Hops as a regulator for the red coloration of beer


ABSTRACT
For a change, let's go back in history for a little bit. In the early Middle Ages, beer brewers in certain German regions converted from "red beer technology" to "white beer technology (Weissbiertechnologie)". But what does this mean? Though today "Weissbier" means the same as "Weizenbeer" (wheat beer) "Weiss" in this context is not derived from "weizen" but probably relates to the color of the beers in the old days. But why "red beer technology"? To look into this question German Researchers used black barley from Syria (used in Bronze Age Brewing) for brewing trials. These beers, if unhopped, exhibited a distinctive red hue. However if the wort was hopped the finished beer was not red but pale! And, having said this with reference to the Middle Ages, may the description of this colour change relate to the advent of the collective use of hops in brewing? This poses the intriguing question of whether individual hop fractions suppress red coloration stemming from barley. Taking the different hop fractions for brewing trials (alpha-acids, beta acids, polyphenols, oils, lipids) and possible mechanisms for colour development, the isoalpha acids were found to be the responsible fraction that inhibits the red colour development. Brewery news USA, MI: Hearings begin on legislation to boost microbreweries output
Michigan’s burgeoning craft beer industry is backing a bipartisan package of bills to loosen the state’s complex array of brewery regulations and allow further expansion, The Detroit News reported on September 10.

While lawmakers and craft beer industry officials agree the reforms are needed, some microbrewery owners argue the steps may not be enough to jolt the industry into much higher growth.

Hearings began this week on legislation boosting the number of barrels microbreweries are allowed to produce each year, broaden limits on the ownership of brew pubs and let small brewers serve up their stouts, ales and porters in two drinking rooms apiece.

New Holland Brewing Co. president Brett VanderKamp said it’s about “allowing more market access for (Michigan) brewers.” VanderKamp heads the Michigan Brewers Guild’s government affairs committee.

“We want to provide a little more flexibility for our craft brewers,” added state Rep. Andy Schor, D-Lansing, chief sponsor of one bill. “I’m looking forward to the testimony because there are a lot of intricacies in our regulations.”

Brewery news USA, IN & IL: Upland Brewing Company expands wholesale distribution to Chicago
Bloomington-based Upland Brewing Company is expanding its wholesale beer distribution to Chicago starting in October. The company announced it will collaborate with River North, a privately-held distributor that advertises and sells a variety of international beer brands, Indiana Daily Student reported on September 11.

“Over the past 15 years, we’ve built a brewery known for great beer, consistent organizational excellence and made a lot of friends while being an active partner in our many communities,” Upland President Doug Dayhoff said in a press release.

Upland currently distributes beer in Indiana, Ohio, Kentucky and Wisconsin.

“We anticipate strong reception as we move into Chicago with River North, a proven and respected distributor for some of the world’s most renowned brands,” Dayhoff said.


Brewery news Canada, BC: Big Rock Brewery to establish a brewery in British Columbia
Canadian Big Rock Brewery is set to establish a new brewery in British Columbia to serve the state market, Drinks Business Review reported on September 9.

This new brewery will be an addition to its existing facility in Calgary, Alberta and will see an investment of C$1.5 mln to C$2 mln.

The company expects that the new brewery to be operational within a year. It will use its existing unused credit facility and operating cash flows for this expansion.

Big Rock Brewery president and chief executive officer Robert Sartor said that they expect to not only brew some of their existing great beers but also to develop new beers that will be specific to, and exclusive in, British Columbia.

"A brewery in the lower mainland will allow us to have fresh, local beer in market, significantly lower transportation costs and ensure full participation in the incredibly vibrant craft beer scene in BC," Sartor added.

Big Rock offers all-natural craft beers including ten ales and lagers, Rock Creek dry cider and a selection of seasonal beers.

The brewery's products are sold in nine provinces and two territories in Canada, and are also available in Korea.


Brewery news USA, CO: Pueblo’s Walter Brewing Co. to revive storied brand made from 1889 to the mid-70s
The Walter Brewing Co. plans to revive the storied brand made in Pueblo from 1889 to the mid-70s, The Denver Post communicated on September 9.

