Big Head Brewing Co. opened in September and will hold a grand opening celebration in mid-November in Wauwatosa, Milwaukee suburb, Business Journal reports. It is located in 5,000 square feet of leased space at 6204 W. State St. and has an initial annual brewing capacity of between 750 and 1,000 barrels of beer.

“I’ve always gotten the impression that Wauwatosa is a very local first community,” said Andrew Dillard, one of the owners. “It has an emphasis on getting new businesses going and supporting those local businesses.”

Big Head’s specialty will be a diabetic-friendly line of beers with low carbs that still taste like craft brews, Dillard said. Dillard said he also wants to concoct gluten-free beer.

Dillard, a homebrewer for seven years, struggled to find financing through banks and investors to start a brewery. But when local media picked up his story, he was approached by two potential partners who have joined the business, he said.

Eventually Dillard plans to install bottling and canning lines.
