TO INCREASE FLAVOUR STABILITY
ABSTRACT
German brewing scientists have already been
looking into this for a couple of years. The ability
of hop constituents to suppress the formation of
3-methylbutanal and 2-furfural in wort-like model
systems containing maltose, leucine, and Fe2+ was
investigated. The functional principle by which
hop alpha-acids and beta-acids diminish the formation of
3-methylbutanal and 2-furfural may be ascribed to their
unique molecular structure and chemical properties.
This allows them to perturb oxidative or nonoxidative
formation of aldehydes. Findings from this study indicate that antioxidative potential may be
explained through, but not necessarily limited to,
two mechanisms. First, because of the hop alpha-acids'
complexation functionality towards transition metal
ions such as iron and copper, they can block or
attenuate oxidative pathways of the Maillard reaction
and suppress the generation of reactive oxygen
species, thereby preventing oxidative degradation
of leucine to 3-methylbutanal. Second, once
hydroxyl radicals are formed, they can act directly as
antioxidants and suppressing free radical reactions with
leucine again, which can yield its corresponding
aldehyde. Other aldehydes may show the same
behavior and response to the presence to hop alpha-acids.

Canada, ON: Riverhead Brewing coming to Kingston on June 24
|
A new craft brewery with a canoeing and camping theme to its branding will be opening its doors in Kingston, Ontario this weekend, Canadian Beer News reported on June 22.
Riverhead Brewing will be launching on Saturday June 24th with four core brands – London Porter, Irish Red, Craft Lager, and Tropical IPA – as well as a limited edition American Wheat. A Milk Stout is also in the works for future release.
Riverhead Brewing is located at 631 Fortune Crescent, Unit 10 in Kingston, and will be open for tasting and retail sales from 11:00 AM daily, closing at 9:00 PM on Monday to Thursday, 11:00 PM on Friday and Saturday, and 6:00 on Sunday.

Canada, AB: Caravel Brewery now open in northeast Calgary
|
A new brewery dedicated to “new exploration on old brewing traditions” is now open in northeast Calgary, Canadian Beer News reported on June 19.
Caravel Brewery – named after a type of ship used by Portuguese and Spanish explorers in the 15th and 16th centuries – has been founded by Vlad Covali and Chris Travis, along with their respective wives, Victoria and Claire.
Vlad and Victoria moved to Calgary from Moldova several years ago, bringing with them a taste for traditional European beer styles; while Chris and Claire are native Calgarians who frequently travel, and add an experimental and modern touch to the brewery.
Caravel opened its taproom and retail store in early May, and is offering three flagship brands – Captain’s Lager, Dead Ahead Irish Red, and Hazy Horizon Hefeweizen – with rotating seasonals.
Caravel Brewery is located at 12-10221 15 St. NE in Calgary, and is open daily except for Mondays.

USA, MN: Unmapped Brewing Co. already open in Minnetonka
|
A group of people gathered outside of Unmapped Brewing Co. Saturday, June 17, waiting for the newest lake area brewery to officially open, SW News Media reports.
At noon, JD Park threw open the doors and welcomed his first customers. The brewery was founded by Minnetonka husband and wife team JD and Megan Park. While the idea of the brewery was born of JD's home brewing experiments, the pair brought on Derek Allmendinger as head brewer.
On opening day, two beers were available — Topo Wit, a Belgian witbier and No Trace, an American IPA. JD said more varieties will soon be on tap. Other beers coming to the taproom will be a saison/farmhouse, Belgian quadrupel, Belgian tripel and an American pale ale, according to the Unmapped website.
Unmapped Brewing Co. is at 14625 Excelsior Blvd. in Minnetonka's Glen Lake neighborhood. Taproom hours are Monday through Thursday 3 to 10 p.m., Friday and Saturday, noon to 11 p.m. and Sunday noon to 8 p.m.

USA, WA: Melvin Brewing opens its first brewpub in Bellingham
|
Melvin Brewing opened its first brewpub earlier this month in Bellingham. It opened on June 3 at 2416 Meridian St., The Bellingham Business Journal reports.
Melvin Brewing was founded in 2009 by Jeremy Tofte and Kirk McHale in Jackson, Wyoming. Their beers have won gold medals at the 2012 Great American Beer Festival, Alpha King awards in 2012 and 2013 and a gold medal at the World Beer Cup.
The Melvin brewpub in Bellingham features 20 beers on tap, as well as wines by the glass and bottle.
The menu features American brewpub fare with Pacific Northwest inspiration. It is open from 4-11 p.m. seven days a week.