The brewery, which will operate in downtown Pueblo on Oneida Ave., plans to launch a product called First Season in the fall, followed by a revival of the traditional Walter's Pilsner.

The brewer will employ 12 people producing classic Walter lines along with craft beers. It will have a tasting room and provide tours to the public.

Widmer Brothers Brewing has introduced a new filtered American-style wheat beer - Krystal Pear - as part of the Feast Portland event that will take place from 19-22 September 2013, Drinks Business Review reported on September 10.

Krystal Pear is brewed, fermented and bottled entirely on-site at the pilot brewery with pears sourced from USA Pears.

Rose Quarter brewer Ben Dobler said that after the great response they received about Krystal Pear during Feast Portland last year, they wanted to share the beer with more people this year.

"Bottling small batch beer, which isn't something we typically do, is a great way to get the beer to more people around town," Dobler added.

Packed in 22oz bottles, this new beer will be available around Portland at bottleshops, grocery stores and on draught at local restaurants and beer bars.

Drumfire Dark Lager was introduced as Icicle’s newest distributed seasonal taking the place of the well-received Colchuck Citrus Wheat.

Icicle Brewing Company has also rolled out the red carpet for the much-anticipated return of its award winning Apres Harvest Fresh Hop Pale Ale.

Brewery news UK: Molson Coors launches limited-edition Carling Zest with a Hint of Winter Berries
Molson Coors, Britain’s biggest brewer, has launched Carling Zest with a Hint of Winter Berries (2.8% abv) as its new, limited-edition flavour, FoodBev.com reported on September 11.

The new beer will be available across the off-trade throughout the autumn and winter months.

After securing its place as the most successful new beer of 2012, Carling Zest has continued its rich vein of form this year. Carling Zest with a Hint of Citrus became a permanent listing in the off-trade following huge popular demand from retailers and their customers. Molson Coors then maintained the brand’s momentum with a marketing campaign to drive growth and incremental sales to the category.

Brewery news Australia: Carlton & United Breweries defends its ownership of a number of heritage brands
Carlton & United Breweries has defeated an attempt by upstart brewer Thunder Road to poach a swag of heritage brands such as Abbots Lager, Cairns Draught, Tooth's, McCracken's and Brisbane Bitter, The Australian reported on September 11.

The Australian Trade Marks Office denied a request from Melbourne-based Thunder Road to strike out CUB's ownership of 59 brews no longer made by the beer giant, including Ballarat Bitter, Richmond Lager, Kent, NQ Lager and Bulimba Gold Top.

Thunder Road had argued that the company should be forced to relinquish the brands given it hadn't used them for decades, and planned to release its own beers under the same names had it been able to re-register them.

CUB's On Premise Sales Director Paul Donaldson said the company would occasionally produce the old beers in limited quantities, but there wasn't enough demand to make them part of regular production.

"CUB submitted extensive evidence as to the value of the heritage Trade Marks, their residual fame, their importance to CUB and its heritage," he said of the trademark case.

"CUB also submitted evidence of the many releases of heritage brands over the years and those brands we have in the pipeline".

Barley news Australia: South Australian Barley Advisory Committee seeking feedback from growers on guidelines for variety choice
The South Australian Barley Advisory Committee is seeking feedback from growers on whether guidelines for variety choice will help them narrow down which barley cultivars are best suited to each cropping region, The Recorder reported on September 13.

SABAC chairman Greg Schulz, of Maitland, says with a deregulated market and multiple breeding companies, the release of many new varieties is putting pressure on South Australia’s storage system, which may be exacerbated with a large harvest likely this year.

“Segregating by variety and quality is becoming increasingly difficult in each region because of the sheer number of varieties available to growers,” he said.

“It is becoming confusing for growers on what is best to grow agronomically, what is required by end users and consumers and what segregations will be available at their nearest receival centre. Also, some older varieties might need to be reconsidered because they are not achieving the same financial return as newer varieties.”

Mr Schulz says while the committee will not make specific recommendations on what to grow, it is seeking feedback on whether principles on variety selection will be valuable to farmers.
