FLAVOUR CHANGES WITH ENRICHED PELLETS

ABSTRACT
A lot of brewers are interested in enriched pellets in order to reduce the amount of vegetative material that goes into the beer. The Barth-Haas team brewed beer with Cascade hops in the forms of T90 pellets, purified T90 pellets, T70 pellets and T45 pellets. They produced dry-hopped and late-hopped ale beers and found that only in dry-hopped beers, thiols as 4MMP and 3MHA are present in detectable sensory levels. Interestingly, there was no correlation between the amount of terpenols in beer and the intensity of citrus or fruity flavour. The sum of esters correlated well with the fruity category, and the Barth-Haas team also found a good correlation of woody characteristics with analytical results.

Brewery news USA: Light beer sales continue to shrink
The last few years have not been kind to macro light beer in the U.S. Although multinational beer conglomerates such as AB InBev continue to push their brews into new markets on an international level, the “homefront” of formerly U.S.-owned companies such as Anheuser Busch has presented a much tougher challenge. Facing saturation and an overall shrinking beer market, not to mention the increasing market share of craft beer, “super premium” brands such as Bud Light, Miller Lite and Coors Light have all struggled at times, the Paste Magazine reported on October 31.

New numbers about those struggles, as well as some first-hand quotes, came on October 31 via an interesting Chicago Tribune story, which interviews people in the distribution business about some of the declining shipments.

All in all, light beer products from AB InBev and MillerCoors have declined by roughly 26 million total barrels of beer since the light beer market peaked around 2008, according to Beer Marketer’s Insights, an industry trade publication. Hops news USA: The Brewers Association agrees to fund USDA’s public hop breeding program
The Brewers Association—the not-for-profit trade association dedicated to small and independent American brewers—announced on October 30 an agreement with the United States Department of Agriculture-Agricultural Research Service (USDA-ARS) to fund public hop breeding for the purpose of developing and releasing disease resistant aroma hop cultivars into the public domain, in support of hop growing efforts throughout the U.S. The trust agreement between the Brewers Association and USDA-ARS provides funding for a program located in Washington and Oregon to leverage significant existing academic and operational infrastructure. “Public hop breeding creates benefits for a broad range of groups within the hop and brewing industries,” said Chris Swersey, supply chain specialist for the Brewers Association. “Research to develop and release hop cultivars with no intellectual property protection ensures that all growers have access to high quality, disease-resistant cultivars they need to sustain production at levels required by brewers. In the long-term, this important program will fuel efforts of existing legacy growers as well as nascent hop growing industries throughout the U.S. The program will also fulfill an essential stewardship strategy by providing foundational germplasm for public and private breeding programs. The Mass Bay Brewing Company, brewers of Harpoon and UFO beers, announced on October 30 its acquisition of Clown Shoes Brewing. Clown Shoes, launched in 2009 in Ipswich, Massachusetts, is a nationally distributed brand that produces a wide selection of year-round and limited release beers. Clown Shoes has experienced significant success with its Space Cake Double IPA and Clementine White Ale, among other innovative beers, The Full Pint reported.

“The Clown Shoes team shares our passion for brewing excellent beer and their irreverent, boldly-flavored takes on classics have earned them a loyal following,” said Dan Kenary, Mass Bay Brewing Company CEO and Co-Founder. “We see tremendous potential for growth both regionally and nationally and are excited to work with Gregg and his team to take Clown Shoes even further.”

People in Saskatchewan are thirsty for a new kind of beer.

Saskatchewan’s craft beer sector has been growing steadily in recent years and one brewer says the future continues to looks bright, Grainews reported on October 27.

“We just view it as nothing but untapped potential, especially for Saskatchewan,” says Mark Heise, president and CEO of Regina’s Rebellion Brewery, one of the biggest producers of craft beer in Saskatchewan.

The growth trend for the craft beer sector has proved to be true not only in Saskatchewan but across the country. In 2016, the number of Canadian brewing facilities had increased to an all-time high of 775, up 20.3 per cent from 2015.

While the majority of these brewing facilities are in Ontario and Quebec, Saskatchewan is within the top three provinces for the number of brewing facilities per capita (at a rate of 4.6 per 100,000 drinking age adults), with approximately 17 breweries in our province as of earlier this year.