Canada, BC: Trench Brewing & Distilling set to open in Prince George later this year
|
My Prince George Now reports that a new brewery and distillery is set to open in Prince George later this year.
Trench Brewing & Distilling has received city council approval to open a 100 seat lounge as part of its facility at the corner of 2nd Avenue and London Street.
Co-owner Craig Schwenning says that Trench is “looking forward to working with other breweries and restaurants, not against them” when it opens in late August.

USA, TX: Baileson Brewing Company hopes to launch in Houston over Labor Day weekend
|
After an extensive planning phase, Houston will be getting a new brewery in Rice Village, next to what used to be one of the city's oldest watering holes.
First reported by Chron.com in December, Baileson Brewing Company this week announced that it hopes to serve its first beer over Labor Day weekend.
The brewery is currently under construction at 2322 Bissonnet, inside a former auto service center. Old gas stations being converted into bars and clubs is a very common theme in the Houston area, after all.
Right next door to Baileson is the dearly departed Kay's Lounge. Before Kay's closed late last fall, it was one of Houston's oldest bars.
Brewery co-owner Adam Cryer and his wife Sarah Pope come from the engineering world and decided to take this step after brewing at home for friends and serving it up at smaller events. The response was very positive.
Cryer has described Baileson as a "true nano-brewery with three barrels." Sticking to just a few varieties has proved advantageous for some local breweries.

USA, IL: Rabid Brewing not certain of opening date yet but expects it to be this summer

Rabid Brewing was granted an extension to its financial incentive agreement with the Homewood village board at the June 13 meeting, The Homewood-Flossmor Chronicle reported.
It’s the second extension for the brewery at 17759 Bretz Drive in Homewood.
Rabid owner Raiye Rosado called the situation with construction “delicate,” but didn’t offer any other explanation for the delays.
“We are indeed a few feet from the finish line. We’re not certain of our opening date yet, but do fully expect it to be this summer,” Rosado said.
In April 2016, the village board approved $40,000 in incentive funding for Rabid Brewing to develop its brewery and taproom. The money comes from Homewood’s non-TIF Business Incentive Program. The brewery would be reimbursed after work is finished.
At the time, the cost of the buildout was estimated at $95,100, with total start-up costs for the brewery projected at about $225,000.
The April 2016 agreement stipulated the project be completed within six months. Progress was slow and the board approved a six-month extension in September.
Rosado and her husband, Tobias Cichon, first began planning Rabid Brewing in 2011. The special-use permit for the Homewood location was approved by the village board in March 2016.

USA, WA: Populuxe Brewing hoping to move into a larger space in Seattle
|
Though construction and permitting delays have pushed back its original spring timeline, Ballard’s Populuxe Brewing is hoping to move into a larger space next door sometime in August, Eater Seattle reported on June 22.
The brewery’s current home sports an expansive patio, but its indoor space is tiny, with seats barely numbering in the double digits; on bad weather days, Populuxe can be a tough place to squeeze into. The new location, announced last August, comprises 4,000 square feet, enough to give both the production area and front of house more breathing room.
A member of Eater's list of essential Seattle breweries, Populuxe opened in 2013 with just three beers on tap. Husband-and-wife owners Peter Charbonnier and Amy Besunder currently offer ten beers at a time.
The move will allow the business to open a taproom with 20 draft lines and large screen televisions for broadcasting events like Sounders and Seahawks games. Don’t fret: The company will retain that roomy outdoor beer garden for food trucks and cornhole games when the sun is shining.

Canada, AB: Summit Brewing releases its first beer in Calgary
|
On Beer reports that a new brewery being launched by the owner of a local liquor import agency has released its first brand in Calgary.
Summit Brewing (not to be confused with the American brewery of the same name) has been founded by Troy Kamphuis-Finnigan, who is currently having beer contract brewed at Half Hitch Brewing to build brand awareness before opening a bricks-and-mortar operation.
Finnigan’s Irish Pale Ale is currently on tap at select bars in Calgary and Edmonton. Other brands including Rocky Mountain Lager and Finnigan’s Irish Red are planned to follow later this year and Kamphuis-Finnigan hopes to have the physical brewery up and running by the end of 2018.

