has gone as planned, and the timeline has been pushed back.

“We were hoping July but you know, everything takes time so, some things you can control, some things you can't,” said Schmaltz.

One of the things he can't control, he says, is licensing. The last item on his list is his state alcohol license.

But Schmaltz says, he needs to send in pictures of the completed brewery before he can get it.
“Then the lag time between having that finished, taking the photographs, getting it sent into the state, how long will that take? I can't control that,” he said.

So he's shooting for a mid-September opening. Valcour Brewing will join just 2 other breweries in Clinton County, according to the New York State Department of Agriculture & Markets.

“We immediately knew this was the spot,” said head brewer Brian Combs. “You could really feel the historical value in this building so not only are we a craft brewery; we're also historians at the same time."

“There's a lot of money that's being pumped into this project. I have a lot of responsibility. I've brewed beers on a small-scale,” said Combs.