And this growth is good news for Saskatchewan malting barley growers, as craft beer production requires approximately three to four times as much malt as mainstream beer production, says Peter Watts, managing director of the Canadian Malting Barley Technical Centre (CMBTC).

Brewery news USA: Boston Beer bets on cans to increase sales with millennials
Boston Beer has placed a bet that cans can increase its sales with millennials, StockNews Times reported on October 28.

The brewery, based in New England, makes Samuel Adams lager as well as Angry Orchard hard cider, will roll out several new beers over the upcoming year, including SAM ’76 and Sam Adams New England IPA.

Its hopes are very high for is SAM ’76 beer, which will be in a can so it appeals to the younger demographics. However, the fascination by the industry with cans over bottles is nothing new. Winemakers are even shifting to metal from glass.

Consumer research business Nielsen says that cans often are more portable than a glass container, which are banned quite often by many venues such as concert grounds or beaches.

The cans are also much lighter than the bottles are and seen as more environmentally sustainable.

Boston Beer’s Jim Koch, the company chairman, said that craft beer in cans is growing much faster than is craft in bottles.

The can is quite well accepted amongst drinkers of craft beer and is a beer that has characteristics of easy drinking that can be associated with a can, said Koch during his earnings call on Thursday with analysts.

Hops news USA: Climate change affecting hop and beer industries in the US
There’s trouble brewing for beer makers around the United States, CBSMiami reported on October 31.

Climate change and intense droughts are making it difficult for breweries to get the crucial ingredients they need to make their customer’s favorite beer.

At one of Los Angeles’ fastest growing breweries, keeping up with demand is a struggle.

“It’s incredibly, incredibly stressful,” said Co-Owner of Frogtown Brewery Mike Voss.

Voss says much of that stress comes from having to hunt for critical ingredients like hops.

Most of the country’s hops are grown in Washington, Oregon and Idaho – states that have suffered increasingly severe droughts in recent years.

That’s crippled crops and is leading to shortages.

With the mega beer producers gobbling up most of the supply, smaller craft breweries are left scrambling.

“Every month we try to figure out where we can get what we need to make a particular beer,” said Voss.

And if they don’t find it, he says, “You don’t make the beer.”

Producers are now trying to grow hops in other states but it is a slow process.

“Changes in temperature, changes in how plants grow,” said NASA JPL Climate Scientist Dr. Joshua Fisher.

Fisher says climate change is making droughts more intense.

Constellation Brands, Inc., a leading beverage alcohol company, announced on October 31 that it priced the public offering of $2.0 billion aggregate principal amount of Senior Notes, consisting of (i) $600.0 million of 2.000% Senior Notes due 2019 (the “2019 notes”) for a public offering price of 99.860% of the principal amount of the 2019 notes; (ii) $700.0 million of 2.250% Senior Notes due 2020 (the “2020 notes”) for a public offering price of 99.804% of the principal amount of the 2020 notes; and (iii) $700.0 million of 2.650% Senior Notes due 2022 (the “2022 notes”) for a public offering price of 99.582% of the principal amount of the 2022 notes (collectively, the “notes”).

The notes will be senior obligations that rank equally with all of Constellation’s other senior unsecured indebtedness, and will be guaranteed by the subsidiaries of Constellation that are guarantors under Constellation’s senior credit facility.

Closing of the offering is expected to occur on November 7, 2017. Constellation intends to use the net proceeds from the offering to repay amounts outstanding under its European Term A loan facility.

Brewery news Canada, BC: BC government to draft new rules allowing farm-based breweries and distilleries to open and operate legally
British Columbia’s government will draft new rules for the Agricultural Land reserve that should allow breweries and distilleries to open and operate legally, according to Agriculture Minister Lana Popham, the Vancouver Sun reported on October 30.

“We have been seriously looking at that legislation and considering levelling that playing field with wineries,” she said. “I’m a big supporter of agritourism, agri has to come first. Anything that increases production to me is exciting.”

The rules as written allow wineries to operate on ALR land as long as the farm or vineyard is more than two hectares (five acres) and at least 50 per cent of the farm product used to make wine comes from the farm or another farm in B.C. under a minimum three-year contract.

