Let the yeast control the hop flavour

ABSTRACT
When we think of yeast and hop aroma, we first think about the biotransformation reactions that take place, where the contribution to flavor is still debatable. Yeast can also be seen as a biosorbant for selective adsorption of hop aroma components. In this context non-viable brewing yeast was used successfully by these Japanese researchers. This application could be used to add hop flavours into alcohol free beers or for identifying hop aroma compounds in beer.

Brewery news Canada, ON: Descendants Beer & Beverage decides to open in Kitchener
Descendants Beer & Beverage Co. has announced that plans to open its brewing facility in a historic mill site have been set aside in favour of a less picturesque but more suitable location, CBN reported on October 16.

Launched in early 2014 by partners Robin Molloy and C. Lee Brooks as a contract brewing operation, Descendants had intended to open a brewery at the Wellesley Mill in the small village of Wellesley, but that proved to be more difficult than expected.

“We still love the mill,” says Molloy, “but there were many challenges with the building. In the end we decided it would be best to launch our business in our hometown of Kitchener.”

Descendants will now located at 319 Victoria St. N. in Kitchener, in a facility that will include at 15 hectolitre brewhouse, tasting room and retail store. Construction will be underway soon, with an aim to have the brewery up and running by early 2016.


Brewery news USA, NJ: Tuckahoe Brewing Co. opens new and larger facility
A South Jersey beer maker opened in a new 10,000-square-foot facility that allows the brewery to quadruple its production, according to a report from the Press of Atlantic City.

Tuckahoe Brewing Co., which previously operated out of an Ocean View, New Jersey location, moved into a new space at English Creek and Reega avenues in Egg Harbor Township in September, according to the company's Facebook page.

Operated by three South Jersey school teachers and coaches, Tuckahoe's relocation allows the brewery to boost production, the Press of AC said.

Tuckahoe Brewing Co.’s new facility houses a 15-barrel system with an annual capacity of 2,000 barrels. At the old site, it brewed about 500 barrels. Partner Stu Stromfeld said the growth will allow the business to sell its beer in more regions.

Tuckahoe regularly offers at least eight different beers, including its flagship brew – the Dennis Creek Pale Ale, according to the company website.

At least one other area brewery is in expansion mode.

Dogfish Head Brewpub is set to renovate its location in Rehoboth Beach, Delaware, adding about 1,500 feet to the building's footprint.


Brewery news Canada, ON: Dawson Trail Craft Brewery awaiting Thunder Bay council approval to open
CBC News reports that a new brewery is getting set to open late this year in Thunder Bay.

Dawson Trail Craft Brewery is being launched by friends and fellow homebrewers George Renner and John Kivinen who have completed installation of a brewhouse at 905 Copper Crescent, and are intending to open in December with a few flagship brands as well as a rotation of seasonals.

The duo is awaiting approval from city council to open an on-site tasting room, and will be offering growlers for take-home sales.



Brewery news USA, GA: Jailhouse Brewing optimistic about locating in McDonough
With plans for expanding its growing business, Jailhouse Brewing Co. is optimistic about its intent to locate in McDonough, Henry Herald reported on October 22.

“We are very excited to come to McDonough and make this work,” said owner Glenn Golden.

The six-year-old brewery operates from an old jailhouse in downtown Hampton, but Golden said the company has been unsuccessful at finding adequate and affordable space for expansion there.

For more than two years, Hampton officials say that they have been trying to work to accommodate Jailhouse’s needs.

“They are very much an asset to Hampton,” said Mayor Pro Tem Mary Ann Mitcham. “It’s a destination. In a little town like Hampton, we depend on destination.”

Though Golden said he would have preferred to expand in Hampton, the city wanted more money for a prospective property than they were willing to pay. The company was interested in the old public works building on Tom Eason Drive.

“We tried to figure out ways to stay in Hampton,” he said. “We have been partial to Hampton. We couldn’t get a deal with the city. They want more money for the property than we’re looking to pay.”

Brewery news USA: Anheuser-Busch InBev to compensate drinkers who thought locally brewed Beck’s was a German import
Plaintiffs’ lawyers say a class-action settlement involving Beck’s beer will provide considerable benefits to consumers who were allegedly tricked into believing the St. Louis-brewed beer was a German import, The Wall Street Journal reported on October 22.

In court papers, lawyers representing the plaintiffs who sued Anheuser-Busch InBev said the settlement approved by a judge on October 20 “confers over $20 million in cash benefits” to class members.

Lawyers for both sides, though, don’t expect the actual payout to class members to approach anywhere near that dollar figure.

The way the $20 million was calculated isn’t out of the ordinary in these types of cases. Judges and plaintiffs often rely on estimates of maximum value when assessing the fairness of a settlement and the requested attorneys’ fees.

But the method has attracted criticism, including recently from a prominent federal appeals court judge who said the calculations used by the plaintiffs’ attorneys in another class action led to a “scandalous” attorneys’ fee award.

