THE YEAST TAKES IT ALL!

ABSTRACT
Beta-myrcene is a potent but also very volatile hop aroma compound that can contribute to hop flavours with "herbaceous", "resinous", "green", "balsamic", "fresh hops". Too high concentrations of myrcene sometimes are considered unpleasant in regards to flavour. A German team worked with the hop variety Mosaic with different yeast strains to see where the myrcene actually ends up. They confirmed the release of hop aroma compounds during fermentation in the gas phase with increasing amounts at higher fermentation temperatures, and were also able to show that the yeast basically absorbs all of the myrcene with no possibilities to redissolving it in beer again. Whereas other hop aroma compounds such as linalool are not influenced significantly by the yeast.

Brewery news USA: Boston Beer reports 5.9% drop in Q4 net revenue
The Boston Beer Company reported a fourth-quarter 5.9% drop in net revenue to $206.3 million, down $13.1 million from the same period last year, according to a company release.

Shipments declined 7.7% during the period to about 898,000 barrels, compared to the fourth quarter of 2016.

The company reported $30.5 million in net income for the fourth quarter, or $2.57 per diluted share, an uptick of $8.4 million, or 82 cents per diluted share, from the year-ago period. The bump was mainly due to a one-time benefit of $1.72 per diluted share from the corporate tax cut enacted in late December, plus a gross margin increase, although the company said that was partially offset by lower shipments and more media and digital advertising.

Boston Beer projects full-year 2018 earnings per diluted share to be between $6.30 and $7.30, reflecting the uncertain volume outlook, and added that actual numbers could vary significantly from the current projection.

Boston Beer continues to struggle in a market that's crowded and competitive, but it isn't for lack of trying. Brewery news Canada, ON: Jackass Brewing to open its doors in Cambridge on February 23
Ontario Beverage Network reports that a new brewery and taproom will be opening this week in Cambridge.

Jackass Brewing has been founded by brothers Wayne and Keith Saunders, and is located at Unit 36 in 100 Sheldon Drive, an industrial plaza near the intersection of Highway 401 and Regional Road 24.

According to the OBN article, Jackass will be opening with several beers available including “an Irish red ale, two IPAs, and more to be announced,” with all of them available by the glass and for growler fills.

Jackass Brewing will open on Friday February 23rd at 4:00 PM.


Brewery news USA, PA: Goose Island finally announces launch date for its Philadelphia brewery
It’s been more than a year since Chicago-based brewery Goose Island told everyone it would be opening a new location in Philadelphia, and after much teasing, there's finally a launch date - and it's soon, The Philly Voice reported on February 22.

Starting Friday, March 2, Philadelphians can find both classic and new Goose Island beers at the brewhouse at 1002 Canal Street, not far from Fishtown's Fillmore and Philadelphia Distilling.

“Chicago and Philadelphia. Two cities with big personalities. Big pride. Big history. Big food and big drink,” the brewery said in a press release.

“We’re not shying away from our size, and with so much in common, we couldn’t think of a city outside of our hometown that better represents the way we think about beer: BIG. We’re thrilled to bring a little 312 to the 215.”

The 28 draft lines and two cask engines will include some beers made exclusively for Philadelphia, as well as standards like Goose IPA and Sofie. Tim Caron will be the in-house brewer, coming from New Jersey’s Tuckahoe Brewing.

Brewery news Canada, AB: Two Sergeants Brewing moving to Edmonton
Two Sergeants Brewing Inc. is marching into Edmonton, and it’s bringing its kegs with them, the Edmonton Journal reported on February 22.

The Fort Saskatchewan brewery first opened its doors back in 2015, but is unable to expand in its current space northeast of Edmonton, and has struggled with attracting more customers to its taproom.

Although the brewing business received a lot of support and developed some die-hard fans, Two Sergeants Brewing Inc. owner Kevin Moore told Postmedia it can no longer stay in the Fort and instead will be moving to the big city.

“It wasn’t an easy decision by any stretch of the imagination,” he said.

“I guess the biggest reason for us moving is we need to grow. First and foremost, we are a brewery and a production brewery. To keep up with demand, we need more tanks and there’s just no room in this footprint.”

Moore said the plan is to move into the popular Whyte Avenue area where other craft brewers like himself are locating.

The new Edmonton location will feature more space for more tanks as well as a spot to open up a full kitchen, something that was impossible in Fort Saskatchewan, he added.

Brewery news USA, IL: The Old Herald Brewing Company to be launched by husband-and-wife team in Collinsville
The brewing and bottling spirit of Collinsville could be on the verge of a renaissance, thanks to Derik Reiser and his wife, Whitney, the Belleville News-Democrat reported on February 22.