In practice, that means nearly all of the grapes needed for wine production can come from other farms and vineyards.

Changes to the Agricultural Land Commission Act introduced by the previous Liberal government largely failed to attract brewers by requiring at least 50 per cent of the raw material used for brewing to be grown on the farm where the brewery is located.

Brewery news USA, MT: Glacier Brewing Company in Polson up for sale
At a time when the rise of craft breweries in Montana can seem as unstoppable as a rising tide, one local brewery has been put up for sale, the Daily Inter Lake reported on October 28.

Glacier Brewing Company in Polson was listed at the beginning of the summer for $875,000 and was recently reduced to $750,000. The price includes the property, $250,000 worth of equipment, recipes, distribution deals and even head brewer Dave Ayers.

“My little twist on it is I want to be included in the sale,” said Ayers, who is also the president and founder. “We have packaged it as a true turnkey. Everything goes with the sale, including me.”

Ayers started the brewery back in 2002 in the same building off of Main Street in Polson well before many newer craft breweries came to the area. He developed all the recipes, beer names and character the place embodies. He did it with the help of a small network of investors who are now ready to move on.

Brewery news USA, CA: HenHouse Brewing to open new brewhouse in Petaluma
HenHouse Brewing of Santa Rosa has announced it will open a new brewhouse in Petaluma that will specialize in barrel-aged beer, the Santa Rosa Press Democrat reported on October 27.

The expansion represents a return to the company’s roots as it first started out at the now-new location at 1333 N. McDowell Ave., formerly the home of the shuttered Petaluma Hills Brewing. HenHouse used Petaluma Hills equipment when it started selling its beers in 2012.

The HenHouse Palace of Barrels will focus on “wood-aged and fermentation driven beers” that it doesn’t produce at its Santa Rosa plant. The Bellevue Avenue brewery is being upgraded for installation of a canning line and a centrifuge, which produces better clarity in the beerkmaking process.

The new brewery will allow the company to hire more than 15 people and expand its capacity to 12,000 barrels annually. It also will include a tasting room.


Brewery news USA, OH: Sandy Springs Brewing Co. coming to Minerva
Andy and Amanda Conrad have been home brewing beer for 10 years and now are launching Sandy Springs Brewing Co. in their hometown of Minerva, the Canton Repository reported on October 29.

It was Minerva’s first gasoline station 100 years ago.

Now, the building on the corner of Market Street and Lincoln Highway will join the growing list of regional craft breweries as home to Sandy Springs Brewing Co.

Originally, Andy and Amanda Conrad considered opening the brewing in a barn on their farm northeast of Minerva. But a few days after inspectors declared the building fit for remodeling, lightening struck. Literally. The bolt set the barn ablaze, destroying the building.

It didn’t destroy the dream.

While the barn didn’t become a brewery, it’s still part of the brewery. Some of the timbers and siding have been used to decorate the Sandy Springs Brewing Co. tasting room, to build the bar and to make some of the furnishings. One beam was cut and drilled to make holders for tasting flights.

The Conrads have been home brewing for 10 years and have worked since 2011 on plans for opening a brewery in their hometown.

As reported by Centretown News, Flora Hall Brewing has been founded by Dave Longbottom in an historic building at 37 Flora Street near Bank, and features a brewery, taproom, restaurant, and retail store.

Flora Hall opened last Friday, October 27th, and is pouring several house brewed beers – English Ordinary Bitter, American Oat Pale Ale, West Coast IPA, Farmhouse Saison, and North East IPA – as well as guest beers and ciders from other Ontario craft producers.


Brewery news USA, CA: Ten Mile Brewing Co launched by father and son in Signal Hill
The father-and-son founders of Ten Mile Brewing Co. built their business from their several years’ of experience in homebrewing and literal steel, the Long Beach Press Telegram reported on October 27.

Dan and Jesse Sundstrom’s Signal Hill brewery has been open for about six weeks. The Sundstroms got the keys to the place in February of last year and, thanks to a change to Signal Hill’s zoning rules, have since transformed a formey empty space into a working brewery.