Anheuser-Busch agreed to give Beck’s drinkers 10 cents back for every individual bottle purchased; 50 cents for a six-pack or $1.75 per 20-pack. Consumers who back up their claims with receipts can get refunds up to $50 a household. Claims without receipts are ...More info on site


Brewery news Canada, PE: Moth Lane Brewing planned in the western end of Prince Edward Island
The Maritime Beer Report notes that a new brewery is set to open next year in Ellerslie, a small municipality in the western end of Prince Edward Island.

Moth Lane Brewing recently received a C$25,000 grant from Innovation P.E.I. The money is set to go towards a 7 barrel brewing system that is to be installed next March, with beer to planned follow by the summer.


Brewery news USA, PA: New brewpub almost ready for opening in Elizabethtown
Craft beer lovers in Elizabethtown will soon have another reason to raise a pint: a new taproom is set to open downtown in the former Elizabethtown Hotel building at 28 S. Market St., Lancaster Online reported on October 21.

Funk Brewing Elizabethtown will be next door to the Pita Pit, which occupies one side of a building that had long been vacant.

With renovations going on now in the rented space, plans call for opening the brewpub in early November, in time for Elizabethtown's Second Friday event, said proprietor Jon "Norm" Norman.

Norman and his brother-in-law Kyle Funk are partners in the Funk Brewing Co. of Emmaus, which began brewing and selling craft beer in 2014. The Lehigh Valley business wholesales 150 to 200 kegs a month, with beer sold in the Lancaster and Harrisburg areas.

Norman, an Elizabethtown resident, said he saw a business opportunity in his own town that would work well with his day job at a car rental company.

"The main street in E-town is so cool and there's so many people who want to support it," said Norman. "I think businesses just need to get in here and … get the people down here."

Brewery news Canada & Mexico: Pacific Western Brewing loses trademark battle against Cerveceria del Pacifico
A Federal Court of Canada judge has thrown out a Pacific Western Brewing Co. Ltd. bid to expunge a Mexican brewer's trademark for a line of beer with a similar name, Prince George Citizen reported on October 21.

PWB had argued the name Cerveceria del Pacifico was confusingly similar to PWB's various trademarks which were in use prior to the first use of the mark by Cerveceria, but in a judgment issued in September, Justice Luc Martineau found otherwise.

Martineau said the first impression given by the label Cerveceria uses for its Pacifico brand "is of its obviously foreign origin" and that it's "highly stylized, with many distinctive design elements, including strong and contrasting colours and font in red, gold, blue, green and yellow."

He further said the label "differs visually, phonetically, and semantically" from all of the marks PWB uses for its Pacific brands of beers.

"There is no resemblance in the design or colour elements. In short, the overall impression created by the mark is that of an imported beer originating from Mexico."

The ruling includes images of the labels in question.

Barley news Ukraine: Ukraine’s barley shipments during the first three months of the new season smaller than last year
During the first three months of the new season Ukraine exported about 2.591 mln tonnes of barley. This is 14% less than during the same time last year, UkrAgroConsult reported on October 22.

Saudi Arabia remained the major importer of Ukrainian barley. This country purchased 56% of the total exports of Ukrainian barley since the beginning of the current season.

During the same period, China already imported almost 100% more barley from Ukraine than during the whole last season.

Libya remained the third-largest importer of Ukrainian barley.

Philippines’ credit watcher Philippine Rating Services Corp. has retained its sterling credit rating on the outstanding P37.81 billion bonds issued by San Miguel Brewery Inc, philstar.com reported on October 23.

Obligations rated triple A or “PRS Aaa,” the highest rating assigned by PhilRatings, are deemed of the highest quality with minimal credit risk. This means the issuer’s capacity to meet its financial commitment on the obligation is extremely strong.

In a statement, PhilRatings said the rating reflected SMB’s sustained track record of generating a significant amount of cash from operations, sustained financial flexibility and adequate capitalization, and strong market position domestically.

PhilRatings also considered SMB’s experienced management and production team with technical support from its partner Kirin Holdings.

SMB, the country’s leading brewer, has six production facilities. It also operates one brewery each in Hong Kong, Indonesia, Vietnam and Thailand and two breweries in China. It produces a lineup of well-known brands, which include: San Miguel Pale Pilsen, Red Horse Beer and San Mig Light.

Brewery news Namibia: Namibia Breweries Limited launches King Lager brewed from home-grown barley
In support of government’s ‘Growth at Home’ strategy, Namibia Breweries Limited (NBL), which is a subsidiary of the Ohlthaver & List (O&L) Group, has added its latest innovation, King Lager, to the company’s portfolio of world-class beer brands, New Era reported on October 21.

King Lager is Namibia’s very first beer brand that contains home-grown barley. King Lager has been available in stores as from October 19.

In light of O&L’s purpose of ‘Creating a future, enhancing life’ for all Namibians, extensive trials have seen NBL over the past five years explore the establishment of a local barley industry. This proved Namibia’s potential to successfully produce barley, which led to the conclusion of a smart partnership recently signed with the Ministry of Agriculture, Water and Forestry, as well as AgriBusDev, to grow barley at the green schemes in Namibia as from next year.
