South Fort Collins' newest brewery will open on August 20 with a mostly Bavarian starting lineup of Helles, Dunkel, Weiss and Pilsner, Coloradoan reported on August 14.

"That's our passion, German styles," said co-owner and brewer Kirk Lombardi. Together with his brother, Eric, he is ready to open a "new-age, European-style brewery" in Fort Collins.

The aptly named Zwei Brüder Brewing, (German for "two brothers") at 4612 S. Mason St. Unit 120, is the family pet project after 25 and 17 years respectively with C.B. & Potts brewery. Kirk Lombardi was the chain's regional brewmaster for Colorado and Wyoming, while Eric Lombardi was the Fort Collins brewer.

The German recipes they've brought with them to Zwei are versions of their previous Great American Beer Festival medal winners, Kirk Lombardi said.

Staying true to style, the Lombardis use German malt, yeast and hops in their brews and, for the most part, follow German beer purity law: reinheitsgebot.

But for the new-age portion of their program, they will also brew IPAs, such as ZweIPA (almost a double), as well as American reds and even Belgians. For Oktoberfest, which will mark the brewery's grand opening, they will release a traditional Märzen.

Lombardi said they picked the location, just south of Harmony Road, because of its proximity to the MAX line and its current lack of breweries. Earlier this year, 1933 Brewing opened slightly farther north on Mason Street, and at least one other brewery is expected to open later this year in the area. There are currently 15 breweries in Fort Collins.

"It's good to have that destination," Lombardi said. "People can roll down to this part of town and hit two or three breweries."

Starting next week, Zwei Brüder will open from 1 to 9 p.m. daily.