And the Sundstroms did much of the physical labor themselves, they said. They fashioned the taproom’s bar and tables from steel beams and other materials. The furnishings, combined with the place’s sandblasted gray walls and visible brewing apparatus behind the bar, give the interior of Ten Mile Brewing a worked-in, industrial feel.

“It’s been the perfect melding of science and art,” Dan Sundstrom, the elder member of the father-son ownership team said. “It’s great having someone appreciate your product.”

Dan Sundstrom previously worked as a facilities manager Bethany Church Long Beach for 15 years, and was a professional photographer for 22 years.

Brewery news Canada, NS: Backstage Brewing already operating in soft launch mode in Stellarton
The Atlantic Canada Beer Blog reports that a brewery announced earlier this year is now open in Stellarton, a small town near New Glasgow in Nova Scotia.

Backstage Brewing has been opened by A.J. Leadbetter, his wife Beth, and her parents, Lynn and Wayne MacDonald in a building at 37 Bridge Ave. that housed a paint shop owned by Leadbetter’s family until it was damaged by fire in 2015.

Now repaired and refurbished, the facility includes a brewery as well as a soon-to-open taproom that will pour several Backstage brands and a selection of beers from other Nova Scotia breweries, as well as local wine and cider.

Backstage is currently in soft launch mode, and started opening for cash-only growler sales last Wednesday, October 25, offering fills of Daydreamer Pale Ale (4.8% abv, 21 IBU) and Headliner IPA (6.3% abv, 60 IBU).


Brewery news Canada, ON: Barnstormer Brewing sets aside plans to open second location in Midland
Simcoe.com reports that Barnstormer Brewing has set aside plans to open a second location in Midland based on the results of a preliminary environmental study.

According to the article, low levels of industrial contamination were found in the municipal parking lot where the new facility was planned to be located.

While the levels are below provincial guidelines and do not pose a health risk, it is still enough of a concern that further environmental studies need to take place before any development can proceed. As a result, both Barnstormer and the Town of Midland have agreed to a withdrawal of the land sale originally announced in February.

Barnstormer founder Dustin Norlund notes that “there is still a very strong desire to expand operations into the Town of Midland, and despite this setback, we will continue to explore other options in the community.”

Guinness Nigeria Plc has secured additional N39.7 billion new equity funds from its existing shareholders as shareholders picked up the entire rights offered by the brewer, The Nation Newspaper reported on October 30.

Guinness Nigeria had offered 684.49 million ordinary shares of 50 kobo each at N58 per share to existing shareholders on the basis of five new shares for every 11 shares held as at the close of business on March 15, 2017. Application list for the rights issue opened on July 24, 2017 and closed on August 30, 2017.

Listing documents at the weekend showed that 684.49 million ordinary shares of 50 kobo each were added to shares outstanding in the names of Guinness Nigeria. With the listing, total issued and fully paid up shares of Guinness Nigeria has now increased from 1.5 billion shares to 2.19 billion shares.

Diageo Plc, United Kingdom (UK), the majority core investor in Guinness Nigeria, was expected to inject additional N21 billion in Guinness Nigeria by subscribing for its rights. The rights issue provided another window for Diageo to inject capital into the Nigerian subsidiary after the multinational backed down from its earlier proposal to acquire additional equity shares in Guinness Nigeria.

Brewery news Mexico: Grupo Modelo to start exporting beer brewed at its Yucatan facility
Grupo Modelo’s Hunucmá plant in Yucatan will begin its beer exports to Europe and Africa in the second half of November, The Yucatan Times reported on October 30.

The Secretary of Economic Development of the State (Sefoe), Ernesto Herrera Novelo, the company’s exports will be shipped to European and African countries, as well as to the United States market.

“Grupo Modelo will send six thousand containers of the Corona, Modelo, Victoria, León and Montejo brands to the international market. The beer in question is produced at Modelo’s Hunucma plant, which currently brews seven million hectolitres, but will reach 15 million hectolitres per year in the medium term,” he said.

“The industrial plant of the Modelo plans to reach a production of 1.9 billion bottles of beer per year, of which 14% will be exported to Canada, Colombia, Guatemala, Belize, Chile, the United Kingdom and Belgium.”