Belgium: Beer meeting increasing success on the least expected occasions – 12th Beer Barometer
|
Beer is Belgians’ preferred drink in cafés or at home. However it also meets with increasing success on the least expected occasions, the Brussels Times reported on June 23.
Nearly four in ten Belgians say that beer is their beverage of choice during a cocktail party, compared with 35% who prefer champagne. This is per the 12th Beer Barometer compiled by Beer & Society. This year is indeed the first year that the French drink has been overtaken by beer.
In restaurants, although wine remains the preferred drink for one in two consumers, beer is gaining in popularity in this environment. It is a tremendous success with some 38.6% respondents, compared to 18% ten years ago.
Pils remains the beer type which has the highest approval rating, amongst 27.5% of respondents. It has, however, lost ground against strong golden ales (16.8%) and products from local breweries and microbreweries (16.4%). These have gained ground over around a decade (having been at 6% in 2007).

France: Winter barley quality looking good to very good but yields are variable
|
More benign weather is expected for France, easing investors' nerves after hot weather which has sent the wheat crop rating to well below last year's level, Agrimoney.com reported on June 23.
French state agency FranceAgriMer graded 68% of the national soft wheat crop as being in "good" or "excellent" condition on June 19 – down from 74% a week earlier, and 75% at the same point in 2016.
In 2015, 85% of the 2015 crop was rated as good to excellent in mid-June.
The downgrade follows concerns over hot weather which has seen temperatures of 38 degrees Celsius, and prompted the government to extend alerts over the heatwave to 66 departments,
Indeed, the highest temperatures have been recorded since June 19, raising ideas that the crop may have deteriorated further since.
However, Paris futures were little moved by the data, standing up 0.3% at EUR178.00 a tonne for December delivery, in afternoon deals, well below a 10-month high of EUR183.00 a tonne reached earlier this week.
"Fears over damage to the crops in France caused by the heatwave are counterbalanced by positive harvest potential in the rest of Europe," said Agritel.

India: The Securities and Exchange Board of India planning action against United Breweries for failing to rid itself of Vijay Mallya as chairman
|
The Securities and Exchange Board of India (Sebi) is planning action against United Breweries (UB) for failing to comply with the order barring Vijay Mallya, still chairman of the latter, from holding any key positions in listed companies, the Business Standard reported on June 22.
Sources say there could be strictures against UB under Clause 49 of the listing agreement, which allows suspension of trading and a monetary penalty. The role of independent directors (IDs) has also come under the scanner.
Earlier this year, the markets regulator had barred Mallya from any board position or acting as a key managerial person in listed entities. And, from accessing the securities market, citing allegations of fund diversion of Rs 1,880 crore from United Spirits (USL).
UB is now 43 per cent owned by Heineken and 30 per cent by Mallya and his holding companies. In February this year, when the BSE exchange asked for the status of compliance with the Sebi order, UB said it had urged Mallya to step down as chairman. Mallya had refused to do so and challenged the order at the Securities Appellate Tribunal (SAT).

The Netherlands & Mexico: Heineken facing legal challenge from Mexico’s tequila makers for its Desperados beer
|
Heineken is facing a legal challenge from tequila-makers in Mexico who argue that its Desperados beer's claims that it contains tequila are false, Newstalk reported on June 23.
The Tequila Regulatory Council (CRT) is taking legal action against the Dutch firm which owns the brand.
"We cannot permit someone unscrupulously to affect tequila’s prestige ... Either they take the word tequila off it, or they put some tequila in," Ramón González, CRT director-general told The Financial Times.
He added that if the company does not respond to its warning the CRT will take legal action.
Defending the beer a Heineken spokesperson said that the beverage is, "a beer flavoured with tequila."
"The flavouring we use contains tequila, which we buy in Mexico from one of the members of the CRT," the company added.
Heineken stated that the drink complies with all labelling requirements.
It is unclear how tequila is used in the beer's brewing process, but the Madrid’s Public Health Laboratory has found that the final beer "does not contain tequila."
The drink is not on sale in Mexico. Heineken owns Cuauhtémoc Moctezuma, the country's second-largest brewery. Its products include Sol, Dos Equis, Tecate and Indio.

Ukraine: Ukraine starts winter barley harvest
|
According to Ukraine’s Ministry of Agriculture, harvesting of cereals already started in Kherson and Odesa regions as of June 22. The farmers have harvested the first 2.5 thousand tonnes of winter barley from 780 ha with an average yield of 3.14 t/ha, reports UkrAgroConsult.
Farmers have harvested 2.3 thousand tonnes of barley from 740 ha in Kherson region and 200 thousand tonnes from 40 ha in Odesa region, it is reported.
The total area planted to crops for the 2017 harvest is expected at 26.9 mln ha, or 152 thousand ha more than in 2016.