On a cold and cloudy Wednesday morning, the metro-east couple beamed with pride as they spoke about plans to open a microbrewery and craft distillery under the name of the Old Herald Brewing Company in downtown Collinsville.

Located at 115 E. Clay St., the former home of the Collinsville Herald newspaper will receive a $2.8 million makeover this spring. Reiser said $650,000 will come from tax increment financing.

The city approved the redevelopment agreement Feb. 12.


Brewery news Canada, ON: Folly Brewpub changes ownership
Toronto’s Folly Brewpub has announced that co-founders Luís Martins and Michelle Genttner have sold the College Street brewery, bar and restaurant, and are stepping away from the business effective February 16th, Canadian Beer News reported.

Folly has been purchased by the ownership group behind Toronto bars Roxy on King and Watson’s, who have brought in hospitality industry veteran Fritz Wahl to take over day-to-day operations from Genttner, while chef Dan Martin will be replacing Martins in the kitchen. Brewer John Jenkinson – who recently replaced the original brewing team of Christina Coady and Chris Conway – will remain in charge of the Folly brewing program.

Folly was opened by Martins and Genttner seven years ago as Habits Gastropub. The on-site brewery was added in 2014, and the name change to Folly took effect a year later.

In a statement, Wahl says that “the entire motivation is to continue running and expanding Folly with the quality and warmth that customers expect and deserve, whether they are at Folly or one of the fine beer-focused establishments serving Folly beers.”

Kirin Holdings Co Ltd aims to expand in health food and beverages, its chief executive said, as the Japanese brewery adopts a different strategy from rivals which have spent big on breweries abroad to offset a drop in domestic beer consumption, Reuters reported on February 22.

Japan’s second-biggest beer maker earns almost 40 percent of profit from beer and other alcoholic drinks sold at home. But with industry data showing a 13th consecutive fall in domestic beer shipments last year, Kirin and peers like Asahi Group Holdings Ltd have been seeking growth elsewhere.

“I wish we could just focus on the beer business. That’s something we fully understand,” Yoshinori Isozaki said in an interview. “But we cannot achieve sustainable growth from that business alone.”

The comments reflect challenges in the beer industry both in Japan and globally, as aging populations and changing consumer tastes in increasingly health-conscious developed economies limit growth prospects for makers of alcoholic drinks.

In response, Asahi - which has long derived a sizeable chunk of revenue from Japan’s biggest-selling “Super Dry” beer - has spent $11 billion over the past two years to buy beer brands across Europe from Anheuser-Busch InBev NV.

Brewery news China: BrewDog looking to open brewery in China
Scottish craft brewer BrewDog is looking to open a brewery in China to capitalize on the fast-growing market for premium beer, Ecns.cn reporte don February 22.

China is the company's second-largest international market and the brewer said with the help of its distributor, it has made BrewDog one of the well-known and widely drunk craft beers in China.

In 2016, BrewDog's export to China grew by 117 percent.

The brewery is looking to raise at least 10 million pounds ($13.9m) in its latest equity crowdfunding scheme, with a stretch goal of up to 50 million pounds ($69.9m) to further its global expansion.

This also includes the construction of a brewery in Australia.

"We feel we can only really take advantage of the Asian opportunity by having a brewery in Asia and we are now actively looking at locations and opportunities in the regions," Brewdog told The Scotsman newspaper.

The craft beer brand also revealed plans to build the world's first craft beer hotel as part of its expansion plans at its headquarters in Aberdeenshire in Scotland.

China is a key market for international beer brands and analysts believe the demand for craft beer will continue to increase as disposable incomes rise.

Barley news UK: Spring barley growers encouraged to increase their seed rates if drilling is delayed
UK’s spring barley growers are being encouraged to increase their seed rates if drilling is delayed and seed-beds are not ideal after very wet winter weather, the FarmersWeekly reported on February 21.

Drilling is likely to be pushed back this spring due to cold and wet soil, and even in early drilling areas such as the South Downs spring drilling could be two weeks away.

Mike Thornton, agronomist with advisory group ProCam, says growers should not rush to drill in poor conditions and they need to hold fire until soils dry and warm up and then raise seed rates.

“Growers should be thinking of pushing seed rates up as they can expect greater losses due to poor soil conditions,” he tells Farmers Weekly.

For early drilling into good seed-beds, growers might look at a seed rate of 300-325 seeds/sq m, but if delayed into late March or early April the rate might be pushed up to 350-400 seeds/sq m, he says.

In addition, growers need to hold back from drilling too early as good seed-beds will give better seed to soil contact and so good conditions for residual blackgrass herbicides to work.
